Tips for success
For the best flavor, use a good-quality sharp cheddar and shred it yourself from a block. Pre-shredded cheese often contains anti-caking agents that can prevent it from melting as smoothly.
If you have time, you can sear the chicken thighs in a skillet before adding them to the slow cooker—this adds a deeper flavor, though it's not required. The recipe works beautifully without it.
This dish is incredibly versatile. Serve it over steamed jasmine rice, mashed potatoes, or even pasta. The sauce is also delicious on its own with crusty bread for dipping.
If you prefer a thinner sauce, you can stir in a splash of chicken broth after cooking. For extra richness, a dollop of sour cream or a sprinkle of fresh herbs like parsley or chives can be added at the end.
Variations
- Creamy Mushroom Chicken: Swap the cream of chicken soup for cream of mushroom soup and add 8 oz of sliced mushrooms with the spinach. The earthy mushrooms pair beautifully with the cheddar and artichokes, adding extra depth and texture to the sauce.
- Spicy Southwest Chicken: Add 1 can of diced green chiles and 1 teaspoon of ground cumin to the soup layer. Use pepper jack cheese instead of cheddar for a spicy kick. Serve over rice with a dollop of sour cream and fresh cilantro.
- Bacon Ranch Chicken: Stir 1 packet of ranch seasoning mix into the soup before spreading it over the vegetables. Top the finished dish with crumbled cooked bacon and a sprinkle of fresh chives. The smoky bacon and tangy ranch complement the creamy sauce perfectly.
- Lightened-Up Version: Use reduced-fat cream of chicken soup and low-fat cheddar cheese. Replace the butter with olive oil. The sauce will be slightly less rich but still creamy. Serve over cauliflower rice or steamed vegetables for a lighter meal.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld as it sits, making it even better the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce has thickened too much. The dish freezes well for up to 3 months; thaw overnight in the fridge before reheating.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start.
This is a great make-ahead option for busy days or for meal prep. Just be sure to refrigerate promptly and not leave it out at room temperature for more than 2 hours.
Serving ideas
Serve this velvety chicken over fluffy steamed white rice to soak up every bit of the creamy sauce. The neutral flavor of the rice is the perfect backdrop for the rich cheddar and tangy artichokes. Alternatively, serve it with crusty bread or dinner rolls for dipping. A simple green salad with a lemon vinaigrette adds a fresh contrast to the richness of the dish.
For a complete meal, add a side of roasted vegetables or a simple steamed green vegetable like broccoli or green beans. The dish is hearty enough to stand alone, but these sides round it out nicely. Garnish with a sprinkle of fresh parsley or a few cracks of black pepper, if desired. This is comfort food at its finest—warm, satisfying, and full of flavor.

Ingredients
- 2 lb boneless skinless chicken thighs
- 4 cups fresh baby spinach
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 can (10.5 oz) condensed cream of chicken soup
- 2 cups shredded sharp cheddar cheese
- 2 tbsp butter, cut into small pieces
Instructions
- Place the chicken thighs evenly across the bottom of the slow cooker. Scatter the fresh baby spinach over the chicken, then add the quartered artichoke hearts on top. Spoon the condensed cream of chicken soup over the spinach and artichokes, spreading it gently to cover.
- Sprinkle the shredded sharp cheddar cheese evenly over the soup layer. Dot the top with the small pieces of butter. Do not stir.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 1/2 to 3 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The sauce will be bubbly and the cheese fully melted.
- Turn off the slow cooker. Use two forks to gently shred the chicken thighs into large chunks right in the pot. Stir the sauce to combine everything, making sure the spinach and artichokes are coated with the creamy cheddar sauce.
- Spoon the hot chicken mixture over steamed rice, or serve it straight from the slow cooker. The rich sauce is delicious on its own or with crusty bread on the side.
