Tips for success
To get the creamiest sauce, use full-fat condensed soup and full-fat cheddar. Low-fat versions can make the sauce thinner and less flavorful.
If you have time, shred your own cheddar from a block—it melts more smoothly than pre-shredded cheese, which often contains anti-caking agents. For an extra layer of flavor, add a pinch of smoked paprika or a dash of hot sauce before serving.
This recipe is incredibly adaptable. You can swap the cauliflower for broccoli, or add sliced mushrooms along with the chicken. For a bit of heat, sprinkle in some red pepper flakes.
If you prefer a thicker sauce, stir in a tablespoon of cornstarch mixed with a little water at the end and cook for a few more minutes. The possibilities are endless, so feel free to make it your own.
Variations
- Broccoli Cheddar Chicken: Swap the cauliflower for broccoli florets. Add them during the last 2 hours of cooking so they stay bright green and crisp-tender. The broccoli pairs beautifully with the cheddar sauce.
- Spicy Southwestern: Add a can of diced green chiles, a teaspoon of chili powder, and a pinch of cayenne along with the soup. Top with chopped cilantro and serve with tortilla chips.
- Mushroom and Swiss: Replace the cream of broccoli soup with cream of mushroom soup and use Swiss cheese instead of cheddar. Add 8 oz sliced mushrooms with the chicken for an earthy flavor.
- Herb and Garlic: Stir a teaspoon of dried thyme and a teaspoon of garlic powder into the soup before spreading. Finish with a sprinkle of fresh parsley for a bright, herby note.
Storage and make-ahead

- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The sauce may thicken as it cools; when reheating, add a splash of chicken broth or milk to loosen it. Reheat gently on the stovetop or in the microwave until piping hot. For best results, serve over fresh rice.
This dish is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and cook on low as directed.
You may need to add about 30 minutes to the cooking time because the ingredients start cold. Alternatively, you can cook the full dish, let it cool, and refrigerate for up to 4 days.
Serving ideas
Serve this creamy chicken and cauliflower over steamed white jasmine rice to soak up the luscious sauce. A side of crusty bread or a simple green salad rounds out the meal nicely.
For a low-carb option, spoon the mixture over cauliflower rice or mashed cauliflower. The dish is rich and satisfying on its own, but a sprinkle of fresh parsley or chives adds a pop of color and freshness.
This recipe is a complete one-pot meal, but it also pairs well with roasted vegetables or a crisp cucumber salad. If you have leftovers, they make a fantastic filling for tacos or a topping for baked potatoes. The sauce is so good that you'll want to savor every last drop, so be sure to have plenty of rice or bread on hand.

Creamy Cheddar Cauliflower Chicken Thighs Crockpot Dinner

Ingredients
- 1 1/2 lb boneless skinless chicken thighs
- 1 medium head cauliflower, cut into florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 2 cups shredded sharp cheddar cheese
- 2 tbsp butter, cut into small pieces
- Steamed white jasmine rice, for serving
Instructions
- Place the chicken thighs in an even layer across the bottom of a 6-quart slow cooker. Scatter the cauliflower florets around and between the chicken pieces, tucking them in so they are nestled among the meat.
- Spoon the condensed cream of broccoli soup over the center of the chicken and cauliflower. Use a spatula or the back of a spoon to gently spread it over the top, but do not stir.
- Sprinkle the shredded sharp cheddar cheese evenly over the soup layer. Dot with the butter pieces, distributing them across the top.
- Cover the slow cooker and cook on low for 4 hours, or until the chicken is tender and easily pulls apart with a fork. Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, check that the chicken reaches an internal temperature of 165°F (74°C) with an instant-read thermometer. Gently stir the mixture to combine the sauce, being careful not to break up the chicken too much.
- Spoon the creamy chicken and cauliflower mixture over steamed white jasmine rice. Serve hot, with extra cheese or a sprinkle of black pepper if desired.
