This is the burrito that breaks the internet for a reason: a crackling shell of melted cheddar and Monterey Jack wrapped around juicy seared ribeye, plump Cajun garlic shrimp, cilantro-lime rice and black beans. The cheese crust trick happens right on the griddle, and the whole monster comes together in under an hour with one skillet and one spatula.

Surf and turf usually means steakhouse prices and a long evening. Here the same pairing gets folded into a 12-inch flour tortilla and finished with the viral griddle move: a bed of shredded cheese melted directly on the pan, with the rolled burrito dragged across it so the molten cheese sets into a golden, lacy frico crust. Inside, the fillings stay classic Tex-Mex — smoky chipotle mayo, bright lime rice, creamy black beans and two proteins cooked fast in the same skillet.

The ribeye gets a hard, high-heat sear for that deep brown crust, and the shrimp go quick in garlicky Cajun butter so they stay snappy. The result eats like a feast and slices like a showpiece, with every cross-section showing off the layers. Nothing here is complicated; the only real technique is trusting the thermometer and rolling tight.

Ingredients

Makes 1 giant burrito · serves 1

Fillings

  • 4 oz ribeye steak, cut into strips
  • 6 jumbo shrimp, peeled and deveined
  • 2 tsp Cajun seasoning, divided
  • 1 tbsp unsalted butter
  • 2 tsp minced garlic
  • 1/2 cup cilantro-lime rice, cooked and warm (store-bought or made ahead)
  • 1/3 cup black beans, rinsed and drained
  • 1 large flour tortilla (12-inch), warmed
  • 2 tbsp chipotle mayo (store-bought or made ahead)

Cheese crust

  • 1 cup shredded cheddar and Monterey Jack blend
  • 1/2 lime, for squeezing
Contains: gluten, crustaceans, eggs, milk

Why this recipe works

The cheese crust works because of simple food science: cheddar and Monterey Jack are low-moisture cheeses, so when they melt on a hot griddle the milk solids and proteins brown and crisp instead of staying soft.

Spreading the cheese into a wide bed and rolling the burrito through it means the crust forms in one continuous layer, lacy at the edges and solid where it hugs the tortilla. Keeping the griddle at medium, around 375°F (190°C), gives the cheese time to melt fully before it browns, which is the difference between a golden shell and a bitter one.

The fillings are sequenced so nothing overcooks. The ribeye sears first in a screaming-hot, dry skillet, building a crust while the pan is clean, then rests while the shrimp cook in the same skillet with butter and garlic.

Cooking the shrimp second means they pick up the fond left by the steak, and pulling them at 145°F (63°C) the moment they curl keeps them plump. Layering the mayo under the rice and keeping all the fillings in a tight band means the burrito rolls into a firm cylinder that survives its trip across molten cheese without bursting.

Notes and substitutions

Choose a ribeye cut at least an inch thick so it can sear hard without racing past medium-rare; sirloin or flat iron are good stand-ins if that is what is on sale. Shrimp should be jumbo or large, peeled and deveined — buy them already cleaned to save ten minutes.

The cilantro-lime rice and chipotle mayo can be store-bought or made earlier in the day; both are warm-or-room-temperature components, so they slot in without extra cooking. Rinse canned black beans well so they do not muddy the rice with starchy liquid.

Equipment matters more than usual here. A flat griddle or a large nonstick skillet gives the cheese room to spread into the wide bed the crust needs; a small pan forces a cramped cheese rectangle and a lopsided roll. An instant-read thermometer takes the guesswork out of both proteins. Shred the cheese yourself from a block if possible — pre-shredded cheese is coated with anti-caking starch that can make the crust grainy — but a good blend bag will still work on a busy weeknight.

  • ribeye steak: Sirloin or flat iron steak works well; slice thin against the grain so every bite stays tender.
  • jumbo shrimp: Large shrimp are fine; reduce the cook time by about a minute so they stay plump and juicy.
  • chipotle mayo: Mix 2 tbsp mayonnaise with 1 tsp adobo sauce from canned chipotles and a pinch of chipotle chili powder.
  • cilantro-lime rice: Plain white or brown rice tossed with a squeeze of lime and a spoonful of chopped cilantro.

Equipment

  • Cast-iron skillet or flat griddle
  • Instant-read thermometer
  • Cutting board
  • Sharp knife
  • Wide spatula
