Tips for success
For the most dramatic zebra pattern, use a large spoon to drop alternating scoops of batter directly on top of each other in the center of the pan, then use a butter knife to swirl in a figure-eight motion.
This creates distinct layers that bake into a beautiful pattern. If you prefer a more subtle swirl, use fewer passes with the knife.
To ensure even baking, place the loaf pan on the center rack of the oven. If the top of the cake begins to brown too quickly, cover it loosely with aluminum foil.
Allow the cake to cool completely before slicing; this helps the crumb set and makes it easier to cut clean slices. For the best flavor, let the cake sit overnight wrapped in plastic wrap—it tastes even better the next day.
Variations
- Citrus Marble Cake: Add the zest of one orange or lemon to the butter-sugar mixture for a bright, citrusy twist. Replace 2 tablespoons of the milk with fresh orange or lemon juice to enhance the flavor.
- Chocolate Chip Marble Cake: Fold 1/2 cup of mini chocolate chips into the vanilla batter before layering. The chips add pockets of melted chocolate throughout the cake, complementing the cocoa swirl.
- Mocha Marble Cake: Dissolve 1 tablespoon of instant espresso powder in the milk before adding it to the batter. This deepens the chocolate flavor and gives the cake a subtle coffee undertone.
- Cream Cheese Marble Cake: Soften 4 ounces of cream cheese and beat it into the butter and sugar mixture. This adds a subtle tang and extra richness, making the crumb even more tender.
Storage and make-ahead
- Fridge
- An airtight container in the refrigerator will keep the cake fresh for up to 5 days. Bring to room temperature before serving.
- Freezer
- Wrap the unfrosted loaf tightly in plastic wrap and foil; freeze for up to 3 months. Thaw overnight in the fridge.
- Reheat
- To refresh, warm slices in a toaster or microwave for 10 seconds. Or reheat the whole loaf in a 300°F oven for 10 minutes.
Store the marble butter cake in an airtight container at room temperature for up to 3 days. To keep it moist, you can place a slice of bread in the container, which will absorb excess moisture and help the cake stay fresh.
If the cake is frosted or has a glaze, refrigerate it, but bring it to room temperature before serving for the best texture.
The cake can be baked a day ahead and stored wrapped in plastic wrap at room temperature. It actually improves in flavor after resting.
You can also freeze the unfrosted loaf for up to 3 months; thaw overnight in the refrigerator and bring to room temperature before serving. This makes it a great make-ahead dessert for gatherings.
Serving ideas
Serve the marble cake at room temperature, dusted with confectioners' sugar. It pairs beautifully with a hot cup of tea or coffee. For an extra indulgent touch, serve with a dollop of whipped cream or a scoop of vanilla ice cream. The cake is also delicious toasted lightly and spread with butter.
This cake is versatile enough to be served as a breakfast treat, an afternoon snack, or a simple dessert. For a more elegant presentation, slice it thickly and arrange on a platter with fresh berries. The zebra swirl makes it visually appealing, so no extra frosting is needed. Enjoy it on its own or with your favorite beverage.

Classic Marble Butter Cake with a Gorgeous Zebra Swirl

Ingredients
- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 cup whole milk
- 2 tsp pure vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsweetened cocoa powder
- 1 tbsp confectioners' sugar, for dusting
Instructions
- In a large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
- Pour in the milk and vanilla extract, then mix on low speed until just combined. The mixture may look slightly curdled; that's fine.
- In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet mixture and stir with a spatula until just combined. Do not overmix.
- Transfer half of the batter to another bowl. Sift the cocoa powder over one half and stir until well combined. The chocolate batter will be slightly thicker.
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan. Spoon alternating scoops of vanilla and chocolate batter into the pan, creating a checkerboard pattern.
- Run a knife through the batter in a figure-eight motion to create the marble pattern. Do not over-swirl or the layers will blend completely.
- Bake the loaf in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out mostly clean. The top should be golden and domed.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with confectioners' sugar before slicing.
