Tips for success
To achieve the perfect caramelized onions, do not rush the process. Cook them over medium-low heat, stirring occasionally, and allow them to take their time.
If the onions start to scorch or dry out, add a splash of water or reduced beef stock to the skillet to scrape up the browned bits from the bottom, which adds incredible depth of flavor. Patience is key here, as slow cooking draws out the natural sugars for that signature sweet flavor.
When shaping the meatloaf, try to make it uniform in thickness. A loaf with tapered, thin ends will cook unevenly, leaving the edges dry by the time the center reaches the safe internal temperature. Gently pressing the mixture into a compact, even oval shape ensures that every slice cooks perfectly at the exact same rate. Avoid pressing too hard, as a loosely packed loaf remains much more tender.
Variations
- French Onion Meatballs: Shape the beef mixture into small meatballs, sear them in the skillet, simmer in reduced beef stock, and top with Gruyere for a fun appetizer.
- Turkey French Onion Meatloaf: Substitute ground turkey for the ground beef. Ensure the internal temperature reaches a safe 165°F (74°C) when baking.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze the baked, cooled meatloaf slices wrapped in foil and placed in a freezer bag for up to 3 months.
- Reheat
- Reheat slices in a 350°F (175°C) oven covered with foil for 15 minutes, or microwave on medium power until hot.
Allow any leftovers to cool completely at room temperature for no more than two hours before storing. Place the sliced meatloaf in an airtight container and store it in the refrigerator. The flavors actually continue to develop and meld together, making the leftovers taste even better the next day. Ensure the container is tightly sealed to prevent the cheese from drying out.
This meatloaf can easily be prepared ahead of time. Shape the meatloaf in the skillet, pour the reduced beef stock around it, and cover the skillet tightly with plastic wrap. Store it in the refrigerator for up to 24 hours before baking.
When ready to cook, remove the wrap and bake as directed, adding a few extra minutes to the baking time if cooking straight from the fridge. This makes it an excellent option for busy weeknights.
Serving ideas
Serve this rich, savory meatloaf alongside classic comfort food sides. Creamy mashed potatoes are the perfect vehicle for catching the extra reduced beef stock from the skillet.
Roasted carrots, green beans, or a crisp green salad dressed with a light vinaigrette provide an excellent, refreshing contrast to the rich cheese and savory beef. The sweetness of roasted carrots pairs beautifully with the caramelized onions in the meatloaf.
For an elegant presentation, slice the meatloaf inside the skillet and serve it family-style right at the table. The rustic look of the cast iron skillet, topped with bubbly golden cheese and bright green parsley, makes for a stunning centerpiece.
Be sure to spoon some of the remaining skillet juices over each individual slice before serving. This keeps every portion incredibly moist and enhances the rich onion flavor.

Cheesy French Onion Meatloaf in a Cast Iron Skillet

Ingredients
- 2 large yellow onions, sliced
- 1 1/2 lb ground beef
- 1/2 cup reduced beef stock
- 1 cup shredded Gruyere cheese
- 1 tbsp chopped fresh parsley, for garnish
Instructions
- Cook the sliced yellow onions in a skillet over medium heat, stirring occasionally, until they turn deeply golden brown and caramelized, about 20 minutes. Remove half of the caramelized onions from the skillet and set them aside to top the meatloaf later.
- In a mixing bowl, combine the ground beef with the remaining caramelized onions left in the skillet. Mix gently with your hands just until the onions are evenly distributed throughout the beef, being careful not to overwork the meat.
- Preheat the oven to 375°F (190°C). Shape the beef mixture into an oval loaf and place it into a cast iron skillet. Pour the rich reduced beef stock over the top of the meatloaf, coating it evenly to ensure it stays moist during baking.
- Bake the meatloaf in the preheated oven for 45 minutes. Periodically spoon the warm reduced beef stock from the bottom of the skillet back over the top of the loaf. Ensure the internal temperature reaches 160°F (71°C) to safely cook the ground meat.
- Top the baked meatloaf with the reserved caramelized onions and a generous layer of shredded Gruyere cheese. Return the skillet to the oven for 5 minutes, or place it under the broiler, until the cheese is completely melted, bubbly, and golden brown.
- Remove the hot skillet from the oven. Garnish the melted cheese with the chopped fresh parsley. Let the meatloaf rest in the skillet for 10 minutes before slicing to allow the juices to redistribute and the cheese to set.
