Tips for success
For the most tender short ribs, cook them on low rather than high. Low heat gives the collagen time to break down slowly, resulting in a silkier texture.
If you're in a hurry, high heat for 5 to 6 hours can work, but the meat won't be quite as fall-apart tender. Also, trim any large pieces of surface fat from the ribs before cooking—this keeps the sauce from becoming greasy.
Don't be tempted to add extra liquid. The short ribs release their own juices as they cook, and the BBQ sauce and onions provide plenty of moisture.
Too much liquid will make the sauce thin and watery. If the sauce is too thin at the end, transfer it to a saucepan and simmer for 5 to 10 minutes to reduce and thicken it.
Variations
- Spicy Chipotle: Add 1–2 chipotle peppers in adobo sauce, minced, along with the BBQ sauce. This adds a smoky, spicy kick that complements the sweetness. Reduce the brown sugar to 2 tablespoons if you prefer less sweet.
- Garlic Herb: Stir 4 minced garlic cloves and 1 tablespoon dried thyme into the sauce mixture. The garlic will mellow during cooking, infusing the meat with a savory, aromatic note. Use a BBQ sauce with a less pronounced hickory flavor.
- Root Beer BBQ: Replace 1/2 cup of the BBQ sauce with root beer. The soda adds a subtle sweetness and helps tenderize the meat. Cook as directed; the sauce will reduce to a rich, sticky glaze with a hint of vanilla.
- Smoky Bourbon: Add 1/4 cup bourbon to the sauce mixture. The alcohol cooks off, leaving a warm, smoky depth. If you prefer no alcohol, use apple juice instead. This pairs especially well with a sprinkle of black pepper before serving.
Storage and make-ahead
- Fridge
- Store leftover ribs in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the cooled short ribs in a freezer-safe container with sauce for up to 3 months.
- Reheat
- Reheat in a covered saucepan over low heat, adding a splash of water or beef broth to loosen the sauce.
Let the cooked short ribs cool completely, then store them in an airtight container with some of the sauce. They will keep in the refrigerator for up to 4 days.
Reheat gently in a saucepan over low heat, adding a splash of water or beef broth if the sauce has thickened too much. The flavor actually deepens overnight, making leftovers even better.
You can assemble the entire dish the night before: place the ribs in the slow cooker insert, add the seasonings, onions, and BBQ sauce, cover, and refrigerate overnight.
In the morning, simply place the insert in the slow cooker base and cook on low as directed. This makes it even easier to 'dump it in and forget it' on a busy morning.
Serving ideas
Serve the short ribs over creamy mashed potatoes, buttered egg noodles, or a bed of rice to soak up the rich sauce. A side of roasted vegetables or a crisp green salad balances the richness. For a low-carb option, serve over cauliflower mash or alongside steamed broccoli.
To make it a full meal, add a loaf of crusty bread for wiping up every last bit of glaze. A sprinkle of fresh parsley or chives adds a touch of color and freshness, though it's entirely optional. The ribs are hearty enough to stand alone, but they shine when paired with simple, comforting sides.

Brown Sugar Honey Hickory Beef Short Ribs: 5-Ingredient Crockpot Dinner

Ingredients
- 4 lb bone-in English-cut beef short ribs
- 1/4 cup dark brown sugar, packed
- 2 tbsp smoked paprika
- 2 medium yellow onions, sliced
- 1 1/2 cups honey-hickory barbecue sauce
Instructions
- Place the beef short ribs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible. Sprinkle the dark brown sugar and smoked paprika evenly over the ribs, then scatter the sliced yellow onions on top. Use your hands to rub the seasonings gently into the meat so every surface is coated.
- Squeeze the honey-hickory barbecue sauce generously over the entire surface of the ribs and onions. Use a spatula to spread it into an even layer, making sure the sauce reaches the edges and drips down between the ribs. There's no need to stir—the slow cooker will do the work.
- Cover the slow cooker with the lid and set it to cook on low heat for 8 to 10 hours, or until the meat is fork-tender and falling off the bone. Do not open the lid during cooking, as this releases heat and extends the cooking time. The sauce will bubble gently and the onions will caramelize into the glaze. Let it rest for 3 minutes before slicing.
- After 8 hours, use a carving fork to test the short ribs. The meat should be so tender that it nearly slips off the bone when lifted. If it still resists, cover and cook for another 30 to 60 minutes. Insert an instant-read thermometer into the thickest part of the meat, avoiding the bone; it should read at least 145°F (63°C).
- Using a carving fork or tongs, carefully lift the short ribs out of the slow cooker, letting any excess sauce drip back into the pot. The meat is very tender, so support each rib with the fork to prevent it from breaking apart. Transfer the ribs to a serving plate or cutting board.
- Spoon some of the caramelized onion and BBQ sauce mixture from the slow cooker over the ribs. The sauce should be thick, glossy, and bubbling. Serve immediately while hot, with extra sauce on the side if desired.
