Before you start

Before starting, cube the chicken breast and place it in a bowl. Measure out all the spices and have them ready. Dice the onion and prepare the ginger-garlic paste.

Slice the bread loaf in half and hollow it out slightly. Preheat the oven to 400°F (200°C) when you start assembling. Have a baking sheet ready to hold the loaf.

Ingredients at a glance (16)
  • 1 lb chicken breast, cubed
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp vegetable oil
  • 1 tsp ground coriander
  • 1/2 tsp red chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • 1 tsp garam masala
  • 1 cup diced onion
  • 1 tbsp ginger garlic paste
  • 2 tbsp tomato paste
  • 1 cup heavy cream
  • 1 crusty bread loaf
  • 1 cup shredded mozzarella cheese

Instructions

Marinate and Sear the Chicken

  1. Marinate the Chicken
In a glass bowl, combine the cubed chicken breast, Greek yogurt, lemon juice, vegetable oil, ground coriander, red chili powder, ground cumin, smoked paprika, ground turmeric, and garam masala. Stir until every piece is evenly coated. Cover and refrigerate while you prepare the sauce, or for at least 15 minutes.
Look for The chicken is fully coated in a thick, spiced yogurt mixture.
Tip For deeper flavor, marinate up to 8 hours in the refrigerator.
  2. Sear the Chicken
Heat a cast-iron skillet over medium-high heat. Add the marinated chicken pieces in a single layer and cook for about 7 minutes, turning occasionally, until charred on the edges and cooked through. The internal temperature should reach 165°F (74°C). Transfer the chicken to a plate and set aside.
Look for The chicken is golden-brown with charred edges and no pink in the center.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd the skillet; sear in batches if needed.

The chicken should be coated in a thick, spiced yogurt mixture.

When seared, it will have golden-brown edges and be cooked through, with no pink remaining. The skillet will have browned bits that will flavor the sauce.

Make the Sauce and Assemble

  1. Make the Butter Chicken Sauce
In the same skillet, reduce the heat to medium. Add the diced onion and cook, stirring, for 3 to 4 minutes until softened. Stir in the ginger garlic paste and tomato paste, cooking for 1 minute until fragrant. Add the remaining spices from the marinade (if any) and pour in the heavy cream. Simmer for 5 to 7 minutes, stirring occasionally, until the sauce thickens and turns glossy.
Look for The sauce is thick enough to coat the back of a spoon and smells aromatic.
Tip Scrape up any browned bits from the skillet for extra flavor.
  2. Assemble the Bread Bake
Preheat the oven to 400°F (200°C). Slice the crusty bread loaf in half horizontally. Hollow out some of the soft bread from both halves to create a shallow well. Place the bottom half on a baking sheet. Ladle half of the butter chicken sauce over the bread, spreading it evenly. Layer with the seared chicken pieces, then sprinkle with the shredded mozzarella cheese. Drizzle the remaining sauce over the top.
Look for The bread is generously filled with sauce, chicken, and cheese.
Tip Use a serrated knife to slice the loaf cleanly without crushing it.

The sauce should be thick and glossy, coating the back of a spoon. The bread loaf is filled with sauce, chicken, and cheese, ready for baking. The aroma of spices and cream will fill the kitchen.

Bake and Serve

  1. Bake the Stuffed Loaf
Place the assembled loaf in the oven and bake for 12 minutes, until the cheese is melted and bubbly and the bread edges are golden brown. If the top browns too quickly, loosely cover with aluminum foil during the last few minutes.
Look for The cheese is fully melted and the bread is crisp around the edges.
Tip For extra crispness, broil for 1 to 2 minutes at the end, watching closely.
  2. Slice and Serve
Remove the loaf from the oven and let it rest for 5 minutes. Slice the bread into thick pieces, making sure each slice has a good amount of chicken and sauce. Serve warm, with the extra sauce from the baking sheet spooned over the top.
Look for The cheese pulls in long strands and the sauce is still glossy.
Tip Use a sharp knife to cut through the crispy crust cleanly.

The cheese is melted and bubbly, and the bread is golden and crisp. When sliced, the cheese pulls in long strands and the sauce is still warm and creamy. The loaf should be served immediately for the best texture.

Common mistakes

One common mistake is overcooking the chicken, which makes it dry. Sear it just until cooked through and no longer pink. Another is using a bread loaf that is too soft or thin, which can become soggy.

Choose a sturdy loaf and hollow out enough bread to hold the filling without breaking. Also, avoid adding too much sauce, as it can make the bread overly wet.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.

The bread bake is done when the cheese is melted and bubbly, and the bread edges are golden brown. Let the loaf rest for a few minutes before slicing to allow the cheese to set slightly.
