Tips for success
To take this dish to the next level, reserve a small cup of the starchy pasta cooking water before draining the linguine. If the cream sauce becomes too thick after adding the cheese, splash in a tablespoon or two of the warm pasta water and toss vigorously.
The starches in the water will help emulsify the sauce, maintaining a perfectly smooth, velvety consistency without diluting the rich flavors of the cream and chicken.
Always shred the cheese from a block rather than buying pre-shredded varieties. Pre-packaged shredded cheese is coated with anti-caking agents like potato starch, which prevents the cheese from melting smoothly and can leave your cream sauce with a slightly grainy texture.
Freshly grated cheese melts instantly into the hot pasta, creating those beautiful, long, dramatic cheese pulls that make this dish so visually appealing.
Variations
- Spicy Cajun Chicken Linguine: Add Cajun seasoning to the chicken breasts before searing to give the dish a bold, smoky kick that pairs beautifully with the sweet onions.
- Garlic Herb Cream Linguine: Sauté minced garlic along with the onions to infuse the heavy cream with a deep, aromatic flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the heavy cream sauce will separate and turn grainy upon thawing.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or water to restore the creamy sauce consistency.
Store any leftovers in an airtight container in the refrigerator within two hours of cooking to ensure food safety. Because this is a cream-based sauce, it is best enjoyed within three days.
While the sauce will thicken significantly as it cools, proper reheating techniques can easily restore its original glossy, velvety texture. Avoid leaving the cooked pasta at room temperature for an extended period, as this can encourage bacterial growth.
While this pasta is best enjoyed fresh, you can prepare several components in advance to save time. Slice the chicken breasts and onions, and store them in separate airtight containers in the refrigerator for up to twenty-four hours before cooking.
You can also shred the cheese ahead of time. Avoid cooking the pasta or assembling the cream sauce in advance, as the linguine will absorb too much liquid and turn mushy when reheated.
Serving ideas
Serve this creamy chicken linguine immediately while it is steaming hot to enjoy the perfect texture of the melted cheese strings. Transfer the pasta to warm, shallow bowls to help retain the heat of the cream sauce. For an elegant presentation, use a carving fork to twirl the linguine into neat nests in the center of each bowl, ensuring plenty of seared chicken, caramelized onions, and wilted spinach are visible on top.
Accompany this rich and comforting dish with a simple, crisp green salad dressed with a light vinaigrette to cut through the richness of the cream sauce. A side of warm, crusty garlic bread is also an excellent addition, perfect for scooping up any extra sauce left at the bottom of the bowl. Keep additional freshly grated cheese on the table for guests to add to their liking.

Creamy Chicken Linguine with Onions and Spinach

Ingredients
- 8 oz linguine
- 1 lb boneless, skinless chicken breasts, sliced into strips
- 1 medium yellow onion, sliced
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 cup shredded cheese
Instructions
- Bring a large pot of water to a boil. Add the linguine and cook according to the package instructions until al dente. Drain the pasta, reserving a half cup of pasta water, and set aside.
- Add the sliced chicken breasts to a hot skillet. Sear the chicken for 5 to 7 minutes, stirring occasionally, until golden brown and cooked through to an internal temperature of 165°F (74°C). Transfer the chicken to a plate.
- In the same skillet over medium heat, add the sliced yellow onion. Sauté for 4 to 5 minutes, scraping up the browned bits from the bottom of the pan, until the onion is soft and translucent.
- Pour the heavy cream into the skillet with the onions and bring to a gentle simmer over medium-low heat. Add the fresh spinach and stir continuously for 1 to 2 minutes until the spinach is completely wilted into the cream.
- Return the cooked chicken and cooked linguine to the skillet. Sprinkle the shredded cheese over the top. Toss everything together over low heat for 1 to 2 minutes until the cheese is completely melted and forms glossy strings coating the pasta.
