Tips for success
For the best texture, use a kitchen scale to measure the flour—scooping can lead to dense dough. If the dough feels too sticky, add flour one tablespoon at a time, but avoid adding too much.
The dough should be soft and slightly tacky but not sticky. Let the rolls cool in the pan for 5 minutes before serving—this helps the cheese set slightly and makes them easier to pull apart.
To get that beautiful golden crust, brush the rolls with egg wash right before baking. If you want an extra glossy finish, brush them with melted butter immediately after they come out of the oven.
For a spicier filling, add a pinch of cayenne pepper or a dash of hot sauce to the chicken mixture. You can also sprinkle sesame seeds or flaky salt on top before baking for added texture.
Variations
- Spicy Jalapeño Cheddar: Add 2 tablespoons finely chopped pickled jalapeños and 1/2 cup shredded cheddar cheese to the chicken filling. Omit the smoked paprika and use a pinch of cayenne for extra heat. These rolls pair well with a cooling ranch dip.
- Buffalo Chicken: Toss the shredded chicken with 1/4 cup buffalo sauce before mixing with the cream cheese. Reduce the smoked paprika and add a splash of hot sauce. Use blue cheese crumbles instead of mozzarella for a bold, tangy twist.
- Pesto Chicken: Replace the smoked paprika with 2 tablespoons basil pesto. Mix the pesto into the cream cheese before adding the chicken. Use provolone or fontina cheese instead of mozzarella for a nutty, melty texture.
- Vegetarian Spinach and Cheese: Omit the chicken and add 1 cup thawed and squeezed-dry frozen spinach, 1/2 cup ricotta, and 1/2 cup grated Parmesan to the cream cheese mixture. Use mozzarella as directed. This filling is creamy, savory, and packed with flavor.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster oven to restore crispness.
- Freezer
- Freeze baked rolls in a single layer, then transfer to a zip-top bag for up to 2 months. Thaw overnight in the fridge and reheat.
- Reheat
- Reheat frozen rolls directly in a 350°F (175°C) oven for 10-12 minutes, or until warmed through. For a crispier crust, bake without covering.
Store leftover rolls in an airtight container at room temperature for up to 2 days. To keep them soft, place a slice of bread in the container—the rolls will absorb moisture from the bread.
Reheat in a 300°F (150°C) oven for 5-7 minutes until warm. Avoid microwaving, as it can make the rolls tough and chewy.
The rolls can be assembled and refrigerated before the second proof. After shaping, cover the dish and refrigerate overnight.
The next day, let them come to room temperature for 30 minutes, then proceed with the egg wash and baking. The dough can also be frozen after baking—wrap tightly and freeze for up to 2 months.
Serving ideas
Serve the rolls warm, straight from the oven, for the best cheese pull. Arrange them on a platter with a small bowl of marinara or ranch dressing for dipping. They're hearty enough to be a main dish, but also work as a side alongside a simple green salad or roasted vegetables.
For a casual gathering, place the rolls in a bread basket lined with a clean kitchen towel to keep them warm. Let everyone pull their own roll—the gooey center is part of the fun. If you have leftovers, slice them in half and toast them for a quick sandwich or snack.

Cheesy Chicken Stuffed Bread: Pillowy Soft Pull-Apart Rolls

Ingredients
- 1 cup warm milk
- 2 tbsp sugar
- 2 1/4 tsp active dry yeast
- 2 large eggs
- 3 tbsp soft butter
- 1/2 cup sour cream
- 1 tsp garlic powder
- 3 cups all-purpose flour
- 2 cups cooked shredded chicken
- 2 cups shredded mozzarella cheese
- 4 oz cream cheese, softened
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1 egg wash (1 egg beaten with 1 tbsp water)
- 2 tbsp melted butter for brushing
Instructions
- In the bowl of a stand mixer, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for 5 to 10 minutes until frothy. Add the eggs, soft butter, sour cream, garlic powder, and 2 cups of the flour. Mix on low speed until combined, then add the remaining 1 cup flour. Knead on medium speed for 8 minutes until the dough is smooth and supple.
- In a medium bowl, combine the shredded chicken, cream cheese, smoked paprika, salt, and 1 cup of the mozzarella. Mix until the cream cheese is evenly distributed and the filling is creamy. Set aside.
- Punch down the proofed dough and turn it out onto a lightly floured surface. Divide the dough into 12 equal pieces. Roll each piece into a ball, then flatten into a disk about 4 inches across. Place a heaping tablespoon of the chicken filling in the center and top with a small handful of the remaining mozzarella. Pull the edges up and pinch tightly to seal. Place the rolls seam-side down in a greased 9x13-inch baking dish or on a parchment-lined baking sheet, leaving a little space between them.
- Cover the shaped rolls loosely with plastic wrap or a clean kitchen towel. Let them proof in a warm place for 30 minutes, or until they have puffed up and look airy.
- Preheat the oven to 350°F (175°C). Gently brush the tops of the proofed rolls with the egg wash, being careful not to deflate them.
- Place the rolls in the preheated oven and bake for 28 minutes, or until the tops are deep golden brown and the filling is bubbling. The internal temperature of the rolls should reach 165°F (74°C) to ensure the filling is hot and safe to eat.
- Remove the rolls from the oven and immediately brush the hot rolls with the melted butter. Let them cool in the pan for 5 minutes, then pull apart and serve warm.
