Before you start
Before starting, make sure the lobster tails are split and the shrimp are peeled and deveined. If using frozen seafood, thaw it overnight in the refrigerator. Cut the corn ears in half crosswise, and scrub the potatoes, halving any larger ones.
Melt the chili-lime butter in a small saucepan over low heat or in the microwave. Have all the ingredients ready to layer into the slow cooker so the build is quick and seamless.
Ingredients at a glance (6)
- 4 split cold-water lobster tails
- 1 lb raw jumbo shrimp, peeled and deveined
- 2 ears sweet yellow corn, halved
- 1 lb baby red bliss potatoes
- 1/2 cup chili-lime butter, melted
- 1/4 cup chopped fresh cilantro
Instructions
Layer and Drizzle
- Layer the Seafood and VegetablesPlace the split lobster tails and raw jumbo shrimp in the bottom of a 7-quart slow cooker. Arrange the halved sweet corn ears and baby red potatoes around the seafood, tucking them into any gaps so everything sits in a single layer as much as possible.Look for The slow cooker should look full but not overcrowded; the lobster tails and shrimp should be nestled among the corn and potatoes.Tip If the potatoes are larger than a golf ball, halve them so they cook evenly with the seafood.
- Pour Over the Butter and CilantroDrizzle the melted chili-lime butter evenly over the seafood and vegetables. Sprinkle the chopped fresh cilantro over the top, covering the lobster tails and shrimp lightly.Look for The butter should coat the seafood and vegetables in a glossy sheen; the cilantro adds bright green flecks.Tip Use a spoon to gently lift the lobster tails and shrimp so the butter reaches the bottom of the pot.
At the end of this phase, the slow cooker is filled with raw lobster tails, shrimp, corn, and potatoes arranged in a single layer.
The melted chili-lime butter is drizzled evenly over the top, and cilantro is sprinkled over everything. The ingredients should look glossy and inviting, with the butter pooling slightly in the bottom of the pot.
Slow-Cook to Tender
- Slow-Cook Until TenderCover the slow cooker and cook on low for 2 1/2 to 3 hours, or until the lobster tails are opaque and the shrimp are pink and firm. The potatoes should be fork-tender and the corn should be heated through and slightly infused with the butter glaze.Look for The butter will be bubbling gently around the edges, and the seafood will release a fragrant, zesty aroma.Safe temperature 145°F (63°C) internal temperature (shellfish)Tip Check the lobster tails at the 2-hour mark; they can overcook quickly. The shrimp should be just cooked through with no translucency.
- Confirm the Seafood Is Cooked ThroughTest the thickest part of a lobster tail and the largest shrimp with an instant-read thermometer. They should register at least 145°F (63°C). The lobster meat should be opaque and slightly firm, and the shrimp should curl into a loose C shape.Look for The lobster meat pulls away easily from the shell, and the shrimp are pink with no gray spots.Safe temperature 145°F (63°C) internal temperature (shellfish)Tip If the potatoes are still firm, remove the seafood to a plate, cover them, and continue cooking the potatoes for another 20 minutes.
After 2 1/2 to 3 hours, the slow cooker is bubbling gently, and the kitchen smells of butter, chili, and citrus. The lobster tails are opaque and tender, the shrimp are pink and firm, and the potatoes are fork-tender. The glaze has thickened slightly and coats the seafood and vegetables in a rich, glossy layer.
Scoop and Serve
- Scoop and Serve Over RiceUsing a slotted serving spoon, lift the lobster tails, shrimp, corn, and potatoes from the butter glaze and arrange them over steamed white jasmine rice on a serving platter. Spoon a little extra glaze over the top and serve with lemon wedges on the side.Look for The seafood should glisten with the chili-lime butter, and the rice will soak up the extra glaze.Tip Warm the serving platter in the oven at 200°F (93°C) for a few minutes so the dish stays hot while serving.
The seafood and vegetables are lifted out with a slotted spoon and arranged over steamed rice. The butter glaze drips lazily off the spoon, and the dish is garnished with lemon wedges. Each serving is a beautiful medley of colors and textures, ready to be devoured.
Common mistakes
Do not overcook the seafood. Lobster tails and shrimp cook quickly, even in a slow cooker, so check at the 2-hour mark. If the potatoes are not yet tender, remove the seafood to a plate, cover the slow cooker, and continue cooking the potatoes for another 20 minutes.
Also, avoid lifting the lid frequently, as this releases heat and extends cooking time. Finally, do not add extra liquid; the seafood and vegetables release enough moisture to create a flavorful glaze.
How to tell it’s done
The dish is done when the lobster tails are opaque and the meat pulls away easily from the shell, and the shrimp are pink and firm with no translucency. The potatoes should be fork-tender, and the corn should be heated through and slightly infused with the butter glaze.
For guaranteed safety, insert an instant-read thermometer into the thickest part of a lobster tail and the largest shrimp; it should read at least 145°F (63°C).
- Shellfish: 145°F (63°C) in the thickest part
