Tips for success
For extra crispy tacos, use a cast-iron skillet or griddle and don't overcrowd the pan. Cook in batches if necessary.
Pressing down with a spatula while grilling helps the cheese melt and the tortilla crisp up evenly. If you like more heat, add extra chipotle or a dash of cayenne to the beef.
The lime crema can be made ahead and stored in the refrigerator for up to 3 days. If it thickens, whisk in a little milk or water to reach desired consistency.
For a smokier flavor, use a bit of the adobo sauce from the chipotle peppers instead of the minced pepper.
Variations
- Chicken Version: Substitute ground chicken for beef. Cook until chicken is no longer pink and reaches 165°F. The spice blend works well with chicken, giving it a smoky kick.
- Vegetarian Option: Replace beef with a plant-based crumble or cooked black beans. Sauté with the same spices until heated through. Omit cheese for a dairy-free version.
- Spicy Mango Salsa: Top the tacos with a fresh mango salsa made with diced mango, red onion, jalapeño, and lime juice instead of crema. Adds a sweet and spicy contrast.
- Breakfast Tacos: Serve the seasoned beef with scrambled eggs and cheese in the crispy tortillas. A hearty breakfast or brunch option.

Serving ideas
Serve these tacos immediately after grilling to enjoy the crispy texture. Arrange on a platter with lime wedges on the side for squeezing.
Pair with a simple slaw or Mexican rice for a complete meal. The lime crema can be served on the side for dipping.
For a casual dinner, set up a taco bar with the beef, tortillas, cheese, and toppings so everyone can assemble their own. This is also a great way to let guests customize heat levels and toppings.

Cheesy Chipotle Beef Tacos with Lime Crema

Ingredients
- 2 lb ground beef
- 2 tbsp chili powder
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp kosher salt
- 2 tbsp chipotle peppers in adobo, finely chopped
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 2 tbsp fresh lime juice
- 1 tbsp chipotle pepper in adobo, minced
- 1/2 cup diced red onion
- 1/4 cup fresh cilantro leaves
Instructions
- Heat a large skillet or griddle over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until it starts to brown, about 5 minutes. Sprinkle the chili powder, garlic powder, onion powder, smoked paprika, cumin, oregano, salt, and chopped chipotle peppers over the beef. Stir to coat evenly and continue cooking until the beef is fully browned and fragrant, about 5 more minutes. The mixture should be sizzling and deeply red from the spices.
- Once the beef reaches 160°F (71°C), transfer it to a bowl and cover loosely with foil to keep warm. Wipe out the skillet or griddle to remove excess grease, leaving a light coating for the tortillas.
- Place a corn tortilla on a plate. Spoon about 1/4 cup of the beef mixture onto one half of the tortilla. Sprinkle with a generous amount of shredded cheddar cheese. Fold the other half over to create a half-moon shape, pressing gently to keep the filling in place.
- Heat the same skillet or griddle over medium heat. Place the filled tacos in the skillet, folded side down. Cook for 2-3 minutes until the bottom is golden and crispy. Carefully flip and cook the other side for another 2-3 minutes, pressing down gently with a spatula. The cheese should melt and create a crispy brown edge around the tortilla.
- In a small bowl, whisk together the sour cream, fresh lime juice, and minced chipotle pepper until smooth and well combined. The crema should be pourable but not thin.
- Arrange the crispy tacos on a serving platter. Drizzle the lime crema generously over the top. Scatter with diced red onion and fresh cilantro leaves. Serve immediately while the tacos are still warm and crispy.
