Tips for success
Grate the cheddar from a block whenever possible — it melts into a smoother, stretchier blanket than pre-shredded, which is coated in starch that can turn grainy.
Keep the two cheese additions separate in the mind as well as the bowl: cheese inside the filling makes it creamy, cheese on top makes the pull. If the biscuit tops color too quickly, tent the dish with foil rather than lowering the temperature, so the filling keeps bubbling underneath.
Warm chicken shreds far more easily than cold, so give refrigerated meat a short microwave spin before pulling it apart with forks. Rotate the dish halfway through baking for even browning, since most home ovens run hotter at the back.
For extra color in the last minute, the broiler works fast — stay in front of it. And resist scooping immediately: those five resting minutes are what keep the filling on the fork instead of the dish.
Variations
- Turkey Day Bake: Swap the chicken for an equal amount of shredded cooked turkey and use cream of celery soup. Fold in a handful of chopped fresh sage with the seasonings for a post-holiday version that tastes intentional rather than leftover.
- Buffalo Bubble Bake: Stir 1/3 cup hot sauce into the filling and use pepper Jack instead of cheddar. Finish with a thin drizzle of ranch dressing over each portion for a tangy, spicy take on the same biscuit-topped structure.
- Bacon and Green Onion: Crisp 4 slices of bacon, crumble them into the filling, and scatter sliced green onions over the melted cheese after baking. The salty crunch against the soft biscuit bubbles makes the dish feel a little more dressed up.
- Smaller Dish Version: Halve every ingredient and bake in an 8x8-inch dish for 25 minutes, add the cheese, then bake 8 minutes more. Same texture, same pull, sized for a household of two or three with sensible leftovers.
Storage and make-ahead
- Fridge
- Cover and refrigerate within 2 hours of baking; keeps 3 days and reheats without losing its texture.
- Freezer
- Freeze baked portions wrapped well for up to 2 months; thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat covered at 350°F (175°C) for about 15 minutes, or microwave single portions in 45-second bursts until hot.
Cool leftovers no more than 2 hours after baking, then cover the dish tightly or transfer portions to an airtight container. Refrigerate for up to 3 days; the biscuit tops soften slightly but the filling stays creamy.
Assemble the filling up to a day ahead and refrigerate it covered; shred the chicken and grate the cheese then too. Cut the biscuits and assemble just before baking so the dough stays cold and puffs properly.
Serving ideas
Serve straight from the baking dish with a large spoon, letting each portion carry a stretch of cheese and at least one crisp biscuit bubble. A simple green salad or steamed green beans alongside cuts the richness nicely, and a dash of hot sauce at the table suits anyone who likes heat.
Because everything is already in one dish, there is no last-minute plating — bring the whole thing to the table while the cheese is still pulling.
For a casual dinner party, set the dish on a trivet with forks and plates nearby and let people serve themselves; the biscuit bubbles break apart easily and the filling holds its heat for a good twenty minutes.
It also portions well into individual ramekins for smaller households — just reduce the bake time by five minutes and check the centers with a knife before serving.

Chicken Bubble Biscuit Bake with a Gooey Cheese Pull

Ingredients
- 3 cups cooked shredded chicken (rotisserie or leftover)
- 1 can (16 oz) refrigerated biscuit dough, cut into quarters
- 1 can (10.5 oz) condensed cream soup, chicken style
- 1/2 cup sour cream
- 1/2 cup whole milk
- 2 cups shredded cheddar cheese, divided
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp melted butter, for brushing the biscuits
Instructions
- Set a rack in the center of the oven and heat it to 375°F (190°C). While it warms, brush the bottom and sides of a 9x13-inch baking dish with the melted butter. A well-greased dish keeps the biscuit bubbles from tearing when they are scooped out later.
- Open the can of refrigerated biscuit dough and separate the rounds. With kitchen shears or a knife, cut each biscuit into four even pieces on a cutting board. Quartered pieces puff into soft bubbles all over the top instead of one dense middle, so every scoop gets a flaky edge.
- Pull the cooked chicken into bite-size shreds with two forks, discarding any skin or cartilage. Rotisserie chicken works beautifully here. Keep the shreds fairly chunky so they stay visible in the creamy filling instead of disappearing into it.
- In a large mixing bowl, stir together the condensed cream soup, sour cream, whole milk, garlic powder, onion powder, kosher salt and black pepper until smooth. Fold in the shredded chicken and 1 1/2 cups of the cheddar. The mixture should be thick, glossy and evenly studded with cheese.
- Spread the chicken mixture evenly in the buttered baking dish, reaching the corners. Scatter the quartered biscuit pieces over the top in a single layer, letting them sit slightly apart so they have room to puff. Brush the tops lightly with any remaining melted butter.
- Slide the dish into the center of the oven and bake for 30 minutes. The sauce will start to bubble at the edges and the biscuit pieces will rise and set. Rotate the dish once halfway through so the bake browns evenly from back to front.
- Pull the dish out and scatter the remaining 1/2 cup of cheddar evenly over the hot biscuits. Return it to the oven for 8 to 10 minutes more, until the cheese is fully melted and the biscuit tops are deep golden brown. A paring knife inserted into a biscuit should come out clean and dry.
- Let the bake rest on a cooling rack for 5 minutes before scooping. The creamy filling thickens as it sits, so the portions hold together on the plate instead of pooling. Serve straight from the dish with a big spoon, capturing a long cheese pull with every scoop.
