Tips for success

For the best flavor, marinate the chicken for at least 30 minutes, or up to overnight in the refrigerator. This allows the spices to penetrate the meat.

If you are short on time, even a 15-minute marinade will add flavor, but longer is better. Use fresh lemon juice rather than bottled for a brighter taste.

To prevent the bread from becoming too soggy, hollow out some of the soft interior, leaving a sturdy shell. You can toast the hollowed-out bread pieces in the oven to make croutons or breadcrumbs.

When assembling, do not overfill with sauce; the bread should be moist but not drowning. If you have leftover sauce, serve it on the side for dipping.

Variations

  • Vegetarian Version: Replace the chicken with 1 cup of paneer cubes or firm tofu. Marinate and sear the same way, then layer with the sauce and cheese. Bake as directed for a meatless version that is just as satisfying.
  • Spicier Butter Chicken: Add 1 teaspoon of finely chopped green chilies or a pinch of cayenne pepper to the marinade. Increase the red chili powder to 1 teaspoon for extra heat. Adjust to your preferred spice level.
  • Garlic Bread Twist: Mix 2 tablespoons of softened butter with 2 cloves of minced garlic and 1 tablespoon of chopped parsley. Spread this on the cut sides of the bread before assembling for a garlicky, buttery flavor that complements the chicken.
  • Cheese Lover's Delight: Use a blend of mozzarella and cheddar cheese for a sharper flavor. Add an extra 1/2 cup of cheese on top before baking for an extra-gooey, golden crust.

Frequently asked questions

Can this butter chicken bread bake be made ahead?
Yes, you can prepare the marinated chicken and the sauce up to 2 days in advance. Store them separately in the refrigerator. When ready to serve, sear the chicken, assemble the loaf, and bake as directed. The assembled loaf can also be refrigerated for up to 24 hours before baking, but you may need to add a few minutes to the baking time.
What type of bread works best for this recipe?
A sturdy, crusty bread like sourdough, ciabatta, or a French boule works best. It needs to hold up to the sauce without becoming soggy. Soft sandwich bread will not work as well, as it can fall apart. Look for a loaf with a thick crust and a dense crumb.
Can this recipe be made dairy-free?
Yes, you can substitute the Greek yogurt with a dairy-free yogurt (such as coconut or almond-based), the heavy cream with full-fat coconut milk, and the mozzarella with a dairy-free shredded cheese. The flavor will be slightly different, but the dish will still be creamy and delicious.
How do you prevent the bread from getting soggy?
Hollow out some of the soft bread from the inside of the loaf to create a well for the filling. Be careful not to cut all the way through the crust. Also, avoid adding too much sauce; the bread should be moist but not soaked. Toasting the bread lightly before assembling can also help.
Can this recipe be frozen?
Yes, you can freeze the assembled, unbaked loaf for up to 2 months. Wrap it tightly in plastic wrap and then in aluminum foil. To bake, remove the wrapping and place the frozen loaf on a baking sheet. Bake at 350°F (175°C) for about 30 minutes, or until heated through and the cheese is melted.

Butter Chicken Cheesy Bread Bake

Sliced butter chicken cheesy bread bake with melted mozzarella and creamy sauce

Ingredients

  • 1 lb chicken breast, cubed
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp vegetable oil
  • 1 tsp ground coriander
  • 1/2 tsp red chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • 1 tsp garam masala
  • 1 cup diced onion
  • 1 tbsp ginger garlic paste
  • 2 tbsp tomato paste
  • 1 cup heavy cream
  • 1 crusty bread loaf
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a glass bowl, combine the cubed chicken breast, Greek yogurt, lemon juice, vegetable oil, ground coriander, red chili powder, ground cumin, smoked paprika, ground turmeric, and garam masala. Stir until every piece is evenly coated. Cover and refrigerate while you prepare the sauce, or for at least 15 minutes.
  2. Heat a cast-iron skillet over medium-high heat. Add the marinated chicken pieces in a single layer and cook for about 7 minutes, turning occasionally, until charred on the edges and cooked through. The internal temperature should reach 165°F (74°C). Transfer the chicken to a plate and set aside.
  3. In the same skillet, reduce the heat to medium. Add the diced onion and cook, stirring, for 3 to 4 minutes until softened. Stir in the ginger garlic paste and tomato paste, cooking for 1 minute until fragrant. Add the remaining spices from the marinade (if any) and pour in the heavy cream. Simmer for 5 to 7 minutes, stirring occasionally, until the sauce thickens and turns glossy.
  4. Preheat the oven to 400°F (200°C). Slice the crusty bread loaf in half horizontally. Hollow out some of the soft bread from both halves to create a shallow well. Place the bottom half on a baking sheet. Ladle half of the butter chicken sauce over the bread, spreading it evenly. Layer with the seared chicken pieces, then sprinkle with the shredded mozzarella cheese. Drizzle the remaining sauce over the top.
  5. Place the assembled loaf in the oven and bake for 12 minutes, until the cheese is melted and bubbly and the bread edges are golden brown. If the top browns too quickly, loosely cover with aluminum foil during the last few minutes.
  6. Remove the loaf from the oven and let it rest for 5 minutes. Slice the bread into thick pieces, making sure each slice has a good amount of chicken and sauce. Serve warm, with the extra sauce from the baking sheet spooned over the top.
