Tips for success
To elevate the texture of this casserole, consider adding a sprinkle of crispy fried onions or panko breadcrumbs on top of the cheese layer before baking. This adds a delightful crunch that contrasts beautifully with the soft, creamy layers of chicken and mashed potatoes beneath.
Additionally, finely chopped fresh herbs, such as parsley or chives, can be mixed into the mashed potatoes before spreading them to add a pop of color and a fresh, aromatic flavor to the dish.
If the cheese is melting but not browning as much as desired, turn on the oven's broiler for the last 2 to 3 minutes of baking. Keep a very close eye on the casserole during this time, as the broiler can quickly burn the cheese. Look for a deep golden-brown color with some darker spots, which indicates maximum flavor and a wonderfully crispy texture.
Variations
- Bacon and Cheddar: Stir crumbled cooked bacon into the mashed potatoes and use sharp cheddar cheese for a loaded potato flavor profile.
- Spicy Buffalo: Mix a splash of buffalo hot sauce into the creamy chicken mixture and top with blue cheese crumbles along with the mozzarella.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Allow it to cool fully before sealing.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw completely in the refrigerator overnight before reheating.
- Reheat
- Reheat individual portions in the microwave, or warm the entire dish covered with foil in a 350°F (175°C) oven for 15-20 minutes.
Store any leftover casserole in an airtight container in the refrigerator for up to 3 days. Alternatively, cover the baking dish tightly with plastic wrap or aluminum foil before refrigerating.
To prevent condensation from making the potato layer soggy, allow the casserole to cool completely at room temperature for no more than 2 hours before sealing and storing it.
This casserole is an excellent candidate for making ahead. The dish can be fully assembled, covered tightly with foil, and stored in the refrigerator for up to 24 hours before baking. When ready to serve, bake it directly from the refrigerator, adding about 5 to 10 minutes to the total baking time to ensure the cold center heats completely through.
Serving ideas
Serve this comforting casserole hot, spooned directly from the baking dish into shallow bowls or onto plates. The rich, creamy nature of the dish pairs beautifully with a crisp, green side salad dressed with a light vinaigrette, which helps cut through the richness of the potatoes and cheese.
Steamed green vegetables, such as broccoli, green beans, or roasted asparagus, also make excellent side dishes.
For a complete comfort food feast, serve the casserole alongside warm, crusty bread or garlic knots to soak up any extra creamy sauce.
A dramatic scoop with a serving spoon will reveal the beautiful layers and create an appealing cheese stretch that is sure to excite everyone at the table. Garnish with a sprinkle of fresh chopped chives or parsley just before serving.

Creamy Chicken and Mashed Potato Casserole with a Golden Cheese Crust

Ingredients
- 4 cups shredded cooked chicken (store-bought or made ahead)
- 1 1/2 cups creamy sauce (store-bought or made ahead)
- 4 cups seasoned mashed potatoes (store-bought or made ahead)
- 1 1/2 cups shredded cheese
Instructions
- In a large mixing bowl, combine the shredded cooked chicken and the creamy sauce. Use a spatula to fold the sauce gently into the chicken until every shred is thoroughly coated. This ensures that the chicken remains moist and flavorful during the baking process.
- Transfer the creamy chicken mixture into a standard glass baking dish. Use a spatula to spread the mixture into an even layer across the bottom of the dish, pressing down gently to eliminate any large air pockets.
- Spoon the seasoned mashed potatoes over the chicken layer. Carefully spread the potatoes into a smooth, even layer using the back of a spoon or an offset spatula. Once smooth, sprinkle the shredded cheese evenly over the top of the potatoes.
- Place the baking dish in an oven preheated to 375°F (190°C). Bake for 20 to 25 minutes, or until the edges are bubbling and the cheese topping is completely melted and deeply golden-brown. Remove from the oven and let rest for 10 minutes before serving.
