Tips for success
For the best texture, use waxy potatoes like red or Yukon Gold, which hold their shape during long cooking. Starchy russets may break apart and turn mushy.
If you prefer a thicker glaze, remove the lid for the last 20 minutes of cooking to let excess moisture evaporate. Stir gently once at the end to redistribute the sauce.
This recipe is forgiving—if the potatoes are not quite tender at 3 1/2 hours, simply cook for another 15–20 minutes. The sausage is already cooked, so the only concern is the potatoes.
Taste the sauce before serving and adjust with extra Cajun seasoning or a splash of lemon juice if it needs more brightness.
Variations
- Smoked sausage swap: Replace andouille with smoked turkey sausage or kielbasa for a milder flavor. Reduce the Cajun seasoning to 1 1/2 tablespoons if the sausage is less spicy.
- Vegetarian version: Omit the sausage and add 1 1/2 cups of sliced mushrooms or bell peppers along with the potatoes. Use vegan butter to keep it plant-based.
- Extra vegetables: Add 1 cup of sliced okra or green beans during the last hour of cooking for more texture and color. Stir gently to avoid breaking the potatoes.
- Spicy kick: For more heat, add 1/2 teaspoon of cayenne pepper or a chopped jalapeño with the seasoning. Serve with extra hot sauce on the side.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken; add a splash of water or broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat or in the microwave until hot, stirring occasionally. Add a little water or broth to restore the saucy texture.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The potatoes will absorb more sauce as they sit, so they may be even more flavorful the next day. Reheat gently in the microwave or on the stovetop with a splash of water or broth to loosen the sauce.
To make ahead, assemble the ingredients in the slow cooker insert and refrigerate overnight. In the morning, place the insert in the slow cooker and cook on high for 3 1/2 hours, adding 15–20 minutes to the cooking time since the ingredients are cold.
Alternatively, cook the full recipe, cool completely, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve these Cajun butter potatoes as a hearty main dish with crusty bread to soak up the extra sauce. A simple green salad with a tangy vinaigrette balances the richness. For a true Southern spread, pair with cornbread and collard greens.
As a side dish, they accompany grilled chicken, pork chops, or blackened fish beautifully.
The lemon wedges are essential—a squeeze of fresh lemon over each serving cuts through the butter and spices, brightening the whole dish. Garnish with extra parsley just before serving for a pop of color.

Cajun Garlic Butter Crockpot Potatoes

Ingredients
- 3 lb red potatoes, quartered
- 1 stick butter, melted
- 2 tbsp Cajun seasoning
- 6 cloves garlic, minced
- 2 tbsp lemon juice
- 12 oz andouille sausage, sliced
- 1/4 cup fresh flat-leaf parsley, chopped
- Lemon wedges, for serving
Instructions
- Place the quartered red potatoes in the slow cooker. Add the melted butter, Cajun seasoning, minced garlic, and lemon juice. Stir well to coat every potato piece evenly with the seasoned butter mixture.
- Scatter the sliced andouille sausage over the seasoned potatoes. Tuck some slices between the potato pieces so the sausage flavors the butter as it cooks.
- Cover the slow cooker and cook on HIGH for 3 1/2 hours, or until the potatoes are fork-tender and the butter has reduced to a glossy glaze. Do not stir during the first 2 hours to allow the flavors to meld.
- Once the potatoes are tender and the sausage is cooked through, taste and adjust seasoning if needed. Transfer to a rustic serving bowl, garnish with chopped parsley, and serve with lemon wedges on the side.
