Tips for success
For a cleaner slice, use a sharp knife dipped in hot water and wiped dry before each cut. This helps cut through the caramel without dragging it.
Chill the cake for at least 2 hours before serving to allow the flavors to meld and the caramel to set properly.
If the caramel seizes or becomes grainy, it can be rescued by adding a splash of water and reheating gently, stirring until smooth.
For a deeper caramel flavor, cook the sugar a bit longer until it is almost dark amber, but be careful not to burn it.
Variations
- Chocolate Trileçe: Add 1/4 cup cocoa powder to the sponge batter, sifting it with the flour. For the soak, use 1/2 cup chocolate milk in place of the whole milk. Top with chocolate shavings instead of the cream feather.
- Coconut Trileçe: Replace the whole milk with coconut milk and the heavy cream with coconut cream. Add 1/2 cup shredded coconut to the sponge batter. Toast extra coconut for sprinkling on top.
- Berry Trileçe: Layer fresh berries such as strawberries or raspberries over the soaked cake before pouring the caramel. The berries add a bright, fruity contrast to the rich caramel.
- Coffee Trileçe: Add 1 tbsp instant espresso powder to the three-milk soak. Dust the finished cake with cocoa powder and serve with a coffee-flavored whipped cream.
Storage and make-ahead
- Fridge
- Store in the refrigerator for up to 3 days, covered. The cake will become more moist as it soaks.
- Freezer
- Freeze for up to 2 months without the cream topping. Thaw overnight in the refrigerator and add fresh cream before serving.
- Reheat
- No reheating needed; serve chilled. If the caramel is too hard, let the cake sit at room temperature for 10 minutes.
Store leftover trileçe in the refrigerator, covered, for up to 3 days. The cake will continue to absorb the milk mixture, becoming more moist over time. The caramel may soften slightly, but the dessert will remain delicious.
This dessert is ideal for making a day ahead. Assemble the trileçe completely, then refrigerate overnight.
The flavors meld and the cake becomes even more tender. Add the cream feather pattern just before serving to keep it looking fresh.
Serving ideas
Serve trileçe chilled, straight from the refrigerator. Cut into squares or slices and lift with a spatula, allowing the milk syrup to ooze onto the plate.
The contrast of the cold, creamy cake with the crisp caramel is delightful.
Pair each slice with a dollop of extra whipped cream or a sprinkle of crushed pistachios for added texture. The dessert is rich, so a small portion is satisfying. It pairs well with coffee or a glass of cold milk.

Caramel Trileçe: Rich Milk Soaked Cake with Caramel

Ingredients
- 6 large eggs, separated
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 cup whole milk
- 1 cup evaporated milk
- 1 cup heavy cream
- 1 cup granulated sugar
- 1/4 cup water
- 1 cup heavy cream
- 2 tbsp confectioners' sugar
Instructions
- Heat the oven to 325°F (160°C). In a large bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Gradually add 1/2 cup of the granulated sugar, beating until stiff, glossy peaks form. In another bowl, beat the egg yolks with the remaining 1/4 cup sugar until pale and thick. Fold the yolk mixture into the meringue gently with a spatula.
- Pour the batter into the ungreased 9x13-inch glass baking dish and smooth the top. Bake for 25 to 30 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean. The cake should spring back when lightly pressed.
- In a large liquid measuring cup or bowl, whisk together the whole milk, evaporated milk, and heavy cream until fully combined. Set aside.
- Once the cake is out of the oven, let it cool in the pan for 10 minutes. Then pour the three-milk mixture evenly over the warm cake, allowing it to absorb completely. The sponge will drink up the liquid, becoming moist and tender.
- In a small saucepan, combine the 1 cup granulated sugar and 1/4 cup water. Cook over medium heat without stirring, swirling the pan occasionally, until the sugar dissolves and turns a deep amber color, about 8 to 10 minutes. Remove from heat immediately.
- Let the caramel cool for 2 minutes, then pour it evenly over the chilled cake, tilting the pan to cover the surface. The caramel will set into a shiny, mirror-like layer.
- In a chilled bowl, beat the heavy cream and confectioners' sugar until stiff peaks form. The cream should hold its shape when the whisk is lifted.
- Transfer the whipped cream to a piping bag fitted with a small round tip. Pipe thin lines across the caramel surface. Use a toothpick to drag through the lines perpendicularly, creating a feather pattern. Chill until ready to serve.
