Tips for success
For the best texture, use peppers that are all roughly the same size so they pickle evenly. If some peppers are larger, give them a longer soak in the cold water to ensure they become tender.
When coring, try to keep the pepper halves intact—this makes them easier to fill and gives a nicer presentation. You can also leave the stems on one side to create a little handle, but the video shows them removed for a clean look.
The olive oil you use matters: a fruity, peppery extra-virgin olive oil will shine here, so choose one you love. If you want to add extra flavor, you can infuse the oil with a few peppercorns or dried herbs, but the recipe as written is already delicious.
When serving, let the jar come to room temperature for about 20 minutes so the oil becomes fluid and the flavors open up. The leftover oil is fantastic for dipping bread or drizzling over salads.
Variations
- Milder Version: To reduce heat, remove all seeds and membranes thoroughly, and soak the peppers in cold water for 2 hours instead of 1. You can also choose a milder pepper variety like banana peppers or mild jalapeños.
- Herb-Infused Filling: Add 2 tablespoons of chopped fresh cilantro, parsley, or dill to the cheese filling for a fresh, herbal note. This works especially well if you’re serving the peppers alongside Mexican or Mediterranean dishes.
- Spicy Cheese Filling: For extra heat, add a finely minced fresh chili or a pinch of cayenne pepper to the cheese mixture. You can also stir in a few drops of hot sauce to amp up the spice level.
- Smoked Cheese Filling: Substitute half of the feta with smoked mozzarella or smoked gouda, finely grated, to add a smoky depth that pairs beautifully with the pickled peppers. Adjust the salt accordingly, as smoked cheeses can be salty.
Storage and make-ahead
- Fridge
- Refrigerate in a sealed jar, submerged in olive oil, for up to 2 weeks. Use a clean utensil each time to prevent contamination.
- Freezer
- Freezing is not recommended, as the peppers will lose their crisp texture and the cheese filling may become watery upon thawing.
- Reheat
- No reheating needed; serve chilled or at room temperature. If the oil has solidified, let the jar sit at room temperature for 10-15 minutes to liquefy.
Store the stuffed peppers in the refrigerator in a sealed jar, making sure they remain submerged in olive oil. They will keep for up to 2 weeks, though the peppers may soften slightly over time. Always use a clean spoon to remove peppers from the jar to avoid introducing bacteria. The oil may solidify when chilled; simply let the jar sit at room temperature for a few minutes to liquefy before serving.
This recipe is ideal for making ahead. The peppers can be pickled up to a week in advance and stored in the brine in the refrigerator. The cheese filling can also be prepared a day ahead and kept in an airtight container in the fridge. For the best texture, stuff the peppers and submerge them in oil no more than 2 days before serving, as the peppers will continue to soften and the flavors will meld beautifully.
Serving ideas
Serve the cheese-stuffed pickled jalapeños as part of an antipasto platter, alongside cured meats, olives, and crusty bread. They also make a fantastic topping for tacos, burgers, or salads, adding a punch of tangy heat and creamy richness.
For a simple presentation, arrange the peppers on a platter with a drizzle of the olive oil and a sprinkle of flaky sea salt. They’re best enjoyed at room temperature, so take them out of the fridge about 20 minutes before serving.
These peppers are also a great addition to a brunch spread, offering a spicy counterpoint to eggs and pastries. If you’re feeling adventurous, chop them up and fold them into scrambled eggs or mix into a grain bowl.
The oil they’re stored in is a bonus—use it as a dipping oil for bread or to finish roasted vegetables. The possibilities are endless, and the peppers will keep in the fridge for up to two weeks, so you can enjoy them over multiple meals.

Cheese-Stuffed Pickled Jalapeños: Tangy, Creamy, Make-Ahead

Ingredients
- 1 lb fresh jalapeño peppers
- 1 tbsp kosher salt
- 1 cup white vinegar
- 2 cups water
- 3 cloves garlic, smashed
- 1/2 cup labneh
- 1/2 cup süzme yogurt
- 1/2 cup crumbled feta cheese
- 1 cup extra-virgin olive oil
Instructions
- Wearing gloves, cut the stems off the jalapeños and slice each pepper lengthwise. Use a small spoon or a coring tool to remove the seeds and membranes, creating a clean cavity for the filling. Place the cored peppers in a large bowl and cover with cold water. Soak for 1 hour to tame the heat and crisp the flesh.
- In a large pot, combine the white vinegar, water, kosher salt, and smashed garlic. Bring to a boil over high heat, stirring until the salt dissolves. Boil for 2 minutes, then remove from heat and let cool slightly while you prepare the jars.
- Drain the soaked jalapeños and pat them dry. Pack the peppers snugly into clean glass mason jars, layering with the smashed garlic from the brine. Pour the hot brine over the peppers, covering them completely. Seal the jars and let them cool to room temperature, then refrigerate for at least 24 hours to develop the pickled flavor.
- After the peppers have pickled, remove them from the jars and drain them well. Pat them dry with paper towels to remove excess brine, which helps the cheese filling adhere.
- In a mixing bowl, combine the labneh, süzme yogurt, and crumbled feta cheese. Using a spatula, whip the mixture until smooth and creamy, with no large lumps. The filling should be thick enough to pipe.
- Transfer the cheese mixture to a piping bag fitted with a plain tip, or use a zip-top bag with a corner snipped. Pipe the filling generously into each pickled jalapeño cavity, mounding it slightly above the opening. Arrange the filled peppers snugly in a clean glass jar or serving dish.
- Pour the extra-virgin olive oil over the stuffed peppers, covering them completely. Gently tap the jar to release any air bubbles. The oil preserves the peppers and adds richness.
- Cover the jar and refrigerate for at least 2 hours to let the flavors meld. Serve chilled or at room temperature, allowing the oil to come to room temperature for the best texture. The peppers are ready to eat.
