Tips for success
For the best cheese pull, use a combination of mozzarella and cheddar. Mozzarella provides that long, stretchy texture, while cheddar contributes sharpness and a deeper color.
Shred the cheese from a block rather than using pre-shredded bags, which often contain starch that inhibits melting. Let the pie rest for exactly 5 minutes after baking—this allows the cheese to set slightly without becoming stiff, so the slices hold together while still oozing.
If the top is browning too quickly but the center isn't hot yet, cover the dish loosely with aluminum foil and continue baking. To make slicing easier, use a serrated knife and cut with a gentle sawing motion.
Serve the pie with a side of sour cream, salsa, or guacamole if desired, though the video does not include these. For a spicier version, add a minced jalapeño to the beef mixture or use pepper jack cheese.
Variations
- Chicken Tortilla Pie: Replace the ground beef with 1 lb of cooked, shredded chicken. Sauté the vegetables and spices as directed, then mix in the chicken and tomato paste. Proceed with the layering and baking as written. Ensure the chicken reaches 165°F (74°C) if using raw.
- Vegetarian Black Bean Pie: Omit the meat and add 1 can (15 oz) of drained black beans to the sautéed vegetables. Season with the same spices and tomato paste. The filling will be hearty and satisfying without the meat.
- Spicy Chorizo Pie: Use 1 lb of fresh chorizo in place of ground beef. Brown the chorizo, breaking it up, and skip the added salt, as chorizo is already seasoned. Add the vegetables and spices as directed, but reduce the cumin to 1/2 tsp to balance the flavors.
- Breakfast Tortilla Pie: For a breakfast twist, scramble 6 eggs and layer them with the beef mixture. Add cooked breakfast sausage or bacon instead of ground beef. Bake as directed, but ensure eggs are fully set and reach 160°F (71°C).
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until hot.
- Freezer
- Wrap the cooled pie tightly in plastic wrap and foil, then freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat slices in a 350°F (175°C) oven for 10–15 minutes, or until hot and the cheese is melted. Microwaving works but may soften the tortillas.
Store leftover pie in an airtight container in the refrigerator for up to 3 days. To reheat, place slices in a 350°F (175°C) oven for 10–15 minutes, or until heated through. The microwave works too, but the tortillas may become softer. Let the pie cool for no more than 2 hours before refrigerating.
The beef filling can be prepared up to 2 days in advance and stored in the refrigerator. Assemble the pie completely, cover tightly with plastic wrap, and refrigerate for up to 24 hours before baking.
When ready to bake, add an extra 5–10 minutes to the baking time to ensure the center is hot. The garlic butter can also be made ahead and kept in the refrigerator for up to a week.
Serving ideas
Serve this casserole pie as a main dish with a simple green salad or a side of Mexican rice. It's also great for brunch or a casual dinner. Cut into wedges and serve warm, with the cheese stretching as you lift each slice. If desired, top with fresh cilantro or a dollop of sour cream, but these are optional.
For a complete meal, pair the pie with a bowl of black beans or a corn salad. It's also delicious with a drizzle of hot sauce or a squeeze of lime juice.
The pie is filling enough to serve on its own, making it a versatile option for weeknight dinners or potlucks. Adjust the seasonings to your preference, and enjoy the cheesy, beefy goodness.

Cheesy Beef Tortilla Casserole Pie with Garlic Butter Crust

Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 flour tortillas (8-inch)
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3 tbsp melted garlic parsley butter
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 5–7 minutes. Add the diced onion, bell pepper, and minced garlic; cook until the vegetables are softened, about 3 minutes. Stir in the tomato paste, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant and the tomato paste darkens slightly. Remove from heat.
- Preheat the oven to 380°F (193°C).
- Lightly grease a 9-inch pie dish or round baking dish. Place one tortilla in the bottom, then top with a layer of the beef mixture and a sprinkle of mozzarella and cheddar. Repeat the layers, using the remaining tortillas, beef, and cheeses, finishing with a tortilla on top.
- Brush the top tortilla with the melted garlic parsley butter. Sprinkle the remaining mozzarella and cheddar evenly over the top.
- Place the pie in the preheated oven and bake for 20 minutes, until the cheese is melted, bubbly, and golden brown. The edges of the tortillas may crisp up.
- Remove the pie from the oven and let it rest for 5 minutes before slicing. Use a sharp knife to cut into wedges, and serve warm, with extra cheese stretching as you lift each slice.
