Tips for success
For the best texture, make sure your bananas are very ripe—the browner the better. They should be soft and easy to mash with a fork.
If you only have underripe bananas, you can roast them in their skins at 350°F (175°C) for 15 minutes to soften and concentrate their sweetness. This also brings out their natural sugars, making the bread even more flavorful.
When browning the butter, use a light-colored saucepan so you can see the color change clearly. The butter will foam, then the milk solids will sink and turn golden brown.
Swirl the pan occasionally to ensure even browning. Once it reaches a deep amber color and smells nutty, remove it from the heat immediately to prevent burning. Let it cool slightly before adding to the wet ingredients.
Variations
- Nutty Banana Bread: Fold in 1/2 cup of chopped walnuts or pecans along with the chocolate chips. Toast the nuts in a dry skillet for 2–3 minutes to enhance their flavor before adding them to the batter.
- Spiced Banana Bread: Add 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, and 1/4 teaspoon of ground cloves to the dry ingredients. This adds a warm, aromatic spice that pairs beautifully with the brown butter.
- Marbled Banana Bread: Swirl 2 tablespoons of cocoa powder mixed with 2 tablespoons of hot water into the batter just before pouring it into the pan. Use a knife to create a marbled effect, then bake as directed.
- Gluten-Free Banana Bread: Replace the all-purpose flour with a 1:1 gluten-free flour blend. Add 1/2 teaspoon of xanthan gum if the blend doesn't include it. The texture will be slightly more tender, so handle the batter gently.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature or warm slices before serving.
- Freezer
- Wrap the cooled loaf tightly in plastic wrap and then foil. Freeze for up to 3 months. Thaw overnight in the refrigerator or at room temperature.
- Reheat
- Warm slices in a toaster or microwave for 15–20 seconds to revive the molten chocolate.
Store the banana bread in an airtight container at room temperature for up to 4 days. The moisture from the bananas and sour cream helps keep it soft. If the bread is sliced, place a piece of parchment paper between slices to prevent them from sticking together.
For longer storage, wrap the loaf tightly in plastic wrap and refrigerate for up to a week, but bring it to room temperature before serving for the best flavor and texture.
The banana bread can be made a day ahead and stored tightly wrapped at room temperature. In fact, the flavors meld and deepen overnight. You can also prepare the batter the night before, cover the pan, and refrigerate it.
Bring it to room temperature for 30 minutes before baking, and add 5–10 minutes to the baking time. Alternatively, bake the loaf fully, cool it, wrap it well, and freeze it for up to 3 months.
Serving ideas
Serve the banana bread warm or at room temperature. For the ultimate treat, toast a slice lightly and spread a little butter or cream cheese on top—the warmth melts the chocolate pockets further, creating a gooey, decadent experience. Pair it with a cup of coffee or tea for a comforting afternoon break.
This bread is also delicious as a dessert with a scoop of vanilla ice cream or a drizzle of caramel sauce. If you have leftovers, use them to make French toast or bread pudding. The moist crumb and chocolate make it a versatile base for many sweet creations. Enjoy it as is, or get creative with your favorite toppings.

Brown Butter Banana Bread with Molten Chocolate

Ingredients
- 8 tbsp unsalted butter
- 330 g mashed ripe bananas (about 3 medium)
- 67 g granulated sugar
- 100 g light brown sugar
- 1 large egg
- 1 tbsp vanilla bean paste
- 80 g sour cream
- 240 g all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 120 g chocolate chips (plus extra for topping)
Instructions
- Melt the butter in a small saucepan over medium heat. Continue cooking, swirling the pan occasionally, until the butter foams, then turns deep amber brown and gives off a nutty aroma. Remove from heat and let cool slightly.
- In a large bowl, whisk together the mashed bananas, granulated sugar, brown sugar, egg, vanilla bean paste, and sour cream until smooth and well combined. Pour in the slightly cooled brown butter and whisk until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet mixture and fold gently with a rubber spatula until just combined. Fold in the chocolate chips, reserving a handful for the top.
- Pour the batter into a parchment-lined 9x5-inch loaf pan. Smooth the top with a spatula, then sprinkle the reserved chocolate chips over the surface.
- Place the pan in a 350°F (175°C) oven. Bake for 55 minutes, until the top is cracked, deep golden brown, and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
- Let the bread cool in the pan on a wire rack for 10 minutes. Then lift it out using the parchment paper and let it cool completely on the rack before slicing. Serve warm for molten chocolate pockets.
