Before you start

Before beginning, ensure all ingredients are measured and ready. Preheat the oven to 375°F (190°C) to ensure it is at the correct temperature when the shells are ready for the oven.

Prepare a large pot of water for the pasta and have a colander nearby for draining. Keep a clean surface available for stuffing the shells, and ensure the cast-iron skillet is clean and lightly oiled if needed.

Ingredients at a glance (4)
  • 12 oz jumbo pasta shells
  • 1 lb ground beef
  • 24 oz marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

Pasta and meat preparation

  1. Prepare the pasta and meat
Boil the jumbo pasta shells in a large pot of salted water until al dente. While the pasta cooks, brown the ground beef in a skillet over medium-high heat until fully cooked. Ensure the beef reaches an internal temperature of 160°F (71°C). Drain the excess fat thoroughly from the meat before proceeding to the next step.
Look for The beef should be browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Do not overcook the pasta as it will soften further while baking in the sauce.

At this stage, the pasta should be tender but still hold its shape, and the ground beef should be fully browned and fragrant. Ensure the beef is drained well and the pasta is rinsed briefly to stop the cooking process, making them easier to handle when stuffing.

Assembly and filling

  1. Assemble the stuffed shells
Combine the cooked ground beef with a portion of the marinara sauce in a bowl. Stuff each cooked shell generously with the beef mixture. Arrange the filled shells carefully inside the cast-iron skillet, ensuring they are packed closely together for even heating.
Look for The shells are full and arranged tightly in the skillet.
Tip Use a teaspoon to fill the shells to avoid tearing the delicate pasta.

The shells should be carefully stuffed with the beef and sauce mixture. Ensure each shell is filled evenly and placed in the skillet so that they are supported by each other.

The arrangement should look neat and uniform across the surface of the skillet before adding the final sauce and cheese.

Baking to perfection

  1. Bake with cheese
Pour the remaining marinara sauce over the shells and top with the shredded mozzarella cheese. Place the cast-iron skillet into a preheated 375°F (190°C) oven. Bake until the sauce is bubbling and the cheese is melted and golden brown on top. Let the dish rest for 5 minutes before serving.
Look for The cheese is melted, bubbly, and slightly browned.
Tip Keep an eye on the oven to prevent the cheese from burning.

The final phase is complete when the cheese is melted and bubbling uniformly across the top. The sauce should be visible at the edges, and the entire dish should appear hot and cohesive. Allow the skillet to rest briefly so the sauce can thicken slightly, making it easier to serve.

Common mistakes

A common mistake is overcooking the pasta shells before stuffing them, which causes them to fall apart during assembly. Another error is neglecting to drain the excess fat from the beef, which can result in an oily sauce.

Ensure the shells are packed tightly enough that they do not shift, but not so tightly that they crush each other during baking.

How to tell it’s done

The dish is done when the marinara sauce is actively bubbling around the edges of the skillet and the mozzarella cheese on top has melted completely into a golden, stretchy layer.

The internal temperature of the beef mixture should have reached at least 160°F (71°C) during the initial browning phase to ensure food safety.

  • Ground meat: 160°F (71°C) in the thickest part
