Tips for success
For an extra crispy texture, place the assembled tacos under the broiler for the last 1-2 minutes of baking. Watch them closely to prevent burning. If you have time, let the shredded chicken sit in the sauce for 10 minutes before assembling to allow the flavors to meld further. This step enhances the overall taste without adding extra effort.
To make the tacos ahead, prepare the chicken filling up to two days in advance and refrigerate. When ready to serve, warm the filling, assemble the tacos, and bake as directed.
You can also freeze the assembled, unbaked tacos for up to three months. Bake from frozen, adding a few extra minutes to the cooking time. This makes for a quick and satisfying meal on busy nights.
Variations
- Spicy Chorizo Version: Replace the chicken with 1 pound of fresh chorizo, removing the casing. Cook the chorizo in the skillet, breaking it up, until browned. Proceed with the same spices and sauce. The chorizo adds a spicy, savory depth.
- Vegetarian Black Bean Tacos: Swap the chicken for two cans of drained black beans. Sauté the onion and garlic, then add the beans and spices with 1/2 cup water. Simmer for 10 minutes. Mash slightly. Assemble and bake as directed.
- Crispy Chicken Tacos: After assembling, brush the tortillas with a little oil and bake at 425°F (220°C) for 15 minutes, until the tortillas are crispy and golden. The filling stays moist while the shells become crunchy.
- Creamy Chipotle Chicken: Add 1/4 cup of chipotle sauce or adobo sauce from canned chipotle peppers to the simmering liquid. This adds a smoky, creamy heat. Reduce the water to 3/4 cup to maintain the sauce's consistency.

Store leftover cheesy chicken tacos in an airtight container in the refrigerator for up to three days. The tacos will soften as they sit, but the flavor remains delicious. To reheat, place them on a baking sheet and warm in a 350°F (175°C) oven for about 10 minutes, until heated through and the cheese is melted again. Avoid microwaving, as it can make the tortillas soggy.
The chicken filling can be made up to two days ahead. Cook the chicken and shred it, then store it in the sauce in the refrigerator. When ready to assemble, simply warm the filling in a skillet or microwave.
You can also assemble the tacos completely, without baking, and refrigerate for up to 24 hours. When ready to eat, bake as directed, adding a few extra minutes if starting from cold.
Serving ideas
Serve these cheesy chicken tacos hot from the oven, with sour cream, sliced jalapeños, and salsa on the side. The cool, creamy sour cream balances the heat of the jalapeños and the richness of the cheese.
For a complete meal, pair with Mexican rice, refried beans, or a simple side salad. These tacos are perfect for casual dinners, game-day gatherings, or any time you crave comforting, cheesy goodness.
To enjoy the full experience, pull the tacos apart with your hands to see the cheese stretch. The combination of textures—crispy tortilla edges, tender chicken, and gooey cheese—is what makes these tacos memorable.
Encourage everyone to customize their toppings, adding extra salsa for a fresh kick or more jalapeños for heat. These tacos are best enjoyed immediately, while the cheese is still molten and the tortillas are crisp.

Cheesy Shredded Chicken Tacos

Ingredients
- 1 lb boneless, skinless chicken breast
- 2 tbsp vegetable oil
- 1 diced onion
- 1 tbsp minced garlic
- 2 tbsp tomato paste
- 1 tbsp smoked paprika
- 1 tsp Cajun spice
- 1 tsp ground cumin
- Salt to taste
- 1 cup water
- 1 tbsp lime juice
- 1/4 cup chopped fresh cilantro
- 8 small flour tortillas
- 2 cups shredded Mexican blend cheese
- Sour cream, for serving
- Sliced jalapeños, for serving
- Salsa, for serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 2 minutes. Add the chicken breast and sear until golden on both sides, about 3 minutes per side. The chicken does not need to be cooked through yet.
- Stir in the minced garlic, tomato paste, smoked paprika, Cajun spice, ground cumin, and salt. Cook for 1 minute until fragrant, stirring constantly to coat the chicken and onion.
- Pour in the water and bring to a simmer. Reduce the heat to low, cover, and let it simmer gently for 15 minutes, until the chicken is cooked through and tender.
- Remove the chicken from the skillet and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the skillet with the pan juices.
- Stir in the lime juice and chopped cilantro. Mix well to combine everything. The filling is now ready to assemble the tacos.
- Preheat the oven to 400°F (200°C). Spoon the chicken mixture evenly onto the flour tortillas. Fold each tortilla in half and arrange them on a baking sheet or ovenproof tray.
- Sprinkle the shredded Mexican blend cheese generously over the tacos, making sure to cover the edges. Bake for 12 minutes, until the cheese is melted, bubbly, and golden at the edges.
- Remove the tacos from the oven and let them cool for a couple of minutes. Top with sour cream, sliced jalapeños, and salsa. Serve warm, pulling apart the cheesy tacos at the table.
