Tips for success

For the best texture, use high-quality milk chocolate that you chop yourself rather than chocolate chips, which often contain stabilizers that affect melting.

When melting the chocolate for the drizzle, do it slowly in short bursts in the microwave or over a double boiler, stirring frequently. This prevents burning and ensures a silky, shiny finish.

To make perfectly round bites, use a cookie scoop for uniform portions. If the mixture sticks to your hands, lightly dampen them with water.

For a neater drizzle, transfer the melted chocolate to a small piping bag or a zip-top bag with a tiny corner cut off. This gives you control over the pattern and prevents messy drips.

Variations

  • Dark Chocolate Version: Swap the milk chocolate for dark chocolate with 70% cocoa for a less sweet, more intense fudge. The bitterness of the dark chocolate pairs beautifully with the sweet pistachio cream and crunchy hazelnuts.
  • Nut-Free Option: Replace the hazelnuts with crushed pretzels or crispy rice cereal for a nut-free crunch. Use a sunflower seed butter or soy-based pistachio-flavored spread instead of pistachio cream, and ensure all other ingredients are nut-free.
  • White Chocolate Drizzle: Instead of milk chocolate for the topping, use melted white chocolate. The white chocolate creates a beautiful contrast with the pistachio cream and adds extra sweetness. For a festive look, sprinkle with crushed pistachios while the white chocolate is still wet.
  • Spiced Variation: Add a pinch of cinnamon or cardamom to the biscuit mixture for a warm, aromatic twist. These spices complement the chocolate and pistachio flavors beautifully, giving the bites a cozy, holiday-inspired character.

If stacked, place a piece of parchment paper between layers to prevent sticking. Allow them to sit at room temperature for 5 minutes before eating for the best flavor and texture.

These bites can be made up to 3 days in advance. Prepare them fully, including the chocolate drizzle, and store in an airtight container in the refrigerator. The flavors meld and deepen over time, making them even more delicious. They are perfect for parties or holiday gifting, as they hold up well and travel easily.

Serving ideas

Serve these fudge bites chilled or at room temperature. Arrange them on a platter for a dessert spread, or place them in mini paper cups for easy handling.

They pair beautifully with coffee or espresso, as the bitterness of the coffee balances the sweetness of the chocolate and pistachio cream. For an extra touch, dust with a little cocoa powder or crushed pistachios just before serving.

These bites are also wonderful as part of a dessert grazing board, alongside fresh berries, dried fruits, and other sweets. Because they are bite-sized, they are ideal for parties, potlucks, or holiday cookie exchanges. The gooey center and crunchy exterior make them a memorable treat that guests will ask about.

Frequently asked questions

Can these fudge bites be made without pistachio cream?
Yes, the pistachio cream can be replaced with any thick nut butter, such as almond butter, cashew butter, or even a chocolate hazelnut spread. The texture will be similar, but the flavor will change. If using a thinner nut butter, chill it briefly to thicken it before piping.
What can be used instead of Petit Beurre biscuits?
Any plain tea biscuit, shortbread cookie, or graham cracker can be substituted. The key is to use a dry, crumbly cookie that will hold its texture when mixed with the ganache. Avoid soft cookies, as they will make the mixture too sticky.
How long do these chocolate pistachio bites last?
Stored in an airtight container in the refrigerator, they will keep for up to 1 week. They can also be frozen for up to 2 months. Thaw frozen bites in the refrigerator overnight before serving. Do not leave them at room temperature for more than 2 hours.
Why did your chocolate seize when making the ganache?
Chocolate seizes when it comes into contact with even a small amount of water or when it is overheated. Make sure the saucepan is completely dry and the cream is only simmering, not boiling. If the chocolate does seize, try adding a few tablespoons of warm cream and whisking vigorously to bring it back together.
Can these bites be made vegan?
Yes, with a few substitutions. Use dairy-free heavy cream (such as coconut cream) and vegan chocolate. Replace the tea biscuits with vegan-friendly cookies, and use a vegan pistachio spread or nut butter. The rest of the ingredients are naturally vegan. Ensure all products are certified vegan to avoid hidden dairy.

Chocolate Pistachio Biscuit Fudge Bites

A pile of chocolate fudge bites with pistachio cream centers and chocolate drizzle

Ingredients

  • 1/2 cup heavy cream
  • 90 g milk chocolate, chopped
  • 1 packet Petit Beurre tea biscuits
  • 1/2 cup roasted hazelnuts, chopped
  • 1 tbsp cocoa powder
  • pistachio cream, for filling, to taste
  • melted chocolate, for drizzling, to taste

Instructions

  1. Pour the heavy cream into a small saucepan and place over medium heat. Heat until it just begins to simmer, with small bubbles around the edges. Remove from the heat immediately and add the chopped milk chocolate. Let it sit for 1 minute, then stir gently until the chocolate is fully melted and the mixture is smooth and glossy. Set aside to cool slightly while you prepare the dry ingredients.
  2. Place the tea biscuits in a sturdy mixing bowl and crush them with your hands or the bottom of a glass until you have coarse crumbs with some larger pieces for texture. Add the chopped roasted hazelnuts and cocoa powder, and stir everything together until evenly combined.
  3. Pour the slightly cooled chocolate ganache into the biscuit mixture. Stir with a spatula until everything is moistened and holds together when pressed. Using a cookie scoop or your hands, scoop out portions and roll them into round balls about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  4. After shaping each ball, use your thumb to press an indentation into the center, creating a small cup. This will hold the pistachio cream filling. Make the indentation deep enough to hold a generous amount of filling without breaking through the bottom.
  5. Spoon the pistachio cream into a piping bag or a zip-top bag with a corner snipped off. Pipe the pistachio cream into the indentation of each ball, filling it to the top. Smooth the tops with a small spatula or your finger, if needed.
  6. Melt additional chocolate if needed, then drizzle it generously over the tops of the filled bites. Use a spoon or a piping bag to create a decorative pattern. The chocolate should cover the pistachio cream and some of the biscuit edges.
  7. Place the baking sheet in the refrigerator and chill for at least 15 minutes, or until the chocolate is firm and the bites are set. Once chilled, break one open to reveal the gooey pistachio center and crunchy biscuit fudge texture.
