Tips for success
For the best texture, use a combination of semisweet chips and chopped dark chocolate. The chunks create pools of melted chocolate that contrast with the dense brownie. If using a metal pan, reduce the oven temperature by 25°F to prevent overbaking the edges. Always line the pan with parchment paper for easy removal and clean slicing.
To get perfectly sharp edges, chill the cooled slab in the refrigerator for 30 minutes before cutting. Use a sharp chef's knife and wipe it clean between cuts. For a gooey, just-baked feel, reheat individual bars in the microwave for 10 seconds or in a 300°F oven for 5 minutes. Store leftovers in an airtight container to keep them soft.
Variations
- Double Chocolate: Add 1/2 cup of chocolate chunks to the brownie batter along with the cocoa. This creates extra pockets of melted chocolate throughout the brownie layer, making it even more indulgent.
- Nutty Brookies: Fold 3/4 cup of toasted walnuts or pecans into the cookie dough before pressing it into the pan. The nuts add a crunchy contrast to the soft layers and complement the brown butter flavor.
- Salted Caramel: After baking and cooling, drizzle the top with a simple salted caramel sauce and sprinkle with flaky sea salt. The salty-sweet combination elevates the chocolate and brown butter notes.
- Peanut Butter Swirl: Warm 1/2 cup of creamy peanut butter and dollop it over the brownie batter, then gently swirl with a knife. This adds a nutty, salty flavor that pairs well with the chocolate.

For longer storage, wrap each bar individually in plastic wrap and place in a freezer-safe bag or container. They can be frozen for up to 3 months.
The brookies can be made up to 2 days ahead and stored at room temperature in an airtight container. They also freeze well for up to 3 months. To serve, thaw overnight in the refrigerator or at room temperature for a few hours.
For a warm treat, reheat in a 300°F oven for 5 to 7 minutes. The bars can also be assembled and refrigerated unbaked for up to 24 hours before baking—just add 5 minutes to the baking time.
Serving ideas
Serve the brookies at room temperature or slightly warm for the best texture. A glass of cold milk or a scoop of vanilla ice cream pairs beautifully with the rich chocolate and brown butter flavors.
For a more decadent dessert, drizzle with caramel sauce or sprinkle with flaky sea salt. These bars are also great for packing in lunchboxes or taking on picnics.
Cut the brookies into 16 thick bars for a satisfying portion, or into smaller squares for a bite-sized treat. They are sturdy enough to stack and transport, making them ideal for bake sales or party platters.
If serving warm, let them cool for at least 10 minutes after reheating so the layers set slightly. Enjoy within 3 days for the best flavor and texture.

Brown Butter Brookies: Gooey Cookie Base, Fudgy Brownie Crown

Ingredients
- 1 cup unsalted butter (2 sticks)
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 1 1/2 cups semisweet chocolate chips
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 cup whole milk
Instructions
- Melt the butter in a small saucepan over medium heat. Cook, swirling occasionally, until the butter turns deep golden brown and smells nutty, about 5 to 7 minutes. Pour the brown butter into a large heatproof bowl and let it cool for 10 minutes. Whisk in the granulated sugar, brown sugar, eggs, and vanilla until the mixture is smooth and glossy. Stir in the flour, baking soda, and salt until just combined, then fold in the chocolate chips. The dough will be thick and slightly sticky.
- In a separate bowl, whisk the cocoa powder, flour, baking powder, and salt. In another bowl, whisk the melted brown butter (reserved from the cookie layer) with the granulated sugar and brown sugar until combined. Add the eggs and vanilla, whisking until the batter is thick and glossy. Stir in the dry ingredients alternately with the milk, starting and ending with the dry ingredients. The batter will be thick and fudgy. Pour the brownie batter over the cookie base in the pan, spreading it evenly to the edges.
- Heat the oven to 350°F (175°C). Place the assembled pan on the middle rack and bake for 30 to 35 minutes, until the top is set and a toothpick inserted into the center comes out with a few moist crumbs. The brownie layer should look crackly and the edges should be slightly pulling away from the pan. The cookie base will be golden and firm. Remove the pan from the oven and place it on a wire rack.
- Let the brookies cool in the pan on a wire rack for at least 2 hours. This allows the layers to set and the flavors to meld. Do not slice while warm, or the bars will crumble. Once completely cool, use the parchment paper to lift the entire slab out of the pan. Place it on a cutting board and slice into 16 thick bars with a sharp chef's knife. Wipe the knife clean between cuts for neat edges.
- Slice the brookies into 16 equal bars, each about 2 inches wide. Serve at room temperature or slightly warm for a gooey texture. The bars can be stored in an airtight container at room temperature for up to 3 days. For longer storage, wrap individually and freeze for up to 3 months. Reheat in a 300°F oven for 5 minutes to refresh the texture.
