Tips for success
For the best flavor, use high-quality shaved roast beef from a deli or roast your own beef and slice it thinly.
The onions should be cooked slowly over medium heat—don't rush this step, as it's key to their sweetness. When brushing the garlic butter, be generous; it will soak into the rolls and create a delicious, crispy top.
If you're making these ahead, assemble the sliders without the garlic butter and refrigerate. When ready to bake, brush with garlic butter and add a few extra minutes to the baking time. The au jus can be made ahead and reheated. These sliders are best served warm, so plan to bake them just before serving.
Variations
- Mushroom Swiss: Sauté sliced mushrooms with the onions and use Swiss cheese instead of provolone. The earthy mushrooms pair beautifully with the beef and add extra depth.
- Spicy Kick: Add a layer of pepper jack cheese and a few slices of jalapeño to the sliders before baking. Serve with a side of horseradish sauce for dipping.
- Garlic Herb Twist: Mix minced garlic and fresh thyme into the butter instead of using garlic herb butter. This adds a bright, herbal note that complements the beef.
- Caramelized Onion & Blue Cheese: Swap provolone for crumbled blue cheese and add extra caramelized onions. The sharp, tangy blue cheese contrasts with the sweet onions and rich beef.
Storage and make-ahead
- Fridge
- Store leftover sliders in an airtight container in the refrigerator for up to 3 days. Keep au jus in a separate container.
- Freezer
- Assembled but unbaked sliders can be frozen for up to 2 months. Wrap tightly in plastic wrap and foil.
- Reheat
- Reheat sliders in a 350°F (175°C) oven for 5–10 minutes, or until hot and cheese is melted. Reheat au jus on the stovetop or in the microwave.

You can caramelize the onions up to 3 days ahead and store them in the refrigerator. Assemble the sliders (without the garlic butter) and refrigerate for up to 24 hours.
When ready to bake, brush with garlic butter and increase the baking time by 2–3 minutes. The au jus can be made ahead and refrigerated for up to 4 days.
Serving ideas
Serve these sliders hot from the oven, with a small bowl of warm au jus for dipping. They're perfect for game day, parties, or a fun weeknight dinner.
Pair them with a crisp green salad, coleslaw, or sweet potato fries for a complete meal. The sliders are best enjoyed immediately, while the cheese is still molten and the rolls are toasty.
For a more substantial meal, serve the sliders alongside a bowl of au jus for dipping, and add some pickles or pepperoncini on the side for a tangy contrast.
You can also offer extra garlic butter for brushing, if desired. These sliders are versatile and can be customized with your favorite toppings, such as horseradish sauce or sautéed mushrooms.

Cheesy Skillet French Dip Sliders with Provolone & Au Jus

Ingredients
- 12 Hawaiian sweet slider rolls
- 14 oz thinly shaved roast beef
- 2 yellow onions, sliced
- 2 tbsp butter
- 8 slices provolone cheese
- 2 tbsp garlic herb butter, melted
- 2 cups hot rich beef consommé au jus
Instructions
- Melt the butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply golden brown and jammy, about 15–20 minutes. If they start to stick, add a splash of water or broth. Transfer the caramelized onions to a bowl and set aside.
- Slice the Hawaiian rolls in half horizontally, keeping the bottom slab intact. Place the bottom half in a large oven-safe skillet or baking dish. Layer half of the provolone slices over the bread, then top with the shaved roast beef, spreading it evenly. Spoon the caramelized onions over the beef, then add the remaining provolone slices. Place the top half of the rolls over the filling.
- Brush the tops of the rolls generously with the melted garlic herb butter. Bake in a preheated 375°F (190°C) oven for 12 minutes, until the tops are golden brown and the cheese is melted and bubbly. Let it rest for 3 minutes before slicing.
- While the sliders bake, warm the beef consommé au jus in a small saucepan over medium heat until steaming. Keep it hot until serving.
- Remove the sliders from the oven and let them rest for 3 minutes. Use a sharp knife to cut between the rolls into individual sliders. Serve warm with the hot au jus on the side for dipping.
