Before you start

Before beginning, ensure your oven is preheated to 375°F (190°C) to guarantee consistent cooking results. Gather all your ingredients, including the dry pasta shells, raw ground turkey, taco-spiced salsa, chicken broth, and shredded cheese, and place them on your countertop.

Having a large, rectangular ceramic baking dish ready is essential for assembling the layers. If the turkey has been stored in the refrigerator, take it out about 15 minutes before assembly so it is not ice-cold, which helps it cook more evenly once the baking process begins.

Ingredients at a glance (5)
  • 1 lb dry pasta shells
  • 1 lb ground turkey
  • 2 cups taco-spiced salsa
  • 1 cup chicken broth
  • 2 cups Mexican-blend cheese

Instructions

Assembly of ingredients

  1. Assemble the base
Preheat the oven to 375°F (190°C). In a large rectangular ceramic baking dish, spread the dry pasta shells evenly. Add the raw ground turkey, ensuring it is crumbled into small, bite-sized pieces throughout the dish to allow for even cooking.
Look for The turkey should be distributed evenly among the shells.
Tip Ensure the baking dish is large enough to prevent the pasta from piling too high, which helps it cook uniformly.

At this point, the baking dish contains the dry pasta and the raw ground turkey. Ensure the turkey is distributed evenly throughout the dish to avoid concentrated pockets of meat, as this will help the heat penetrate evenly during the baking phase.

Baking with liquid

  1. Add liquids and bake
Pour the taco-spiced salsa and chicken broth over the shells and turkey using a glass pitcher. Ensure the liquid covers the pasta almost entirely so it softens during baking. Cover the dish with foil and bake for 30 minutes, or until the liquid is mostly absorbed.
Look for The liquid should just cover the shells to ensure they rehydrate properly.
Tip Stirring the mixture lightly before covering can help distribute the taco seasoning from the salsa.

After covering and baking, the shells should have absorbed most of the liquid and become tender. The kitchen will smell like seasoned taco meat and toasted pasta. Check that the pasta is cooked through before proceeding to the final topping step.

Final cheese melt

  1. Melt the cheese
Remove the foil and scatter the Mexican-blend cheese thickly over the surface. Return the dish to the oven for an additional 5 minutes until the cheese is melted and bubbling. Ensure the turkey reaches an internal temperature of 165°F (74°C) to be fully cooked.
Look for The cheese should be completely melted and bubbling at the edges of the dish.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Watch closely during the final minutes to prevent the cheese from browning too much if a softer texture is preferred.

The final phase is complete when the cheese is fully melted and bubbling across the top. The surface should look uniform and inviting. If you prefer a crispier top, you can broil the dish for one minute, but watch it very closely to prevent burning.

Common mistakes

A common mistake is using too little liquid, which can result in undercooked or crunchy pasta shells. Ensure the pasta is well-submerged in the salsa and broth mixture before baking.

Another error is failing to crumble the ground turkey sufficiently; large clumps of meat may take longer to cook through than the surrounding pasta.

Take the time to break the turkey into small, uniform pieces during the initial assembly to ensure every bite is perfectly cooked and seasoned.

How to tell it’s done

The dish is considered done when the pasta shells are tender but still retain a slight bite, and the liquid has mostly been absorbed by the pasta. The cheese should be fully melted, bubbling, and potentially golden in some spots.

Most importantly, use a food thermometer to verify that the ground turkey has reached an internal temperature of at least 165°F (74°C) to ensure it is thoroughly cooked and safe to consume.

  • Poultry: 165°F (74°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
