Tips for success
For the most luxurious sauce, use freshly grated parmesan and grate it just before using. The finer the grate, the smoother it melts.
If you don't have Italian seasoning, a pinch of dried oregano and basil works well. To keep the sauce from becoming too thick, have a little extra pasta water on hand to loosen it after tossing.
If the sauce seems too thin after adding the cheese, let it simmer gently for a minute or two to reduce. Conversely, if it's too thick, add a splash of pasta water. Taste the finished dish and adjust the black pepper or salt as needed. The sauce should be well-seasoned but not salty, as the parmesan adds its own saltiness.
Variations
- Garlic Shrimp Alfredo: Add sautéed shrimp to the sauce before tossing with pasta. Cook the shrimp in a little butter until pink and cooked through, then add to the cream sauce. This turns the dish into a hearty seafood meal.
- Chicken Alfredo: Top the finished pasta with sliced grilled or roasted chicken breast. The mild flavor of chicken pairs well with the rich cream sauce, making it a filling dinner option.
- Vegetable Alfredo: Stir in steamed broccoli, peas, or sautéed mushrooms when tossing the pasta. The vegetables add color, texture, and a fresh contrast to the creamy sauce.
- Spicy Alfredo: Add a pinch of red pepper flakes along with the black pepper for a subtle heat. This gives the sauce a gentle kick without overwhelming the classic flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of milk or pasta water to restore creaminess.
- Freezer
- Not recommended—cream sauce can separate when frozen and thawed.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or pasta water, or in the microwave in 30-second intervals, stirring between.
Leftover fettuccine Alfredo can be stored in an airtight container in the refrigerator for up to 3 days. The sauce may thicken as it cools; when reheating, add a splash of milk or pasta water to restore a creamy consistency.
Reheat gently on the stovetop or in the microwave, being careful not to overheat, which can cause the sauce to separate.
The sauce can be made ahead and kept in the refrigerator for up to 2 days, but the pasta is best cooked fresh. If making ahead, undercook the pasta slightly and toss with a little oil to prevent sticking.
Reheat the sauce gently, then add the pasta and a splash of pasta water to finish. This is a great option for a quick weeknight meal.
Serving ideas
Serve the fettuccine Alfredo immediately after tossing, while the sauce is warm and silky. Twirl a generous portion onto each plate, using tongs or a fork to create a neat nest.
Garnish with extra parmesan and a sprinkle of fresh parsley for color and flavor. This dish pairs beautifully with a crisp green salad and garlic bread.
For a more substantial meal, serve alongside grilled chicken or shrimp, but the pasta is satisfying on its own. The creamy sauce is rich, so a light side dish like steamed asparagus or a simple arugula salad balances the plate. Warm the serving bowls beforehand to keep the sauce from cooling too quickly.

Classic Fettuccine Alfredo: Silky Garlic Parmesan Pasta in 25 Minutes

Ingredients
- 8 oz fettuccine pasta
- Salt, for the pasta water, to taste
- 1/2 cup unsalted butter
- 1 1/2 tbsp all-purpose flour
- 1 tbsp garlic powder
- 1 tsp black pepper
- 1 tsp Italian seasoning
- 1 1/2 cups heavy whipping cream
- 1 cup reserved pasta cooking water
- 1 cup freshly grated parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions
- Bring a large pot of generously salted water to a rolling boil. Add the fettuccine and cook until al dente according to the package directions. Before draining, reserve 1 cup of the starchy pasta cooking water. Drain the pasta and set it aside.
- In a wide skillet over medium heat, melt the butter. Whisk in the flour and cook for 1 minute, stirring constantly, to form a smooth roux. Add the garlic powder, black pepper, and Italian seasoning, and whisk for another minute until fragrant.
- Slowly pour in the heavy cream and reserved pasta water, whisking constantly to combine. Bring the mixture to a gentle simmer and cook, whisking often, until it thickens enough to coat the back of a spoon, about 3 to 5 minutes.
- Remove the skillet from the heat. Add the freshly grated parmesan cheese and chopped parsley, and stir until the cheese melts completely into the sauce. The sauce should be velvety and slightly loose, as it will thicken when the pasta is added.
- Add the drained fettuccine to the skillet and use tongs or a wooden spoon to toss it thoroughly, coating every strand with the creamy sauce. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it to the desired consistency.
- Twirl a generous portion onto each plate or into warm bowls. Garnish with extra parmesan and parsley if desired. Serve right away while the sauce is warm and silky.
