Before you start

Before you start, make sure the chicken thighs are thawed if they were frozen. Pat them dry with paper towels—this helps them brown better if you choose to sear them, though it's not necessary. Drain the artichoke hearts and cut them into quarters if they aren't already.

Measure out the spinach, cheese, and butter. If you plan to serve over rice, start that before the slow cooker is done, or use a microwave rice pouch for convenience. Have your slow cooker ready and plug it in near an outlet.

Ingredients at a glance (6)
  • 2 lb boneless skinless chicken thighs
  • 4 cups fresh baby spinach
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp butter, cut into small pieces

Instructions

Layer and Top

  1. Layer the Chicken and Vegetables
Place the chicken thighs evenly across the bottom of the slow cooker. Scatter the fresh baby spinach over the chicken, then add the quartered artichoke hearts on top. Spoon the condensed cream of chicken soup over the spinach and artichokes, spreading it gently to cover.
Look for The chicken is fully covered with a layer of spinach, artichokes, and soup.
Tip No need to stir at this stage—the layers will meld as they cook.
  2. Top with Cheese and Butter
Sprinkle the shredded sharp cheddar cheese evenly over the soup layer. Dot the top with the small pieces of butter. Do not stir.
Look for The cheese and butter form a golden crust as they melt during cooking.
Tip Cutting the butter into small pieces helps it melt evenly.

At the end of this phase, the slow cooker contains distinct layers: chicken on the bottom, then spinach, artichokes, soup, cheese, and butter on top.

The ingredients should be evenly distributed, and the soup should cover most of the vegetables. The cheese and butter are visible as a final layer. The raw chicken is safe at this point, and the spinach is fresh and vibrant.

Slow Cook

  1. Slow Cook Until Tender
Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 1/2 to 3 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The sauce will be bubbly and the cheese fully melted.
Look for The chicken is easily shredded with a fork, and the sauce is thick and creamy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid during cooking—each peek lets heat escape and adds time.

After several hours, the slow cooker is bubbling gently. The cheese has melted into the sauce, and the spinach has wilted dramatically. The kitchen smells rich and savory. The chicken is tender and easily pierced with a fork, and the sauce is creamy and smooth. The internal temperature of the chicken should read 165°F (74°C) before proceeding.

Shred and Serve

  1. Stir and Shred the Chicken
Turn off the slow cooker. Use two forks to gently shred the chicken thighs into large chunks right in the pot. Stir the sauce to combine everything, making sure the spinach and artichokes are coated with the creamy cheddar sauce.
Look for The chicken pulls apart easily, and the sauce is smooth and velvety.
Tip For chunkier pieces, shred less; for a more integrated dish, shred more thoroughly.
  2. Serve Over Rice or as Is
Spoon the hot chicken mixture over steamed rice, or serve it straight from the slow cooker. The rich sauce is delicious on its own or with crusty bread on the side.
Look for The dish is steaming hot and ready to serve.
Tip If the sauce seems thin, let it sit uncovered for 5 minutes to thicken.

The chicken is shredded into large chunks, and the sauce has been stirred to combine all the layers. The dish is thick, creamy, and steaming hot. The spinach is dark green and silky, the artichokes are tender, and the cheddar sauce coats everything. It's ready to spoon over rice or serve with bread.

Common mistakes

One common mistake is lifting the lid too often to check on the food. Every time you remove the lid, heat escapes, which can add up to 30 minutes of extra cooking time. Another mistake is using low-fat or fat-free dairy products, which can curdle or separate in the slow cooker.

Stick to full-fat cream of chicken soup and regular cheddar for the smoothest sauce. Also, don't skip draining the artichokes—excess liquid can make the sauce watery. Finally, resist the urge to stir during cooking; the layers are meant to meld slowly.

How to tell it’s done

The dish is done when the chicken is fork-tender and reaches an internal temperature of 165°F (74°C) when checked with an instant-read thermometer. The sauce should be bubbly and slightly thickened, with the cheese fully melted and blended.

The spinach will be wilted and dark green, and the artichokes will be soft but still hold their shape. If the sauce looks too thin, let it cook uncovered for an additional 15-20 minutes on high to reduce. The chicken should shred easily with two forks.

  • Poultry: 165°F (74°C) in the thickest part
