Tips for success

For clean slices, dip a sharp knife into hot water and wipe it dry between each cut. This creates a thermal barrier that allows the blade to glide through the dense cream cheese without dragging or tearing the delicate surface. This simple professional technique ensures every slice looks as pristine as the first.

If you notice any small cracks appearing, do not worry. They can be easily masked with a generous layer of the sour cream topping or fresh berries.

The flavor remains unaffected, and the topping adds a pleasant tang that balances the richness of the cheesecake, making the final presentation look intentional and elegant regardless of minor imperfections.

Variations

  • Lemon Zest Infusion: Add the finely grated zest of two large lemons to the batter during the mixing phase. This provides a bright, aromatic citrus note that cuts through the richness of the cream cheese and complements the tangy sour cream topping perfectly.
  • Chocolate Swirl: Before baking, reserve one cup of the batter and mix it with two tablespoons of high-quality cocoa powder. Drop spoonfuls of the chocolate mixture onto the plain batter and use a skewer to create swirls, adding a sophisticated visual and flavor contrast.

Storage and make-ahead

Fridge
Keep in the refrigerator for up to 5 days, covered tightly.
Freezer
Wrap the cooled cheesecake tightly in plastic wrap and foil; freeze for up to 1 month. Thaw in the refrigerator overnight before topping.
Reheat
This dessert is intended to be served cold; do not reheat.

Store the cheesecake in the refrigerator, covered loosely with plastic wrap or in an airtight container, to prevent it from absorbing other odors.

It is best consumed within five days of baking for the optimal texture and flavor. Keep the cheesecake away from the coldest parts of the fridge to prevent the texture from becoming too firm or icy.

This cheesecake is an ideal make-ahead dessert. In fact, it tastes even better after resting in the refrigerator for 24 hours, as this allows the flavors to meld and the texture to firm up perfectly. You can bake it up to two days before you plan to serve it, keeping it refrigerated the entire time until just before slicing.

Serving ideas

Serve the cheesecake chilled, straight from the refrigerator, for the best textural experience. The contrast between the cool, dense filling and the smooth topping is delightful.

You may choose to serve it plain to showcase the classic flavor or accompany it with a simple, fresh strawberry compote to add a bright, acidic contrast to the rich cream cheese.

Consider plating each slice with a small spoonful of fruit reduction or a few fresh berries to add a pop of color and natural sweetness.

Because the cheesecake is very rich, smaller portions are often satisfying. Ensure that any accompaniments are added just before serving to keep the crust crisp and the topping looking fresh and glossy.

Frequently asked questions

Why did the cheesecake crack in the center?
Cracks are usually caused by over-mixing the batter, which incorporates too much air, or by baking at too high a temperature. Ensuring the oven temperature remains steady at 325 degrees Fahrenheit and using a water bath to maintain humidity helps prevent the surface from drying out and cracking during the cooling process.
Can the cheesecake be made without a water bath?
While it is possible to bake without a water bath, it is not recommended for a classic New York cheesecake. The water bath provides essential moisture and temperature regulation that prevents the edges from cooking faster than the center, which is the primary reason for uneven texture and surface cracks.
How can one tell if the cheesecake is fully cooked?
The cheesecake is fully cooked when the edges are set and firm, but the center retains a slight, uniform wobble. An internal temperature of 160 degrees Fahrenheit is the safest way to verify that the eggs have set properly. Remember that the cheesecake will continue to firm up significantly as it cools and chills.

Ingredients

  • 300 g toasted honey graham cracker crumbs
  • 1 kg full-fat Philadelphia cream cheese
  • 250 g granulated sugar
  • 30 ml vanilla bean paste
  • 200 g tangy sour cream
  • 250 g sweetened sour cream topping

Instructions

  1. Press the toasted honey graham cracker crumbs firmly into the bottom of a foil-wrapped springform pan. In a stand mixer fitted with a paddle attachment, blend the cream cheese, sugar, vanilla bean paste, and sour cream on low speed until the mixture is perfectly smooth and combined.
  2. Pour the filling over the prepared crust. Place the springform pan into a large roasting pan and add hot water to the roasting pan until it reaches halfway up the sides of the springform. Bake at 325 degrees Fahrenheit (163 degrees Celsius) for 70 minutes until the center barely wobbles.
  3. Remove the cheesecake from the oven and carefully lift it from the water bath. Allow it to cool completely on a wire rack. Spread the sweetened sour cream topping evenly over the surface using an offset spatula. Refrigerate for at least three hours before serving to ensure the structure is set.
