Tips for success
For the most tender beef, always cook on LOW if you have the time. The low heat gives collagen time to break down into gelatin, which makes the meat silky and moist.
If you’re short on time, HIGH will work, but check the beef early and adjust the cooking time. Also, cutting the beef into uniform cubes ensures even cooking.
To keep asparagus from overcooking, add thicker spears at the beginning and thinner ones during the last 30 to 60 minutes. If your slow cooker runs hot, consider adding the asparagus halfway through.
The sauce is the star — serve it generously over the mashed potatoes. A sprinkle of fresh parsley or cracked black pepper before serving adds a bright finish.
Variations
- Mushroom and Onion: Add 8 oz sliced mushrooms and 1/2 cup chopped onion to the slow cooker along with the beef. The mushrooms will absorb the sauce and add an earthy flavor. Increase the au jus mix to 1 1/2 oz for extra savoriness.
- Spicy Cowboy Butter: Stir 1 teaspoon of red pepper flakes or 1/2 teaspoon cayenne into the butter before adding. This adds a gentle heat that complements the rich sauce. Serve with a dollop of sour cream to cool the palate.
- Herb-Infused: Add 2 sprigs of fresh thyme and 1 sprig of rosemary to the slow cooker before cooking. Remove them before serving. The herbs infuse the sauce with a fragrant, woodsy note that pairs beautifully with the beef.
- Vegetable Swap: Replace asparagus with green beans or broccolini. Adjust cooking time so the vegetables are tender but still bright. Green beans may need a bit more time, while broccolini can be added in the last hour.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze cooked beef and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a splash of beef broth or water to loosen the sauce if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The beef and sauce will keep well, and the flavors will meld further.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce thickens too much. The asparagus will soften further upon reheating, so it’s best to enjoy within 2 days.
You can assemble the entire slow cooker insert the night before, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed. This makes the recipe even more convenient. If doing this, let the insert sit at room temperature for 30 minutes before cooking to avoid thermal shock.
Serving ideas
Spoon the beef and asparagus over a generous mound of creamy mashed potatoes, then ladle the butter-au jus sauce over the top. The sauce soaks into the potatoes, making every bite rich and savory. Serve with crusty bread to mop up any remaining sauce — you won’t want to waste a drop.
For a lighter option, serve the beef and asparagus over steamed rice or buttered egg noodles. A side salad with a bright vinaigrette balances the richness.
This dish also works well as a hearty filling for tacos or stuffed into a baked potato. However you serve it, the combination of tender beef, buttery asparagus, and savory sauce is sure to satisfy.

Cowboy Butter Asparagus Beef Bites: Easy Crockpot Dinner

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 lb fresh asparagus spears, trimmed
- 6 cloves garlic, smashed
- 1/2 cup garlic-herb compound butter (cowboy butter), cut into pieces
- 1 oz dry au jus mix
- creamy whipped mashed potatoes, for serving
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker in an even layer. Scatter the asparagus spears and smashed garlic cloves over the beef. Dot the top with pieces of garlic-herb compound butter and sprinkle the dry au jus mix evenly over everything.
- Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender and easily shreds. The asparagus should be tender but still hold its shape. Stir gently once halfway through if possible, but avoid breaking up the beef. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the hot sauce for at least 3 minutes before serving. Spoon the beef, asparagus, and rich butter-au jus sauce over a bed of creamy whipped mashed potatoes. Serve hot.
