Tips for success

For the best cheese pull, use a good-quality mozzarella that melts well. Fresh mozzarella has a high moisture content and can make the bread soggy, so opt for low-moisture shredded mozzarella.

If you want to add extra flavor, mix in some provolone or fontina. To keep the bread from getting too dark, you can loosely tent it with foil during the last few minutes of baking.

When hollowing the baguette, use a serrated knife and cut at a slight angle to create a V-shaped trench. This gives you more surface area for the filling and helps the bread hold together.

If you have leftover filling, serve it as a dip with the bread, or refrigerate it and use it as a topping for rice or naan. The stuffed bread is best enjoyed fresh, but you can reheat leftovers in a 350°F (175°C) oven for 10 minutes.

Variations

  • Spicy Version: Add 1–2 finely chopped green chilies or a teaspoon of red pepper flakes to the sauce for extra heat. Use pepper jack cheese instead of mozzarella for an additional kick.
  • Vegetarian Option: Replace the chicken with paneer cubes or firm tofu, searing them until golden. Use the same sauce and proceed with the recipe. For a vegan version, use plant-based butter, cream, and cheese.
  • Cheese Lover's: Mix the mozzarella with 1/2 cup of shredded cheddar or gouda for a richer, more complex cheese flavor. Sprinkle extra cheese on top before baking for an extra bubbly crust.
  • Herbed Bread: Brush the baguette with garlic butter mixed with fresh herbs like parsley, cilantro, or thyme before stuffing. This adds a fresh, aromatic note that complements the spices.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispness.
Freezer
Freeze the fully baked stuffed bread for up to 2 months. Wrap tightly in foil and place in a freezer bag. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat slices in a 350°F (175°C) oven for 10–15 minutes, or until hot and the cheese is melted. Avoid microwaving.

Store leftover stuffed garlic bread in an airtight container in the refrigerator for up to 3 days. The bread may soften, but it will still taste delicious.

To reheat, place slices on a baking sheet and warm in a 350°F (175°C) oven for 10–15 minutes, until heated through and the cheese is bubbly again. Avoid microwaving, as it can make the bread rubbery.

The butter chicken filling can be prepared up to 2 days in advance and stored in the refrigerator. When ready to assemble, bring the filling to room temperature before stuffing the bread.

You can also assemble the entire stuffed baguette and refrigerate it unbaked for up to 24 hours; add a few extra minutes to the baking time since the filling starts cold.

Serving ideas

Serve this stuffed garlic bread as a centerpiece appetizer at parties, game days, or holiday gatherings. It's best enjoyed hot, straight from the oven, when the cheese is at its stretchiest. Cut into thick slices and serve on a platter, allowing guests to pull apart the pieces themselves. The dramatic cheese pull is part of the fun.

Pair it with a fresh green salad or a cooling cucumber raita to balance the richness. It also works well alongside other Indian-inspired dishes like tandoori chicken or samosas. For a more casual meal, serve it as a main course with a side of soup or roasted vegetables. Any leftover filling can be served as a dip with naan or chips.

Frequently asked questions

Can this stuffed garlic bread be made ahead of time?
Yes, the butter chicken filling can be prepared up to 2 days in advance and refrigerated. The stuffed bread can also be assembled a day ahead and stored in the refrigerator, then baked just before serving. If baking from cold, add a few extra minutes to the baking time.
Why does the cheese not melt properly?
If the cheese doesn't melt, it may be because the oven temperature is too low, or the bread is too dense and insulating the filling. Ensure the oven is fully preheated to 400°F (200°C). Also, use low-moisture shredded mozzarella, which melts more reliably than fresh mozzarella.
Can this recipe be made gluten-free?
Yes, use a gluten-free baguette or gluten-free bread loaf. Ensure all other ingredients, such as the spices and tomato puree, are certified gluten-free. The rest of the recipe remains the same.
What is the best way to reheat leftovers?
Reheat slices in a 350°F (175°C) oven for 10–15 minutes, until hot and the cheese is melted. This helps restore some crispness to the bread. Microwaving is not recommended as it can make the bread rubbery.
Can the filling be used for other dishes?
Absolutely. The butter chicken filling is versatile and can be served over rice, with naan, or as a topping for baked potatoes. It also makes a great filling for quesadillas or wraps.

Golden garlic baguette stuffed with butter chicken and melted mozzarella, with cheese pull

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-size pieces
  • 4 tbsp unsalted butter, divided
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp chili powder
  • 1 tbsp garlic ginger paste
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 1 tbsp dried fenugreek leaves (kasuri methi)
  • 1 garlic baguette (about 12 inches long)
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken pieces and season with garam masala, ground cumin, ground coriander, turmeric, and chili powder. Cook, stirring occasionally, until the chicken is golden and cooked through, about 6–8 minutes. The chicken is done when it reaches 165°F (74°C) on an instant-read thermometer.
  2. Reduce the heat to medium and add the garlic ginger paste. Cook for 1 minute until fragrant, stirring constantly to avoid burning.
  3. Pour in the tomato puree and heavy cream. Stir in the remaining 2 tablespoons of butter and the dried fenugreek leaves. Bring to a simmer and cook for 5–7 minutes, stirring occasionally, until the sauce thickens to a rich, orange gravy.
  4. Preheat the oven to 400°F (200°C). Line a baking sheet with aluminum foil.
  5. Using a serrated knife, cut a deep V-shaped trench along the top of the garlic baguette, leaving the sides intact. Remove some of the soft bread from the trench to create a cavity for the filling.
  6. Spoon the butter chicken mixture into the trench, packing it down gently. Top with the shredded mozzarella, mounding it slightly.
  7. Place the stuffed baguette on the prepared baking sheet. Bake for 12–15 minutes, until the cheese is melted, bubbly, and lightly golden in spots.
  8. Remove from the oven and let rest for 5 minutes. Using a serrated knife, slice into thick pieces, ensuring each slice has a good amount of filling.
  9. Serve immediately while the cheese is hot and stretchy. Enjoy the dramatic cheese pull.
