Tips for success
For the best marbled effect, pipe the white chocolate lines in parallel rows across the chocolate-covered date, then drag the toothpick perpendicular through them in one continuous motion.
This creates the classic feather pattern. If the white chocolate thickens while piping, warm the bag briefly in your hands or microwave for a few seconds.
To achieve a perfectly smooth chocolate coating, make sure the melted chocolate is not too thick. If needed, stir in a teaspoon of coconut oil or vegetable oil to thin it slightly.
When dipping, hold the date by the skewer and let the excess chocolate drip off before placing it on the parchment. This prevents pooling and ensures a neat finish.
Variations
- Dark Chocolate Delight: Swap the milk chocolate for dark chocolate (70% cacao) for a deeper, less sweet flavor. The bitterness of the dark chocolate pairs beautifully with the sweet dates and nutty filling.
- Nut-Free Option: Use sunflower seed butter or cookie butter instead of pistachio cream to make the recipe nut-free. Be sure to check that all chocolate is nut-free as well.
- Salted Caramel Drizzle: After the white chocolate lines are piped, drizzle a little salted caramel sauce over the hearts and sprinkle with flaky sea salt before the chocolate sets. This adds a salty-sweet contrast.
- Espresso Dusted: Before the chocolate sets, dust the tops with a little instant espresso powder or finely ground coffee. The coffee flavor enhances the chocolate and adds a sophisticated touch.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Let stand at room temperature for 5 minutes before serving for optimal texture.
- Freezer
- Freeze in a single layer on a parchment-lined tray, then transfer to a freezer-safe container for up to 2 months. Thaw in the refrigerator before serving.
- Reheat
- No reheating needed. Serve chilled or at room temperature.
Store the chocolate-covered date hearts in an airtight container in the refrigerator for up to one week.
They can also be kept at room temperature in a cool, dry place for up to three days, but refrigeration keeps the chocolate firm and prevents the filling from softening. Let them sit at room temperature for a few minutes before serving for the best texture.
The date hearts can be made up to two days in advance. Prepare and chill them as directed, then keep them in an airtight container in the refrigerator. They are best enjoyed within 48 hours, as the dates may soften over time. For longer storage, freeze them.
Serving ideas
Serve the chocolate-covered date hearts as a delightful dessert or snack. Arrange them on a platter or in small paper liners for a party. They pair wonderfully with coffee, tea, or a glass of milk. The contrast of textures and flavors makes them a crowd-pleaser for both adults and children.
For a more festive presentation, dust the hearts with a little cocoa powder or drizzle with extra melted chocolate.
They can also be served alongside fresh berries or a scoop of vanilla ice cream for an indulgent dessert. The hearts are best enjoyed at room temperature, when the chocolate is crisp and the filling is creamy.

Chocolate-Covered Stuffed Date Hearts

Ingredients
- 12 large Medjool dates
- 1 tbsp pistachio cream or creamy peanut butter
- 1 1/2 cups melted milk chocolate
- melted white chocolate, for piping, to taste
Instructions
- Slit each date lengthwise down the center and remove the pit. Open the dates gently like butterfly wings, keeping the two halves attached at one side. Place the pitted dates on a clean work surface.
- Transfer the pistachio cream or peanut butter to a piping bag. Pipe about 1 generous tablespoon of the cream into the cavity of each date, filling it evenly.
- Pinch the base of each stuffed date and curve the two top flaps inward with your fingertips to form a heart silhouette. Press gently to hold the shape.
- Insert a skewer into the bottom of each heart date. Dip each heart completely into the melted milk chocolate, allowing any excess to drip off. Place the dipped hearts on a parchment-lined baking sheet.
- Transfer the melted white chocolate to a piping bag with a fine tip. Pipe delicate lines of white chocolate across the top of each chocolate-covered date, creating a striped pattern.
- While the white chocolate is still wet, drag a toothpick through the lines in a continuous motion to create a feathered marbled heart pattern. Repeat for each date.
- Place the baking sheet in the refrigerator and let the chocolate set for 15 minutes, until the coating is firm and crisp.
