Tips for success
To achieve a perfectly smooth and velvety alfredo sauce, add the cheese gradually over low heat, stirring constantly. High heat can cause the proteins in the dairy to clump, resulting in a broken, oily sauce rather than a cohesive emulsion.
If the sauce begins to separate, remove the pan from the heat immediately and whisk in a tablespoon of warm pasta water to help bind the ingredients back together.
Letting the seared chicken rest for a few minutes before slicing is crucial for maintaining its juiciness. Slicing too early allows the flavorful juices to escape onto the cutting board, leaving the meat dry.
Use a very sharp chef's knife to cut the chicken into clean slices, ensuring the delicate cheese crust remains intact on each piece for a beautiful presentation.
Variations
- Spicy Shrimp Cajun Alfredo: Swap the chicken breasts for large peeled and deveined shrimp. Sear them in the skillet for 2 to 3 minutes per side until pink and cooked through, then proceed with the sauce.
- Vegetarian Cajun Alfredo: Omit the chicken entirely and toss sauteed bell peppers, onions, and sliced mushrooms into the rich cream sauce before combining with the hot linguine.
Storage and make-ahead
- Fridge
- Store leftovers in airtight containers in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the cream-based alfredo sauce will separate and become grainy upon thawing.
- Reheat
- Reheat the pasta gently on the stovetop over low heat, adding a splash of milk or cream to restore the velvety texture of the sauce.
Store any leftover pasta and chicken in separate airtight containers in the refrigerator for up to three days. Keeping them separate prevents the chicken from becoming soggy and allows you to reheat each component using the most appropriate method.
While pasta is best enjoyed fresh, you can prep the chicken up to a day in advance. Season the cutlets with the Cajun spices and press the cheese crust onto them, then store them covered in the refrigerator. When ready to serve, simply boil the pasta, sear the chicken, and whip up the quick cream sauce.
Serving ideas
Serve this decadent dish in shallow, warmed bowls to keep the creamy pasta hot during the meal.
Twirl a generous portion of the velvety Cajun linguine into the center of each bowl, ensuring it is well-coated with the rich sauce. Arrange the sliced cheese-crusted chicken beautifully alongside or on top of the pasta.
Garnish the completed dish with a generous sprinkle of finely chopped fresh parsley to provide a vibrant pop of color and a clean, refreshing contrast to the rich cream.
Dust with red pepper flakes for an extra kick of heat, and serve immediately with a side of crusty garlic bread or a crisp green salad.

Cheesy Cajun Alfredo Chicken with Crispy Parmesan Crust

Ingredients
- 12 oz linguine pasta
- 1 1/2 lb boneless skinless chicken breasts, sliced into cutlets
- 2 tbsp Cajun seasoning, divided
- 1 cup grated Parmesan cheese, divided
- 1 1/2 cups heavy cream
- 1/2 cup shredded mozzarella cheese
- 2 tbsp finely chopped fresh parsley, for serving
- 1/2 tsp red pepper flakes, for serving
Instructions
- Cook the linguine in a large pot of boiling salted water according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.
- Pat the chicken breasts dry with paper towels. Season both sides of the chicken cutlets evenly with 1 tablespoon of Cajun seasoning, then press 1/2 cup of the Parmesan cheese firmly onto the chicken to form an even coating.
- Heat a large skillet over medium heat. Add the chicken breasts and cook for 6 to 8 minutes per side, turning once, until the crust is golden-brown and the internal temperature reaches 165°F (74°C). Remove the chicken from the pan and let it rest for 5 minutes before slicing.
- Pour the heavy cream, the remaining Cajun seasoning, the remaining Parmesan cheese, and the mozzarella cheese into the same skillet over medium heat. Simmer gently for 3 to 4 minutes, stirring constantly, until the cheeses melt and the sauce is velvety and smooth.
- Add the drained linguine to the skillet and toss to coat thoroughly in the spiced cream sauce, adding reserved pasta water if needed. Serve the pasta in bowls with the sliced chicken, sprinkled with fresh parsley and red pepper flakes.
