Before you start
Before starting, wash and quarter the red potatoes, leaving the skin on for texture and color. Mince the garlic cloves and slice the andouille sausage into 1/4-inch rounds.
Melt the butter in a small bowl or measuring cup. Have all the ingredients measured and ready so the dump-and-go assembly takes just a few minutes. No need to pre-cook anything; the slow cooker does all the work.
Ingredients at a glance (8)
- 3 lb red potatoes, quartered
- 1 stick butter, melted
- 2 tbsp Cajun seasoning
- 6 cloves garlic, minced
- 2 tbsp lemon juice
- 12 oz andouille sausage, sliced
- 1/4 cup fresh flat-leaf parsley, chopped
- Lemon wedges, for serving
Instructions
Seasoned base
- Prepare the slow cooker basePlace the quartered red potatoes in the slow cooker. Add the melted butter, Cajun seasoning, minced garlic, and lemon juice. Stir well to coat every potato piece evenly with the seasoned butter mixture.Look for The potatoes are evenly coated with a reddish-orange seasoned butter.Tip Use a spatula to scrape the bottom and sides so no seasoning is left behind.
- Add the sausageScatter the sliced andouille sausage over the seasoned potatoes. Tuck some slices between the potato pieces so the sausage flavors the butter as it cooks.Look for Sausage slices are nestled among the potato quarters.Tip If the sausage is very smoky, reduce the Cajun seasoning to 1 1/2 tablespoons.
The potatoes are coated in a glossy, reddish-orange butter mixture with visible flecks of herbs and garlic. The sausage slices are scattered throughout, and the aroma is already spicy and inviting. At this point, everything should be well combined, with no dry spots of seasoning on the bottom of the slow cooker.
Slow-cook meld
- Slow cook on highCover the slow cooker and cook on HIGH for 3 1/2 hours, or until the potatoes are fork-tender and the butter has reduced to a glossy glaze. Do not stir during the first 2 hours to allow the flavors to meld.Look for The butter is bubbling and thick, coating the potatoes in a shiny red glaze.Safe temperature 160°F (71°C) internal temperature (ground meat)Tip Resist lifting the lid frequently; each peek releases heat and adds cooking time.
After 3 1/2 hours on high, the kitchen smells richly of garlic, smoke, and warm spices. The butter has reduced to a thick, clinging sauce that coats each potato piece.
The potatoes are tender and slightly translucent at the edges, and the sausage has rendered some of its fat, giving the sauce a deeper, meatier flavor.
Garnished hero
- Finish and serveOnce the potatoes are tender and the sausage is cooked through, taste and adjust seasoning if needed. Transfer to a rustic serving bowl, garnish with chopped parsley, and serve with lemon wedges on the side.Look for The potatoes are glazed and glossy, with fresh parsley brightening the top.Tip The lemon wedge adds brightness—squeeze it over each serving right before eating.
The finished dish is a vibrant mix of glazed red potatoes and deep-brown sausage slices, sprinkled with fresh green parsley. The lemon wedges add a bright yellow accent. The sauce is thick enough to coat the back of a spoon, and each bite is savory, buttery, and gently spicy.
Common mistakes
The most common mistake is lifting the lid to check on the potatoes. Every time the lid is opened, heat escapes and adds 15–20 minutes to the cooking time. Trust the process and wait until the 3-hour mark to peek.
Another mistake is using too much liquid—this recipe relies on the butter and the potatoes' own moisture, so do not add broth or water. Finally, if the potatoes are cut into uneven pieces, some will overcook while others remain hard. Keep the chunks uniform for even cooking.
How to tell it’s done
The dish is done when the potatoes are fork-tender—a knife or fork should slide through a potato piece with little resistance. The butter sauce should have reduced and thickened into a glaze that coats the potatoes and sausage, with no watery liquid pooling at the bottom.
The sausage will be heated through and slightly browned at the edges. If the potatoes are not yet tender after 3 1/2 hours, continue cooking in 15-minute increments until they are. The internal temperature of the sausage should reach 160°F (71°C) to ensure it is fully warmed.
- Ground meat: 160°F (71°C) in the thickest part
