Tips for success
For the best flavor, use a good-quality Marsala wine — it's the star of the dish. Sweet Marsala is traditional, but if you prefer a drier taste, use dry Marsala and add a pinch of sugar. If you don't have Marsala, a dry sherry mixed with a teaspoon of honey works as a substitute.
The wine's sweetness balances the earthy mushrooms and the rich cream, so don't skip it. Also, choose a wild rice blend that includes both wild and brown rice for a variety of textures; pure wild rice can be very firm, while a blend softens more evenly.
To make the soup even more decadent, you can stir in an extra tablespoon of butter at the end, just before serving. This is a classic French technique that adds shine and richness to soups. For a bit of tang, a squeeze of lemon juice or a splash of white wine vinegar can brighten the flavors.
If you prefer a thicker soup, mash some of the cooked rice against the side of the slow cooker before adding the dairy. Conversely, if the soup is too thick, thin it with additional chicken stock. Always taste before serving and adjust salt and pepper.
Variations
- Vegetarian Version: Omit the chicken and use vegetable stock. Add a can of drained chickpeas or white beans for protein. The mushrooms and wild rice will still provide a hearty, savory base.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes along with the other ingredients, or stir in a minced jalapeño at the end for a fresh heat. Garnish with a drizzle of chili oil.
- Herbed Twist: Stir in 1 teaspoon of dried sage or rosemary with the initial ingredients. For a brighter finish, add a tablespoon of fresh chopped parsley along with the thyme.
- Creamy Mushroom Medley: Use a mix of cremini, shiitake, and oyster mushrooms for a more complex, earthy flavor. Sauté the shiitake and oyster mushrooms separately and use them as the topping.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. The soup will thicken when chilled; add a splash of broth when reheating.
- Freezer
- Freeze the soup (without the sautéed mushroom topping) in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring often, until hot. Add a little chicken stock if needed to thin the soup.
Leftover soup can be stored in an airtight container in the refrigerator for up to 4 days. The soup will thicken as it cools; when reheating, add a splash of chicken stock or water to reach the desired consistency. Reheat gently on the stovetop over medium-low heat, stirring occasionally, until hot. Avoid boiling, as that can cause the dairy to separate. The flavors will continue to meld overnight, so leftovers often taste even better the next day.
This soup is ideal for meal prep. You can assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start.
Alternatively, you can cook the soup fully, let it cool to room temperature (within 2 hours), and refrigerate for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a little broth to loosen it.
Serving ideas
Serve this soup as a main course with crusty bread or a simple green salad. The creamy texture pairs beautifully with a crisp white wine, such as a Pinot Grigio or an unoaked Chardonnay. For a heartier meal, spoon it over cooked egg noodles or mashed potatoes. The sautéed mushroom topping is essential — it adds a buttery, savory crunch that makes the dish feel special. Garnish with extra thyme and shaved Parmesan at the table.
This soup is also wonderful for entertaining. Set up a slow cooker bar with the soup, and let guests help themselves. Offer a selection of toppings, such as crispy shallots, toasted walnuts, or fresh herbs.
The soup can be kept warm on the low setting for up to 2 hours, but stir occasionally to prevent sticking. For a festive touch, serve in small bread bowls or alongside grilled cheese sandwiches. The rich, comforting flavors are sure to please a crowd.
