Before you start

Before turning on the slow cooker, gather all ingredients and complete the prep work. Wash and cube the potatoes into equal one-inch pieces. Trim any excess fat from the steak and cut it into uniform cubes, then toss them thoroughly with the steak seasoning.

Cook the bacon in a skillet until crispy, drain on paper towels, and crumble. Grate the fresh cheddar cheese. Having these components ready ensures a smooth assembly process and allows the steak to be seared quickly while the skillet is hot.

Ingredients at a glance (5)
  • 3 lb Yukon Gold potatoes, cut into 1-inch cubes
  • 2 lb sirloin steak, cut into 1-inch cubes
  • 2 tbsp steak seasoning
  • 8 slices bacon, cooked and crumbled
  • 2 cups cheddar cheese, shredded

Instructions

Searing and Prepping the Base

  1. Season the Steak
Place the cubed sirloin steak into a medium bowl. Sprinkle the steak seasoning evenly over the meat and toss thoroughly to ensure every cube is well coated.
Look for The steak cubes should be uniformly coated with seasoning.
Tip Ensure the steak is cut into uniform cubes for even cooking.
  2. Sear the Steak
Heat a large skillet over medium-high heat. Add the seasoned steak cubes in a single layer, working in batches if necessary, and sear for 2 to 3 minutes until a rich brown crust forms on all sides. Remove from the heat.
Look for The steak should have a deep brown caramelized crust on the exterior.
Tip Do not crowd the skillet to avoid steaming the meat instead of searing.

At the end of this prep phase, the steak cubes should have a beautiful, deep brown crust on all sides from the quick sear in the hot skillet. The meat will not be fully cooked through yet, but the exterior should look caramelized and smell highly aromatic. The cubed potatoes should be clean, dry, and neatly layered in the bottom of the slow cooker insert, ready to receive the seared beef.

The Slow Cooker Braise

  1. Layer and Slow Cook
Arrange the cubed Yukon Gold potatoes in an even layer at the bottom of the slow cooker. Top the potatoes with the seared steak cubes and any juices from the skillet. Cover and cook on high for 3 to 4 hours (or on low for 6 to 8 hours) until the potatoes are fork-tender.
Look for The potatoes should be easily pierced with a fork.
Tip Keep the lid closed to maintain a steady temperature inside the slow cooker.

After several hours of slow cooking, the potatoes should be completely fork-tender, easily yielding when pierced. The steak cubes will have softened significantly, absorbing the seasonings and releasing savory juices that pool slightly at the bottom.

The kitchen will fill with a rich, comforting aroma of roasted beef and garlic, indicating that the core ingredients are fully cooked and ready for the final toppings.

The Melting Finish

  1. Add Cheese and Melt
Verify the steak has reached an internal temperature of at least 145°F (63°C). Evenly sprinkle the cooked bacon crumbles and shredded cheddar cheese over the hot steak and potatoes. Cover and cook on high for an additional 5 to 10 minutes until the cheese is completely melted and bubbling. Let rest for 3 minutes before serving.
Look for The cheddar cheese should be fully melted, gooey, and bubbling.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Use freshly grated cheese for the absolute best melt and stretch.

In this final stage, the cheddar cheese should be completely melted, bubbly, and golden around the edges, binding the bacon crumbles to the steak and potatoes beneath. When scooped with a spoon, the cheese should stretch into an epic, gooey pull. Rising steam will carry the smoky aroma of bacon and sharp cheddar, signaling that this comforting bake is ready to be rested and served.

Common mistakes

One common mistake is crowding the skillet when searing the steak cubes. If too much meat is added at once, the temperature of the pan drops, causing the steak to steam in its own juices rather than sear. This results in gray, tough meat without that flavorful crust.

Work in batches to ensure a proper sear. Additionally, avoid opening the slow cooker lid frequently during the cooking process, as this releases heat and can add significant time to the total cooking process.

How to tell it’s done

The dish is done when the potatoes are completely tender and the steak has reached a safe internal temperature of 145°F (63°C). Use an instant-read digital thermometer inserted into the thickest steak cube to verify this.

Once the temperature is reached, the cheese must be fully melted and bubbling. Always allow the dish to rest for 3 minutes before serving to let the meat juices redistribute and the cheese set slightly, ensuring a perfect scoop.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
