Tips for success
For the crispiest crust, bake the stuffed loaf directly on the oven rack rather than on a baking sheet. If you prefer a softer crust, wrap the loaf loosely in foil for the last few minutes of baking.
Always let the bread rest briefly before slicing so the cheese sets just enough to hold its shape without losing its stretch.
To make slicing easier and cleaner, use a serrated knife and saw gently through the crust. If the cheese sticks to the knife, wipe it clean between cuts.
For a more dramatic presentation, serve the whole loaf on a wooden board and let guests pull it apart with their hands.
Variations
- Spicy Sausage Version: Replace the chicken with 1 pound of cooked, crumbled spicy Italian sausage. Brown the sausage in the skillet, then proceed with the same seasonings and assembly. The sausage adds a rich, savory flavor and extra heat.
- Veggie Loaded: Add sautéed bell peppers, onions, and mushrooms to the chicken mixture for extra color and texture. Cook the vegetables alongside the chicken until softened, then stuff the loaf as usual. This variation stretches the filling and adds a sweet, smoky note.
- Buffalo Chicken: Toss the cooked chicken with 1/4 cup of hot sauce before stuffing. Use blue cheese crumbles in place of some of the mozzarella for a tangy, spicy kick. Serve with extra hot sauce on the side.
- Herb and Garlic: For a milder flavor, reduce the Cajun seasoning to 1 teaspoon and add 1 teaspoon of dried Italian herbs to the garlic butter. Use shredded provolone or fontina cheese for a nutty, melty finish.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or under the broiler to crisp the crust.
- Freezer
- The assembled but unbaked loaf can be frozen for up to 2 months. Wrap tightly in plastic wrap and foil.
- Reheat
- Reheat slices in a toaster oven at 350°F (175°C) for 5 to 7 minutes, or until hot and crispy. Avoid microwaving, which makes the bread soggy.
Store any leftover stuffed garlic bread in an airtight container in the refrigerator for up to 3 days.
To keep the crust from becoming soggy, place a paper towel in the container to absorb excess moisture. Reheat in a toaster oven or under the broiler to restore crispness.
The chicken can be cooked and seasoned up to 2 days ahead and stored in the refrigerator. The garlic butter can also be made in advance and refrigerated. When ready to serve, assemble the loaf and bake as directed, adding a few extra minutes if the filling is cold.
Serving ideas
Serve this stuffed garlic bread hot, straight from the oven, when the cheese is at its most stretchy.
Slice into thick diagonal rounds and arrange on a platter with a side of marinara or ranch dressing for dipping, if desired. It works wonderfully as a party appetizer or alongside a bowl of soup or salad.
For a main course, serve each person one or two slices with a crisp green salad. The bread is substantial and satisfying on its own, but pairs well with roasted vegetables or a simple tomato soup. Garnish with extra chopped parsley for a fresh pop of color.

Cheesy Cajun Chicken Stuffed Garlic Bread

Ingredients
- 1 lb boneless skinless chicken breast, diced
- 4 tbsp unsalted butter, divided
- 2 tsp Cajun seasoning
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1 French baguette (about 24 inches long)
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 2 cups shredded mozzarella cheese
Instructions
- Heat 2 tablespoons of the butter in a large skillet over medium-high heat. Add the diced chicken breast in a single layer. Sprinkle with Cajun seasoning, smoked paprika, garlic powder, onion powder, and salt. Cook, stirring occasionally, until the chicken is deeply caramelized and cooked through, about 5 to 7 minutes. The chicken should reach 165°F (74°C) in the thickest pieces. Remove from heat and set aside.
- In a small bowl, melt the remaining 2 tablespoons of butter. Stir in the minced garlic and chopped parsley until well combined. This garlic butter will be brushed onto the cut sides of the baguette before stuffing.
- Preheat the oven to 400°F (200°C). Slice the French baguette lengthwise, creating two long halves. Place both halves cut-side up on a baking sheet. Brush the cut sides generously with the garlic butter, making sure to cover all the exposed bread.
- Spoon the cooked Cajun chicken evenly over the bottom half of the baguette. Sprinkle the shredded mozzarella cheese generously over the chicken, covering it completely. Place the top half of the baguette over the filling, pressing gently to close the sandwich.
- Bake the stuffed baguette in the preheated oven for 12 minutes, until the cheese is bubbling vigorously and the crust is golden and shatteringly crisp. If the top browns too quickly, tent loosely with aluminum foil. Remove from the oven and let it rest for 2 minutes before slicing.
- Using a sharp knife, slice the stuffed bread into thick diagonal rounds. Pull the slices apart to reveal the long cheese stretch. Serve hot, with the cheese pull as the star.
