Before you start

Before beginning the cooking process, organize all ingredients and tools on the counter. Slice the chicken breasts and bell peppers into uniform, thin strips to ensure even cooking.

Measure out the fajita seasoning, cooked rice, and shredded Mexican cheese blend. Preheat the oven to 375°F (190°C) and have a 9x13-inch glass baking dish ready.

Ingredients at a glance (5)
  • 1 1/2 lb boneless skinless chicken breasts, sliced into thin strips
  • 2 tbsp fajita seasoning
  • 3 bell peppers (red, green, yellow), sliced into thin strips
  • 3 cups cooked white rice
  • 2 cups shredded Mexican cheese blend

Instructions

Searing the Chicken and Peppers

  1. Sauté the Seasoned Chicken
Toss the chicken strips with the fajita seasoning until evenly coated. Add the chicken to a hot non-stick skillet and sauté for 5 to 7 minutes, stirring occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside.
Look for The chicken strips should be browned on all sides and no longer pink in the center.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid overcrowding the skillet so the chicken sears beautifully rather than steaming.
  2. Cook the Bell Peppers
In the same skillet over medium-high heat, add the sliced bell peppers. Sauté for 5 to 6 minutes, stirring frequently, until the peppers are tender-crisp and slightly caramelized at the edges. Remove the skillet from the heat.
Look for The peppers should have charred edges and look vibrant.
Tip Keep the heat high to get that classic, smoky fajita char on the peppers.

The chicken strips should be beautifully browned on the outside, and the bell peppers should be tender-crisp with slightly charred edges. The kitchen will fill with a rich, smoky aroma of spices. Check that no excess liquid remains in the skillet before proceeding.

Assembling the Casserole Base

  1. Assemble the Casserole Base
In a 9x13-inch glass baking dish, combine the cooked white rice, sautéed chicken, and bell peppers. Gently toss the ingredients together until evenly distributed throughout the dish, then spread into a flat, uniform layer.
Look for The chicken, peppers, and rice should be scattered evenly throughout the baking dish.
Tip Spread the mixture flat to ensure the cheese toppings melt in an even blanket.

The rice, sautéed chicken, and bell peppers should be thoroughly combined in the baking dish. The mixture should look moist and evenly distributed, with no dry pockets of rice remaining. The base is now ready to receive its generous layer of shredded cheese.

Baking and Melting

  1. Top with Cheese and Bake
Sprinkle the shredded Mexican cheese blend evenly over the top of the chicken, peppers, and rice mixture. Place the baking dish in the preheated oven and bake at 375°F (190°C) for 15 to 20 minutes, until the cheese is melted, bubbling, and lightly golden-brown. Remove from the oven and let rest for 5 minutes before serving.
Look for The cheese should be completely melted, bubbling at the edges, and showing golden spots.
Tip Letting the casserole rest for five minutes makes it much easier to slice and serve.

The casserole is fully baked when the cheese on top is completely melted, bubbling vigorously around the edges, and showing beautiful golden-brown spots.

The center should be piping hot, and a spectacular cheese pull should be visible when a portion is lifted with a spatula.

Common mistakes

One common mistake is using freshly cooked rice that is still hot and extremely wet, which can make the casserole soggy. It is best to use day-old, chilled rice or rice that has been cooled completely.

Another error is overcooking the chicken in the skillet; remember that the chicken will continue to cook in the oven, so sauté it just until it is cooked through to prevent it from becoming tough and dry.

How to tell it’s done

To determine doneness, insert an instant-read food thermometer into the center of the casserole to ensure the chicken has reached a safe internal temperature of 165°F (74°C).

Visually, the cheese on top must be entirely melted, bubbling, and lightly browned. Let the casserole stand for about five minutes after removing it from the oven to allow the juices to redistribute and the structure to set slightly before serving.

  • Poultry: 165°F (74°C) in the thickest part
