Before you start

Before you begin cooking, ensure all your ingredients are prepped and ready to go. Peel and thinly slice the white onions, keeping the slices uniform so they cook evenly in the skillet. Take the sausages out of the refrigerator about fifteen minutes before cooking to take the chill off, which helps them cook more evenly.

Preheat your oven to 400°F (200°C) and prepare your baking dish. Having everything prepared beforehand ensures a smooth, stress-free cooking process as you move from stovetop caramelization to oven roasting.

Ingredients at a glance (2)
  • 3 large white onions, thinly sliced
  • 6 fresh sausages

Instructions

Onion Caramelization

  1. Slice the onions
Peel and slice the white onions into thin, even strips on a cutting board to ensure they cook at the same rate. Keep the slices uniform so they caramelize beautifully without burning.
Look for The onions are sliced into even, thin strips.
Tip Chilling the onions before slicing can help reduce eye irritation.
  2. Sizzle and sweeten the onions
Place the sliced onions in a large skillet over medium heat. Cook, stirring frequently, until the onions soften, release their natural juices, and turn a rich, glossy golden-brown color.
Look for The onions are soft, deep golden-brown, and sweet.
Tip If the onions start to scorch, turn down the heat and add a splash of water.

By the end of this phase, the onions should be soft, glossy, and a rich golden-brown color. They will have shrunk significantly in volume and smell sweet and savory. There should be no raw onion smell left, and the bottom of the skillet should have a beautiful fond developed from the caramelized sugars, ready to be scraped up and transferred to the baking dish.

Casserole Assembly

  1. Assemble the onion and sausage layer
Transfer the caramelized onions to a casserole dish, spreading them into a smooth, even layer. Arrange the whole raw sausages directly on top of the onions, spacing them evenly so they roast properly.
Look for The sausages are nestled neatly over a bed of golden onions.
Tip Pricking the sausage casings slightly can prevent them from bursting during cooking.

At this point, the caramelized onions are spread into an even layer in the baking dish, and the whole raw sausages are arranged on top. The sausages should be spaced slightly apart so the heat can circulate around them. The dish is now ready to go into the hot oven, with the raw sausages resting securely on their sweet onion bed.

Oven Roasting

  1. Bake until golden and cooked through
Place the baking dish in a preheated oven at 400°F (200°C). Roast until the sausages are nicely charred on top, the onions are bubbling, and the sausages reach a safe internal temperature of 160°F (71°C) when checked with a meat thermometer.
Look for The sausages are browned and charred, and the onions are bubbling.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Let the bake rest for five minutes before serving to let the juices redistribute.

By the end of this final phase, the sausages will be deeply browned and charred on top, with a plump, juicy appearance. The onions underneath will be bubbling, glossy, and dark golden-brown, having absorbed the savory juices from the roasting sausages.

When pierced with a fork, the sausages should release savory steam, and a meat thermometer inserted into the center must read 160°F (71°C).

Common mistakes

One common mistake is rushing the onion caramelization process by using heat that is too high. This burns the onions on the outside while leaving them raw and bitter on the inside. Caramelization requires patience and medium to low heat to draw out the natural sugars slowly.

Another mistake is crowding the sausages in the baking dish, which causes them to steam rather than roast, preventing them from developing that beautiful charred skin. Lastly, failing to use a meat thermometer can lead to either undercooked sausages or dry, overcooked meat that loses its juiciness.

How to tell it’s done

To determine perfect doneness, look for plump, firm sausages with a beautifully charred and browned exterior. The onions underneath should be bubbling vigorously and have a deep, glossy, jammy appearance. The absolute best and safest way to confirm doneness is by inserting an instant-read meat thermometer into the thickest part of the sausages.

Because sausages are made of ground meat, they must reach a safe internal temperature of 160°F (71°C) to be fully cooked. Once this temperature is reached, remove the dish from the oven immediately to prevent drying.

  • Ground meat: 160°F (71°C) in the thickest part
