Before you start

Before starting, remove the butter for the garlic butter from the refrigerator so it can soften. Pound the chicken breast to an even thickness for quick, even cooking. Mince the garlic and chop the parsley.

Grate the parmesan cheese and shred the mozzarella if not purchased pre-shredded. Have all ingredients measured and ready. Preheat the oven when you begin assembling the bread. Line a baking sheet with parchment paper or foil for easy cleanup.

Ingredients at a glance (16)
  • 1 lb chicken breast
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp clarified butter
  • 4 tbsp softened butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 1 loaf Italian bread
  • 1 cup shredded mozzarella cheese

Instructions

Phase 1: Sear and Season

  1. Prepare the Chicken
Pound the chicken breast to an even thickness, about 1/2 inch. Season both sides with smoked paprika, garlic powder, onion powder, salt, and black pepper. Heat clarified butter in a large skillet over medium-high heat. Add the chicken and sear until golden brown and cooked through, about 5-7 minutes per side. Transfer to a cutting board and let rest for 5 minutes before slicing.
Look for Chicken is golden brown on both sides and reaches 165°F (74°C) in the thickest part.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Pounding the chicken ensures even cooking and juicy results.
  2. Make Garlic Butter
In a small bowl, combine the softened butter, minced garlic, and chopped fresh parsley. Mix until well blended. Set aside at room temperature.
Look for The butter is smooth and fragrant with garlic and parsley.
Tip Use room-temperature butter for easy mixing.

At the end of this phase, the chicken is golden brown on both sides and cooked through to 165°F (74°C). The garlic butter is a fragrant, spreadable mixture with visible flecks of parsley and garlic.

The kitchen smells of sautéed garlic and spices. The chicken should rest on a cutting board while you prepare the sauce, and the garlic butter should be set aside at room temperature.

Phase 2: Sauce and Assemble

  1. Prepare Alfredo Sauce
In a saucepan over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy whipping cream and bring to a simmer. Whisk in the grated parmesan cheese and continue whisking until the sauce thickens slightly, about 3-4 minutes. Remove from heat.
Look for The sauce is smooth, creamy, and coats the back of a spoon.
Tip Whisk constantly to prevent the sauce from sticking or curdling.
  2. Assemble the Bread
Preheat the oven to 350°F (175°C). Slice the Italian loaf in half horizontally. Spread the garlic butter evenly over both cut sides. Spoon the Alfredo sauce over the bottom half, spreading it to cover. Arrange the sliced chicken over the sauce, then sprinkle the shredded mozzarella evenly on top. Place the top half of the bread over the filling.
Look for The bread is generously layered with sauce, chicken, and cheese.
Tip If the bread is very crusty, you can toast it lightly before assembling.

The Alfredo sauce is smooth, thick enough to coat the back of a spoon, and has a pale golden color. The bread is split and slathered with garlic butter, then topped with a generous layer of sauce, sliced chicken, and a blanket of mozzarella. The assembled loaf looks abundant and inviting, with cheese mounded over the chicken. The oven is preheated and ready.

Phase 3: Bake and Serve

  1. Bake the Garlic Bread
Place the assembled bread on a baking sheet. Bake in the preheated oven for 20 minutes, until the cheese is melted and bubbly and the bread is golden brown. If the top browns too quickly, cover loosely with foil.
Look for The cheese is bubbling and the bread is golden and crisp around the edges.
Tip Baking on a sheet pan catches any drips and makes cleanup easy.
  2. Slice and Serve
Remove the bread from the oven and let it cool for 2-3 minutes. Use a sharp knife to slice into portions, then pull apart to reveal the cheese pull. Serve warm.
Look for The cheese stretches as you pull the slices apart.
Tip Letting it rest briefly makes slicing cleaner without losing the cheese pull.

After baking, the bread is golden brown, the cheese is bubbling and lightly browned in spots, and the edges of the bread are crisp. The aroma is intensely garlicky, buttery, and cheesy. When you pull a slice apart, the mozzarella stretches in long, gooey strands. Let it cool for a few minutes before serving to let the cheese set enough to handle.

Common mistakes

Avoid using low-fat cream or milk in the Alfredo sauce, as it will not thicken properly and can curdle. Do not overbake the bread, or the cheese may become rubbery and the bread too hard. Be careful not to overseason the chicken, as the parmesan and butter also add salt.

When searing the chicken, do not overcrowd the pan; cook in batches if necessary to get a good sear. Finally, let the assembled bread rest briefly before cutting to prevent the filling from sliding out.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. The garlic bread is done when the cheese is fully melted and bubbly, and the bread is golden brown and crisp on the edges.

If you insert a knife into the center, the cheese should be gooey and the bread should feel firm. Let it rest for a few minutes before slicing to allow the cheese to set slightly, making it easier to cut cleanly.
