Tips for success
For a cleaner lattice, chill the dough strips for 10 minutes before weaving. This prevents them from stretching or tearing. Use a ruler to cut even strips, and don't worry if they aren't perfect—rustic is charming.
If the dough becomes too soft while working, return it to the refrigerator for a few minutes. This will make it easier to handle and result in a flakier crust.
To make the pie even more flavorful, consider adding a pinch of black pepper or nutmeg to the ricotta mixture. These spices complement the richness of the meats and cheeses.
If you prefer a spicier pie, use hot soppressata or add a dash of red pepper flakes. Remember that the filling will be quite salty due to the cured meats, so you likely won't need additional salt.
Variations
- Vegetarian Version: Omit the prosciutto and soppressata and add 1 cup of sautéed spinach and 1/2 cup of roasted red peppers. The pie will still be flavorful and satisfying, with the ricotta and provolone providing plenty of richness.
- Spicy Salami Swap: Replace soppressata with spicy salami or chorizo for an extra kick. You can also add a pinch of red pepper flakes to the filling to intensify the heat.
- Mozzarella Twist: Substitute the provolone with low-moisture mozzarella for a creamier, stretchier texture. This will give the pie a more pizza-like feel, especially when served warm.
- Herbed Crust: Add 1 teaspoon of dried oregano or basil to the pie dough before rolling. This infuses the crust with extra Italian flavor and complements the savory filling.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in a 350°F oven until warm.

- Reheat
- Reheat slices in a 350°F oven for 10-15 minutes until warm and the crust is crisp. Avoid microwaving to maintain texture.
Store leftover Pizza Rustica in an airtight container in the refrigerator for up to 4 days. It can be served cold, but it's also delicious reheated.
To reheat, place slices on a baking sheet and warm in a 350°F (175°C) oven for 10-15 minutes, or until heated through. The crust will crisp up again, and the cheese will melt. Avoid microwaving, as it can make the crust soggy.
This pie can be assembled up to 24 hours in advance and kept covered in the refrigerator. When ready to bake, add a few minutes to the baking time if baking straight from the fridge.
Alternatively, bake the pie fully and cool completely, then wrap tightly and refrigerate for up to 2 days. Reheat before serving. The pie also freezes well; wrap it tightly in plastic wrap and foil, and freeze for up to 2 months.
Serving ideas
Serve Pizza Rustica as a main course for brunch or lunch, accompanied by a simple green salad dressed with lemon and olive oil. It's also excellent sliced into smaller pieces and served as an appetizer or party snack. The pie is hearty enough to be a meal on its own, but it pairs beautifully with roasted vegetables or a bowl of soup.
For a festive presentation, arrange the slices on a platter and garnish with fresh herbs like parsley or basil. The pie can be served warm or at room temperature, making it ideal for buffets and picnics. Leftovers are just as delicious the next day, so it's a great make-ahead option for busy hosts.

Italian Pizza Rustica: Meaty, Cheesy Easter Pie

Ingredients
- 2 lb store-bought or homemade pie dough
- 500 g ricotta cheese
- 200 g soppressata, diced
- 150 g prosciutto, chopped
- 200 g provolone cheese, diced
- 1 large egg, beaten for egg wash
Instructions
- In a large bowl, combine the ricotta, diced soppressata, chopped prosciutto, and diced provolone. Mix gently until evenly distributed. Set aside.
- Preheat the oven to 375°F (190°C). Lightly grease a 9-inch springform pan. Roll out two-thirds of the pie dough on a floured surface into a 12-inch circle. Press the dough into the bottom and up the sides of the pan, leaving an overhang.
- Spoon the filling into the prepared crust and spread it into an even layer. Smooth the top with a spatula.
- Roll out the remaining dough and cut into 1-inch wide strips. Lay half of the strips across the pie, then weave the remaining strips perpendicular to create a lattice pattern. Trim the edges and crimp to seal.
- Brush the lattice and edges with the beaten egg wash. This will give the crust a golden, shiny finish as it bakes.
- Place the pie on a baking sheet to catch any drips. Bake at 375°F (190°C) for 50 minutes, or until the crust is deep golden brown and the filling is bubbling. If the edges brown too quickly, cover them loosely with foil.
- Allow the pie to rest for at least 15 minutes. The filling will set as it cools, making it easier to slice into clean wedges. Serve warm or at room temperature.
