Tips for success

For the best cheese pull, use full-fat mozzarella and shred it yourself from a block. Pre-shredded cheeses often contain anti-caking agents that prevent them from melting as smoothly.

Also, make sure the Alfredo sauce is not too thin; simmering it until it coats a spoon ensures it won't make the bread soggy.

If the bread starts to brown too quickly in the oven, tent it loosely with foil. To get extra crispy edges, you can place the assembled bread directly on the oven rack for the last 5 minutes, but watch it carefully. For a more indulgent version, add a sprinkle of extra parmesan on top before baking.

Variations

  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes to the garlic butter and a dash of hot sauce to the Alfredo sauce. You can also use pepper jack cheese instead of mozzarella for extra heat.
  • Vegetarian Version: Omit the chicken and add sautéed mushrooms, spinach, or roasted red peppers. Increase the mozzarella to 1 1/2 cups to compensate for the missing protein.
  • BBQ Chicken Twist: Swap the Alfredo sauce for barbecue sauce and the smoked paprika for a BBQ rub. Use cheddar cheese instead of mozzarella and add sliced red onions.
  • Herb and Garlic Butter: Add 1 teaspoon of dried oregano and 1 teaspoon of dried basil to the garlic butter. You can also use a mix of fresh herbs like thyme and rosemary for a more aromatic flavor.

Store leftover garlic bread in an airtight container in the refrigerator for up to 3 days. To reheat, place it in a 350°F oven for 8-10 minutes, or until heated through and the cheese is bubbly again. Avoid microwaving, as it will make the bread soggy.

The garlic butter and Alfredo sauce can be made up to 2 days ahead and stored in the refrigerator. The chicken can also be cooked and sliced in advance. Assemble the bread just before baking.

If you need to prepare the entire dish ahead, assemble it, cover, and refrigerate for up to 24 hours, then bake as directed, adding a few extra minutes to the baking time.

Serving ideas

Serve this garlic bread as a hearty main dish with a crisp green salad or roasted vegetables to balance the richness.

It also makes a fantastic party appetizer—cut it into smaller squares and serve with toothpicks. For a game-day spread, pair it with marinara sauce for dipping, though it is delicious on its own.

For the best experience, serve it warm, straight from the oven, when the cheese is at its stretchiest.

Let it rest for a few minutes after baking to avoid burning mouths, but don't wait too long—the cheese will start to set. Garnish with extra chopped parsley or red pepper flakes for a pop of color and heat, if desired.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, the garlic butter and Alfredo sauce can be made up to 2 days ahead. The chicken can be cooked and sliced in advance. Assemble the bread and refrigerate for up to 24 hours before baking. Add 5-10 minutes to the baking time if baking from cold.
Why is the Alfredo sauce too thin?
The sauce may be too thin if it wasn't simmered long enough or if low-fat cream was used. Ensure you bring the cream to a gentle simmer and whisk in the parmesan until fully melted. Cook for a few extra minutes until it coats the back of a spoon. Using full-fat heavy cream is essential.
Can this be made gluten-free?
Use a gluten-free Italian bread or baguette, and ensure all other ingredients are certified gluten-free. Most cheeses and creams are naturally gluten-free, but check labels for additives. The rest of the recipe remains the same.
How to prevent the bread from becoming soggy?
Use a sturdy, crusty bread like Italian or sourdough. Avoid overloading with sauce—use just enough to coat the bread. Also, make sure the Alfredo sauce is thick enough so it doesn't soak in. Baking at 350°F helps crisp the bread without drying it out.
What is the best way to reheat leftovers?
Reheat in a 350°F oven for 10-12 minutes, or until heated through and the cheese is melted. Avoid microwaving, as it will make the bread chewy and soggy. If the bread is browning too much, cover with foil.

Cheesy chicken alfredo garlic bread with melted mozzarella pull, on a baking sheet

Ingredients

  • 1 lb chicken breast
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp clarified butter
  • 4 tbsp softened butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 1 loaf Italian bread
  • 1 cup shredded mozzarella cheese

Instructions

  1. Pound the chicken breast to an even thickness, about 1/2 inch. Season both sides with smoked paprika, garlic powder, onion powder, salt, and black pepper. Heat clarified butter in a large skillet over medium-high heat. Add the chicken and sear until golden brown and cooked through, about 5-7 minutes per side. Transfer to a cutting board and let rest for 5 minutes before slicing.
  2. In a small bowl, combine the softened butter, minced garlic, and chopped fresh parsley. Mix until well blended. Set aside at room temperature.
  3. In a saucepan over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy whipping cream and bring to a simmer. Whisk in the grated parmesan cheese and continue whisking until the sauce thickens slightly, about 3-4 minutes. Remove from heat.
  4. Preheat the oven to 350°F (175°C). Slice the Italian loaf in half horizontally. Spread the garlic butter evenly over both cut sides. Spoon the Alfredo sauce over the bottom half, spreading it to cover. Arrange the sliced chicken over the sauce, then sprinkle the shredded mozzarella evenly on top. Place the top half of the bread over the filling.
  5. Place the assembled bread on a baking sheet. Bake in the preheated oven for 20 minutes, until the cheese is melted and bubbly and the bread is golden brown. If the top browns too quickly, cover loosely with foil.
  6. Remove the bread from the oven and let it cool for 2-3 minutes. Use a sharp knife to slice into portions, then pull apart to reveal the cheese pull. Serve warm.
