Tips for success
For the best flavor, use full-fat cream cheese and freshly shredded sharp cheddar. The cream cheese adds richness and helps thicken the sauce, while the cheddar provides a sharp, nutty note.
If you prefer a milder dish, use Monterey Jack or Colby. To add a smoky element, use fire-roasted tomatoes and a few drops of liquid smoke. You can also stir in a handful of fresh cilantro right before serving for a pop of color and freshness.
This recipe is endlessly adaptable. Serve it over rice, quinoa, or cauliflower rice; stuff it into tacos, burritos, or quesadillas; or use it as a topping for baked potatoes. It also makes a fantastic filling for enchiladas or a hearty addition to a salad.
Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months – just thaw overnight in the fridge and reheat gently on the stove or in the microwave.
Variations
- Spicy Kick: Add a finely chopped fresh jalapeño or a teaspoon of chipotle powder to the slow cooker along with the other ingredients. For extra heat, stir in a few dashes of your favorite hot sauce before serving.
- Creamy Verde: Swap the fire-roasted tomatoes with green chiles for a can of salsa verde. The tomatillo-based salsa adds a tangy, slightly sweet flavor that pairs beautifully with the cheese and chicken.
- Extra Cheesy: Use a blend of sharp cheddar and pepper jack for a spicier, cheesier sauce. You can also sprinkle an additional 1/2 cup of shredded cheese over the top during the last 30 minutes of cooking for a golden, bubbly crust.
- Tex-Mex Style: Add a teaspoon of ground cumin and a teaspoon of chili powder along with the tomatoes. Serve the fiesta chicken in warm tortillas with shredded lettuce, diced tomatoes, and a drizzle of sour cream.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or milk if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring frequently, or in the microwave in 30-second intervals until hot.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop over low heat or in the microwave, stirring occasionally, until heated through. If the sauce has thickened too much upon reheating, add a splash of chicken broth or milk to loosen it.
This recipe is perfect for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
You can also cook the chicken ahead, shred it, and store it in the sauce in the refrigerator for up to 4 days. Reheat on the stovetop or in the microwave when ready to serve.
Serving ideas
Serve this fiesta chicken over steamed white or cilantro-lime rice, with warm flour tortillas, or as a filling for taco shells. A sprinkle of fresh cilantro, diced avocado, or a dollop of sour cream adds a cool, creamy contrast.
For a low-carb option, serve it over a bed of crisp lettuce or cauliflower rice. The dish is hearty enough to stand alone, but it also pairs well with a simple side salad or black beans.
For a fun twist, use the fiesta chicken to make loaded nachos: spread tortilla chips on a baking sheet, top with the chicken, extra cheese, and pickled jalapeños, and broil until bubbly. Or, use it as a topping for baked sweet potatoes. The possibilities are endless, and the leftovers are just as delicious cold in a wrap or sandwich.
