Tips for success
For extra flavor, add a splash of white wine or sherry to the onions after they’re caramelized, though the video doesn’t call for it.
If you like a bit of heat, a pinch of red pepper flakes can be added to the butter. Always taste the onion mixture and adjust seasoning—the Worcestershire adds saltiness, so be cautious with additional salt.
To make ahead, assemble the sliders without baking, cover tightly, and refrigerate for up to 24 hours.
When ready to serve, bake as directed, adding a few extra minutes if baking cold. The garlic butter can also be prepared in advance and stored in the refrigerator.
Variations
- Turkey Meatball Sliders: Use ground turkey meatballs instead of beef for a lighter option. Cook them thoroughly to 165°F (74°C) and follow the same assembly. The flavor will be slightly milder but still delicious.
- Vegetarian Mushroom Sliders: Replace meatballs with large portobello mushroom caps or plant-based meatballs. Sauté mushrooms with the onions for extra umami. Ensure the plant-based meatballs are fully cooked according to package directions.
- Spicy Chorizo Sliders: Swap beef meatballs for cooked chorizo sausage links, sliced. The smoky, spicy flavor pairs beautifully with the sweet rolls and nutty Gruyère. Reduce salt in the onion mixture as chorizo is salty.
- Bacon Cheddar Sliders: Add crispy bacon crumbles and use sharp cheddar instead of Gruyère. Cook the bacon until crisp, crumble, and sprinkle over the cheese before baking for a smoky twist.

Store leftover sliders in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster oven to restore crispness, or microwave in short bursts.
The caramelized onions can be made up to 3 days ahead and refrigerated. Assemble the sliders completely, then cover and refrigerate for up to 24 hours before baking. Let them sit at room temperature for 15 minutes before baking if chilled.
Serving ideas
Serve the sliders warm, straight from the skillet, so the cheese stays gooey and the rolls remain crisp.
They’re perfect as a main dish with a simple green salad or roasted vegetables, or as a hearty appetizer for a party. Pull them apart individually and watch the cheese stretch.
For a festive presentation, place the skillet in the center of the table and let everyone help themselves.
These sliders are best enjoyed immediately after baking, but they’re still delicious at room temperature for a short while. Pair with a cold beer or a glass of red wine to complement the rich flavors.

Cheesy Skillet French Onion Meatball Sliders

Ingredients
- 12 Hawaiian sweet rolls
- 3 tbsp unsalted butter
- 3 large yellow onions, thinly sliced
- 1 tbsp Worcestershire sauce
- 1/2 cup beef broth
- 12 precooked beef meatballs
- 2 cups shredded Gruyère cheese
- 2 tbsp unsalted butter, melted
- 1 clove garlic, minced
Instructions
- Melt 3 tablespoons butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they soften and begin to brown. Reduce heat to medium-low and continue cooking for 20–25 minutes, stirring every few minutes, until the onions are deeply caramelized and jammy. Stir in the Worcestershire sauce and beef broth, scraping up any browned bits. Simmer for 2–3 minutes until the liquid reduces slightly. Set aside.
- Add the meatballs to the skillet with the caramelized onions and pan juices. Toss to coat the meatballs evenly with the onion mixture. Cook over medium heat for 5–7 minutes, stirring occasionally, until the meatballs are heated through and glazed. If using raw meatballs, cook them fully in the skillet before adding the onions, ensuring they reach an internal temperature of 160°F (71°C).
- Preheat the oven to 375°F (190°C). Without separating the rolls, slice the entire slab of Hawaiian rolls in half horizontally. Place the bottom half in a cast-iron skillet. Arrange the meatballs evenly over the rolls, placing one meatball on each roll bottom. Spoon any remaining caramelized onions over the meatballs. Sprinkle the shredded Gruyère cheese generously over the top, covering the meatballs and onions completely.
- In a small bowl, mix the melted butter with the minced garlic. Brush the cut side of the top half of the rolls with the garlic butter. Place the top half over the cheese-covered meatballs, buttered side down. Brush the outside of the rolls with any remaining garlic butter.
- Place the skillet in the preheated oven and bake for 12–15 minutes, until the cheese is melted and bubbly and the roll tops are golden brown and toasted. If desired, broil for the last 1–2 minutes for extra browning, watching carefully to prevent burning.
- Remove the skillet from the oven and let it cool for a few minutes. Use a spatula to lift individual sliders or pull them apart by hand. Serve warm, with extra caramelized onions on the side if desired.
