Before you start

Before beginning, ensure all components are ready for assembly. If the bolognese sauce is cold from the refrigerator, warm it slightly on the stove to ensure even heat distribution during the baking process.

Preheat the oven fully to 375°F (190°C) and clear enough counter space to lay out the baking dish and all ingredients. Have the shredded cheeses combined in a bowl for easy sprinkling, and ensure the crepes are at room temperature so they are pliable and easy to handle during layering.

Ingredients at a glance (4)
  • 12 count thin crepes, prepared or store-bought
  • 3 cups bolognese sauce, prepared or store-bought
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

Preparing the foundation

  1. Prepare the baking dish
Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish to ensure the crepes do not stick. Spread a thin layer of the bolognese sauce across the bottom of the dish to provide a base for the first layer of crepes.
Look for The sauce should cover the bottom evenly.
Tip Using a thin layer of sauce prevents the bottom crepes from drying out during the baking process.

The baking dish should be clean and lightly greased to prevent sticking. A thin, even coating of bolognese sauce on the bottom of the dish provides the necessary moisture to keep the first layer of crepes from drying out. Check that the oven has reached the target temperature of 375°F (190°C) before proceeding to the assembly phase, as this ensures the cooking time is accurate and the cheese achieves the desired golden finish.

Layering the crepes and sauce

  1. Assemble the lasagna layers
Place two crepes side by side over the sauce. Spread a portion of the bolognese sauce over the crepes, followed by a sprinkle of shredded mozzarella and parmesan. Repeat these layers until all ingredients are used, finishing with a generous layer of cheese on top to create a golden crust.
Look for Layers are uniform and the dish is filled.
Tip Ensure the crepes overlap slightly if needed to fully cover the surface area of the baking dish.

Each layer should consist of two crepes, a layer of meat sauce, and a generous sprinkle of cheese. Ensure the crepes are laid out flat and overlap slightly to cover the base of the dish completely.

As you build the layers, confirm that the sauce is spread to the edges of the dish. The final layer should have a substantial amount of cheese to create the characteristic crust that defines this dish's visual and textural appeal.

Baking until golden

  1. Bake and serve
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 10 to 15 minutes until the cheese is bubbly and golden brown. Ensure the internal temperature of the meat sauce reaches 160°F (71°C). Let the lasagna rest for 10 minutes before slicing into wedges.
Look for Cheese is melted and golden brown.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Resting the lasagna allows the layers to set, making it much easier to slice clean, beautiful wedges for serving.

The lasagna needs to be covered with foil initially to cook the layers without burning the top. After 20 minutes, remove the foil to allow the cheese to brown properly. The final result should be fragrant, with a bubbling sauce and a golden-brown top. Before serving, the lasagna must rest for at least 10 minutes, which is the final check to ensure that the layers have settled and the wedges will hold their shape when lifted.

Common mistakes

A common error is using a sauce that is too thin, which can lead to a watery lasagna that does not hold its shape. Always simmer the bolognese until it is thick and reduced before assembly.

Another mistake is overcrowding the layers with too much cheese or sauce, which can cause the lasagna to slide apart. Maintain a consistent, moderate amount of filling for each layer to ensure the structure remains stable and the ingredients are evenly distributed throughout the dish.

How to tell it’s done

The lasagna is finished when the cheese on top has melted into a deep golden brown and the edges are bubbling vigorously. To ensure food safety, verify that the internal temperature of the bolognese sauce in the center of the dish reaches at least 160°F (71°C).

The structure should feel firm when gently pressed with a spatula, indicating that the layers have set properly during the baking process. Allow the dish to sit for 10 minutes to reach the perfect serving consistency.

  • Ground meat: 160°F (71°C) in the thickest part
