Tips for success
To take this dish to the next level, baste the chicken skin with the simmering glaze during the final minutes of cooking. Use a large spoon to scoop up the bubbling cranberry orange syrup and drizzle it gently over the crispy skin.
This builds up multiple layers of sticky, flavorful lacquer without compromising the crispiness you worked so hard to achieve. Additionally, make sure to let the skillet rest off the heat for a full five minutes before serving to ensure the juices lock into the meat.
If you prefer a slightly sweeter glaze, you can adjust the ratio of orange juice to cranberries, or use a sweeter variety of orange like Cara Cara or Valencia.
For an extra touch of sophistication, add a splash of chicken broth to the skillet along with the orange juice to balance the sweetness. Always use freshly squeezed orange juice rather than bottled juice, as the fresh acidity is crucial for cutting through the richness of the chicken thighs.
Variations
- Spicy Cranberry Orange: Add a pinch of crushed red pepper flakes to the skillet along with the cranberries for a sweet, tart, and spicy kick.
- Rosemary Citrus Chicken: Substitute the fresh thyme with fresh rosemary sprigs to give the glaze a deeper, more pine-like herbal aroma.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze the chicken and glaze in a freezer-safe container for up to 2 to 3 months. Thaw in the fridge overnight.
- Reheat
- Reheat in a skillet over medium-low heat with a splash of water or orange juice, spooning the sauce over the skin until warmed through.
Allow any leftovers to cool completely at room temperature for no more than two hours before transferring them to an airtight container. Store the chicken and the cranberry glaze together in the refrigerator for up to three to four days. The glaze will continue to thicken and gelatinize as it chills, but it will loosen up beautifully once reheated.
You can easily prep the ingredients a day in advance by zesting and juicing the orange, measuring out the cranberries, and trimming the chicken thighs. Store everything in separate airtight containers in the refrigerator. While you can cook the entire dish ahead of time, the chicken skin will lose some of its signature crispiness upon storage, so it is best served fresh from the skillet.
Serving ideas
Serve this gorgeous skillet dish directly from the cast-iron pan for a rustic, family-style presentation that keeps the food warm. It pairs beautifully with a side of fluffy white rice, quinoa, or roasted garlic mashed potatoes, which do an excellent job of soaking up the extra sweet-tart cranberry orange glaze.
A side of roasted green vegetables, such as asparagus, Brussels sprouts, or green beans, adds a vibrant pop of color and a fresh, earthy contrast to the rich meat.
For a more formal presentation, plate individual chicken thighs on a bed of wild rice pilaf, spooning a generous portion of the glossy glaze and cooked cranberries directly over the meat.
Garnish each plate with a fresh sprig of thyme and a light dusting of fresh orange zest to highlight the citrus notes. A crisp, dry white wine like a Sauvignon Blanc or a light Pinot Noir makes an exceptional beverage pairing for this flavorful meal.

Cranberry Orange Chicken in a Crispy One-Skillet Glaze

Ingredients
- 4 bone-in skin-on chicken thighs
- 1 cup fresh cranberries
- 1/2 cup fresh orange juice
- 1 tsp orange zest
- 4 fresh thyme sprigs
Instructions
- Place the bone-in, skin-on chicken thighs skin-side down in a cold or preheated heavy cast-iron skillet. Sear over medium-high heat for eight to ten minutes, allowing the natural fat to render and the skin to become deeply golden and crispy. Flip and sear the other side for another four minutes, then transfer the chicken to a plate.
- Reduce the skillet heat to medium. Add the fresh cranberries, fresh orange juice, and orange zest directly into the skillet with the rendered chicken fat. Stir well, scraping up any browned bits stuck to the bottom of the pan, and bring the mixture to a lively simmer as the cranberries begin to pop.
- Return the seared chicken thighs to the skillet, placing them skin-side up on top of the bubbling cranberry orange mixture. Add the fresh thyme sprigs around the chicken. Simmer gently for ten to twelve minutes, spooning the reducing glaze over the chicken skin occasionally, until the chicken reaches a safe internal temperature of 165°F (74°C).
- Remove the skillet from the heat source. Let the dish rest for five minutes before serving to allow the juices inside the chicken thighs to redistribute. Garnish with a few extra fresh cranberries and fresh thyme leaves, spooning the warm, glossy glaze over the chicken just before presenting.
