Tips for success

To elevate the flavor of this bake, consider adding a layer of thinly sliced onions or minced garlic at the bottom of the crockpot along with the potatoes. As they slow-cook, the onions will caramelize and melt into the potato layer, adding a subtle sweetness and depth.

Additionally, tossing the potatoes in a tablespoon of melted butter with a pinch of salt before layering them can enhance their rich texture and prevent them from sticking to the bottom.

For an extra touch of freshness, garnish the completed bake with freshly chopped chives, green onions, or a dollop of sour cream right before serving. The bright, sharp flavor of green onions cuts through the richness of the cheddar and bacon beautifully. If a smokier flavor profile is desired, try using smoked cheddar or adding a tiny splash of liquid smoke to the steak seasoning before searing the meat cubes in the skillet.

Variations

  • Spicy Jalapeño Bake: Add diced fresh jalapeños or a splash of hot sauce to the potato layer before slow cooking to add a fiery kick.
  • Loaded Ranch Style: Toss the potatoes with a packet of dry ranch seasoning instead of plain salt for an herbaceous, tangy twist.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freezing is not recommended as cooked potatoes can become watery and grainy upon thawing.
Reheat
Reheat individual portions in the microwave or in an oven-safe dish at 350°F (175°C) until warmed through.

Allow any leftovers to cool completely for no more than two hours before transferring them to an airtight container. Store the container in the refrigerator for up to three to four days.

Because the potatoes and steak are cooked together, the flavors will continue to meld and deepen overnight, making the leftovers taste just as delicious, if not better, the next day. Avoid leaving the dish at room temperature for extended periods to maintain food safety.

This recipe can be partially prepped the day before to save time. Wash and cube the potatoes, then submerge them in cold water in the refrigerator to prevent browning. Cut the steak into cubes and store them in a separate airtight container.

You can also cook and crumble the bacon ahead of time. On the day of cooking, drain and dry the potatoes thoroughly, sear the seasoned steak, assemble everything in the slow cooker, and proceed with the recipe instructions.

Serving ideas

Serve this hearty steak and potato bake hot, straight from the slow cooker, to keep the cheese melted and gooey. It functions beautifully as a complete, all-in-one meal that requires very little accompaniment.

Spoon generous portions into shallow bowls, making sure every serving gets a balanced mix of tender potatoes, seasoned beef, crispy bacon, and melted cheese. The rich juices from the bottom of the crockpot can be drizzled over each portion for extra flavor.

To balance the rich and heavy nature of this dish, serve it alongside a crisp green salad tossed in a light vinaigrette or some steamed green vegetables like broccoli or green beans. A side of warm garlic bread or crusty dinner rolls is also excellent for soaking up any remaining savory juices left on the plate. This comforting bake is perfect for casual family dinners, game day gatherings, or cozy weekend meals.

Frequently asked questions

Can Russet potatoes be used instead of Yukon Gold?
Russet potatoes can be used, but they tend to break down more easily during long cooking times, which may result in a mushier texture compared to sturdy Yukon Golds.
How can a greasy cheese layer be avoided?
Using freshly grated sharp cheddar cheese instead of pre-shredded cheese prevents a greasy or grainy texture, as pre-packaged cheese contains anti-caking agents.
Is it necessary to sear the steak before slow cooking?
Searing is highly recommended because it caramelizes the meat's surface, locking in moisture and adding a rich, savory depth of flavor that slow cooking alone cannot replicate.

A slow cooker filled with tender seared steak, golden cubed potatoes, melted cheddar cheese, and crispy bacon.

Ingredients

  • 3 lb Yukon Gold potatoes, cut into 1-inch cubes
  • 2 lb sirloin steak, cut into 1-inch cubes
  • 2 tbsp steak seasoning
  • 8 slices bacon, cooked and crumbled
  • 2 cups cheddar cheese, shredded

Instructions

  1. Place the cubed sirloin steak into a medium bowl. Sprinkle the steak seasoning evenly over the meat and toss thoroughly to ensure every cube is well coated.
  2. Heat a large skillet over medium-high heat. Add the seasoned steak cubes in a single layer, working in batches if necessary, and sear for 2 to 3 minutes until a rich brown crust forms on all sides. Remove from the heat.
  3. Arrange the cubed Yukon Gold potatoes in an even layer at the bottom of the slow cooker. Top the potatoes with the seared steak cubes and any juices from the skillet. Cover and cook on high for 3 to 4 hours (or on low for 6 to 8 hours) until the potatoes are fork-tender.
  4. Verify the steak has reached an internal temperature of at least 145°F (63°C). Evenly sprinkle the cooked bacon crumbles and shredded cheddar cheese over the hot steak and potatoes. Cover and cook on high for an additional 5 to 10 minutes until the cheese is completely melted and bubbling. Let rest for 3 minutes before serving.
