Tips for success
For the most even cooking, choose lobster tails that are similar in size. If they differ, you can start the larger ones a minute earlier. When splitting the tails, use a heavy knife and a steady hand—the shell can be slippery.
If you have trouble, use kitchen shears to cut through the shell first, then finish with the knife. Always pat the meat dry before searing to get a good crust.
Basting is the heart of this recipe. Use a large spoon and scoop the foaming butter over the lobster meat continuously. This not only cooks the meat gently but also builds layers of flavor.
Don't be shy with the butter—it's what makes the dish so luscious. And when you add the cheese, let it melt just until it starts to brown; that's when it's most flavorful.
Variations
- Spicy Garlic Butter: Add 1/2 teaspoon of red pepper flakes to the butter along with the garlic and herbs. The heat will complement the sweet lobster and balance the richness. For extra depth, a pinch of smoked paprika works well too.
- Lemon-Herb Butter: Replace the fresh herbs with 1 teaspoon of lemon zest and 2 tablespoons of fresh lemon juice added to the butter. This brightens the dish further and pairs beautifully with the charred lemon.
- White Wine Deglaze: After searing the lobster and asparagus, add 1/4 cup of dry white wine to the skillet and let it reduce slightly before adding the cheese. This creates a more complex sauce with a touch of acidity.
- Substitute Shrimp: For a more budget-friendly option, use large shrimp (16-20 count), peeled and deveined. Cook them for 2-3 minutes per side, basting with the butter, until they turn pink and reach 145°F (63°C).
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet with a little butter over low heat.
Leftover lobster and asparagus can be stored in an airtight container in the refrigerator for up to 2 days. The lobster will lose some of its tenderness upon reheating, so it's best enjoyed fresh. If you do have leftovers, gently reheat in a skillet with a little butter over low heat, just until warmed through. Avoid microwaving, which can make the lobster rubbery.
The lobster tails can be split and seasoned up to a few hours in advance, kept in the refrigerator. The garlic herb butter can be mixed and refrigerated for up to a day. The asparagus can be trimmed ahead.
However, the cooking should be done right before serving for the best texture and flavor. The charred lemon can be prepared a few hours ahead, but it's quickest to do it in the pan.
Serving ideas
Serve the lobster tails and asparagus on a warm platter, spooning any remaining butter from the skillet over the top. This dish is rich, so it pairs well with something light, like a simple green salad or crusty bread to soak up the butter.
A glass of chilled white wine, such as Chardonnay or Sauvignon Blanc, would be lovely. For a more casual meal, serve it over rice or pasta.
This recipe is elegant enough for a special occasion but simple enough for a weeknight treat. The combination of sweet lobster, savory butter, nutty cheese, and bright lemon is a classic that never fails. The asparagus adds color and texture, making it a complete meal in one skillet. Enjoy it immediately, while the butter is still bubbling and the lobster is at its peak.

Butter-Basted Lobster Tails with Asparagus

Ingredients
- 2 lobster tails (about 6 oz each), split in half lengthwise
- 1 bunch asparagus, trimmed
- 4 tbsp unsalted butter, cut into pieces
- 3 cloves garlic, minced
- 2 tbsp mixed fresh herbs (such as thyme, parsley, chives), chopped
- 1/4 cup freshly grated Parmigiano-Reggiano
- 1 lemon, halved
- kosher salt, to taste
- freshly ground black pepper, to taste
Instructions
- Place a large cast iron skillet over medium-high heat and let it get hot. Pat the split lobster tails dry with paper towels and season the cut side with salt and pepper. Trim the asparagus and set aside. In a small bowl, combine the butter pieces, garlic, and chopped herbs.
- Add the butter mixture to the hot skillet. Once the butter foams, place the lobster tails cut-side down in the skillet and add the asparagus alongside. Sear for 2-3 minutes until the lobster meat begins to turn opaque and the asparagus is bright green.
- Flip the lobster tails so the shell side is down and the meat faces up. Continue to cook, using a spoon to continuously baste the lobster meat with the foaming garlic herb butter. Cook for another 3-4 minutes, basting frequently, until the lobster meat is just opaque and reaches an internal temperature of 145°F (63°C).
- Sprinkle the freshly grated Parmigiano-Reggiano evenly over the lobster meat and asparagus. Let it melt slightly, about 30 seconds. The cheese will form a golden crust on the lobster.
- Push the lemon halves cut-side down into the skillet, pressing gently. Let them char for 1-2 minutes until the cut surface is browned and the juice begins to sizzle.
- Squeeze the charred lemon halves over the lobster and asparagus. Use tongs to transfer the lobster tails and asparagus to a serving platter. Spoon any remaining butter and juices from the skillet over the top. Serve immediately.
