Before you start

Before starting, separate the eggs and bring them to room temperature. Measure all ingredients. Preheat the oven to 325°F (160°C).

Have a 9x13-inch glass baking dish ready. For the best results, chill the bowl and beaters for the whipped cream topping in the freezer for 10 minutes before whipping.

Ingredients at a glance (11)
  • 6 large eggs, separated
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup whole milk
  • 1 cup evaporated milk
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 cup heavy cream
  • 2 tbsp confectioners' sugar

Instructions

Bake the Sponge

  1. Whip the Meringue and Make the Sponge
Heat the oven to 325°F (160°C). In a large bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Gradually add 1/2 cup of the granulated sugar, beating until stiff, glossy peaks form. In another bowl, beat the egg yolks with the remaining 1/4 cup sugar until pale and thick. Fold the yolk mixture into the meringue gently with a spatula.
Look for The batter is airy, glossy, and holds its shape when lifted.
Tip Fold gently with a large spatula, cutting through the center and turning the bowl.
  2. Bake the Sponge
Pour the batter into the ungreased 9x13-inch glass baking dish and smooth the top. Bake for 25 to 30 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean. The cake should spring back when lightly pressed.
Look for The cake is golden, puffed, and a toothpick comes out clean.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Do not open the oven during the first 20 minutes to prevent sinking.

The sponge should be puffed, golden, and spring back when touched. A toothpick inserted in the center should come out clean.

The cake will have a fine, even crumb and a light, airy texture. Let it cool for 10 minutes before soaking.

Soak with Three Milks

  1. Combine the Three-Milk Soak
In a large liquid measuring cup or bowl, whisk together the whole milk, evaporated milk, and heavy cream until fully combined. Set aside.
Look for The soak is smooth and creamy.
Tip Use cold milk for a quicker soak, but warm milk absorbs faster.
  2. Soak the Cake
Once the cake is out of the oven, let it cool in the pan for 10 minutes. Then pour the three-milk mixture evenly over the warm cake, allowing it to absorb completely. The sponge will drink up the liquid, becoming moist and tender.
Look for The cake absorbs all the milk, looking glossy and wet.
Tip Pour slowly and evenly, letting the cake absorb before adding more.

The cake should absorb all the milk mixture, becoming moist and tender. The surface will look glossy and slightly wet, but not pooling. The cake should feel heavy and saturated, yet still hold its shape when cut.

Top with Caramel and Cream

  1. Make the Caramel
In a small saucepan, combine the 1 cup granulated sugar and 1/4 cup water. Cook over medium heat without stirring, swirling the pan occasionally, until the sugar dissolves and turns a deep amber color, about 8 to 10 minutes. Remove from heat immediately.
Look for The caramel is a deep amber and smells nutty.
Tip Watch closely; caramel can go from amber to burnt quickly.
  2. Pour Caramel Over the Cake
Let the caramel cool for 2 minutes, then pour it evenly over the chilled cake, tilting the pan to cover the surface. The caramel will set into a shiny, mirror-like layer.
Look for The caramel spreads evenly and forms a glossy coating.
Tip Work quickly; caramel hardens as it cools.
  3. Whip the Cream Topping
In a chilled bowl, beat the heavy cream and confectioners' sugar until stiff peaks form. The cream should hold its shape when the whisk is lifted.
Look for The cream is thick, glossy, and holds stiff peaks.
Tip Chill the bowl and beaters for best results.
  4. Pipe and Feather the Cream
Transfer the whipped cream to a piping bag fitted with a small round tip. Pipe thin lines across the caramel surface. Use a toothpick to drag through the lines perpendicularly, creating a feather pattern. Chill until ready to serve.
Look for The cream lines are neat and the feather pattern is distinct.
Tip Drag the toothpick gently for clean lines.

The caramel should be a deep amber and spread evenly over the cake, setting into a shiny, mirror-like layer. The whipped cream should hold stiff peaks and pipe neatly into lines. The feather pattern should be clean and distinct.

Common mistakes

Overmixing the batter can deflate the meringue, resulting in a dense cake. Fold gently and stop as soon as the flour is incorporated.

Pouring the caramel too early can make it run off the cake; let it cool for a couple of minutes to thicken slightly. Dragging the toothpick too quickly can smear the cream lines.

How to tell it’s done

The cake is done when a toothpick inserted in the center comes out clean, and the top springs back when lightly pressed.

The internal temperature of the cake should read at least 160°F (71°C) to ensure the eggs are fully cooked. The caramel is done when it reaches a deep amber color and smells nutty.

  • Egg dishes: 160°F (71°C) in the thickest part
