Tips for success

For the best flavor and presentation, use fresh oranges and squeeze them right before cooking. Freshly squeezed orange juice has a bright, vibrant acidity that bottled juice lacks, which is essential for balancing the tartness of the cranberries.

If the glaze becomes too thick while simmering, stir in a tablespoon or two of water or chicken broth to loosen it to your desired consistency.

Using a heavy cast-iron skillet is key to achieving a deep, even sear on the chicken breasts and caramelizing the orange slices beautifully. The cast iron retains heat exceptionally well, which helps the glaze reduce evenly without scorching.

Be sure to scrape up the browned bits from the bottom of the pan when adding the orange juice, as these bits contain concentrated savory flavor.

Variations

  • Rosemary Cranberry Chicken: Swap the fresh thyme for fresh rosemary sprigs to infuse the glaze with a stronger, pine-like herbal aroma that pairs beautifully with the tart cranberries.
  • Spiced Orange Chicken: Add a pinch of ground cinnamon or a whole star anise to the orange juice reduction to bring a warm, cozy spiced flavor profile to the dish.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freeze in a freezer-safe container for up to 2 months; thaw in the refrigerator overnight before reheating.
Reheat
Reheat gently in a skillet over low heat with a splash of water or orange juice, basting until warmed through to 165°F (74°C).

Allow the cooked chicken and glaze to cool to room temperature for no more than two hours before storing. Place the leftovers in an airtight container, ensuring the chicken is well-coated in the remaining glaze to keep it moist.

Store the container in the refrigerator for up to three to four days. The glaze may thicken further when chilled, but it will loosen up beautifully when reheated.

While this dish is best served fresh from the skillet, some components can be prepared in advance. The orange can be sliced and juiced, and the cranberries washed and dried up to a day ahead.

Keep them stored in separate airtight containers in the refrigerator. You can also sear the chicken breasts a few hours ahead, refrigerate them, and finish simmering them in the freshly made glaze just before serving.

Serving ideas

Serve this dish hot, straight from the skillet, with the glossy ruby-red glaze generously spooned over the chicken breasts. Garnish each portion with the caramelized orange slices and tender cooked cranberries to create a stunning visual presentation. A few fresh sprigs of thyme placed on top add a beautiful pop of green and a fresh herbal aroma.

This flavorful chicken pairs wonderfully with simple side dishes that can soak up the delicious cranberry orange glaze. Serve it alongside fluffy white rice, quinoa, or garlic mashed potatoes. For a lighter option, pair the chicken with roasted green beans, asparagus, or a crisp green salad tossed in a light vinaigrette to complement the sweet and tart flavors of the dish.

Frequently asked questions

Can frozen cranberries be used instead of fresh ones?
Yes, frozen cranberries can be used without thawing. They may release slightly more liquid, so simmer the glaze for an extra minute or two to achieve the desired thickness.
How can the glaze be thinned if it becomes too thick?
Simply stir in a tablespoon or two of water, fresh orange juice, or chicken broth over low heat until the glaze reaches your preferred consistency.
Can chicken thighs be used instead of chicken breasts?
Absolutely. Boneless, skinless chicken thighs work wonderfully and remain very juicy. Adjust the cooking time as thighs may take slightly longer to reach the safe internal temperature of 165°F (74°C).

A cast-iron skillet filled with golden-brown chicken breasts, caramelized orange slices, fresh cranberries

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 oranges, one juiced and one sliced
  • 1 cup fresh cranberries
  • 4 sprigs fresh thyme

Instructions

  1. Heat a heavy cast-iron skillet over medium-high heat. Add the chicken breasts to the hot skillet and sear for 5 to 6 minutes on each side until a deep golden-brown crust forms. Remove the chicken from the skillet and set aside on a plate; the chicken will finish cooking later in the sauce.
  2. Add the orange slices directly to the same skillet over medium-high heat. Sear the slices for 1 to 2 minutes per side until they are lightly charred and caramelized. Remove the caramelized orange slices from the skillet and set them aside with the chicken.
  3. Pour the fresh orange juice into the skillet, scraping up any browned bits from the bottom of the pan. Add the fresh cranberries to the skillet. Bring the mixture to a simmer over medium heat and cook for 3 to 4 minutes until the cranberries begin to soften and pop open, releasing their juices.
  4. Return the seared chicken breasts, caramelized orange slices, and any accumulated juices to the skillet. Nestled the fresh thyme sprigs into the sauce. Simmer gently over medium-low heat for 5 to 7 minutes, spooning the bubbly glaze over the chicken frequently, until the chicken reaches a safe internal temperature of 165°F (74°C).
