Tips for success
For the best texture, grate the cheddar yourself from a block. Pre-shredded cheese often contains cellulose or starch that prevents smooth melting. Also, bring the beer to a gentle simmer before adding the cheese—this helps the sauce come together quickly and evenly.
If you prefer a spicier fondue, add a pinch of cayenne or a few dashes of hot sauce along with the smoked paprika.
For a more decadent version, stir in a tablespoon of cream cheese or a splash of heavy cream after the beer simmers. These small tweaks can customize the flavor without changing the essential character of the dish.
Variations
- Spicy Chorizo Version: Cook 4 oz crumbled fresh chorizo in the skillet before adding the butter, then proceed with the recipe. The chorizo adds a spicy, savory depth that pairs well with the smoky cheese.
- Roasted Garlic Twist: Substitute the minced garlic with 1 head of roasted garlic, squeezed from its skins and mashed. This adds a sweeter, mellower garlic flavor that complements the cheddar beautifully.
- Smoky Bacon Addition: Cook 4 slices of bacon until crisp, crumble, and sprinkle over the top before serving. The salty, smoky bacon enhances the savory notes of the fondue.
- Herb-Infused Fondue: Stir in 1 tablespoon of chopped fresh chives or thyme along with the smoked paprika. The herbs add a fresh, aromatic contrast to the rich cheese.
Storage and make-ahead
- Fridge
- Store leftover fondue in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the cheese sauce may separate upon thawing.
- Reheat
- Reheat leftover fondue in a saucepan over low heat, stirring constantly, with a splash of beer or milk to bring back a smooth texture.
Leftover fondue can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of beer or milk to restore a smooth consistency. Avoid microwaving, as it can make the cheese rubbery.
The broccoli can be cut and the cheese grated up to a day in advance, stored separately in the refrigerator.
The fondue itself is best made fresh, but the components can be prepped ahead to make assembly quick. When ready to serve, simply char the broccoli and proceed with the recipe.
Serving ideas
Serve this fondue straight from the skillet, placed on a heatproof trivet in the center of the table.
Provide long skewers or small forks for dipping, along with a stack of golden pretzel bites and fresh broccoli florets. The contrast of the crispy, bubbly top and the creamy interior is part of the appeal.
For a more substantial spread, add other dippers like crusty bread cubes, roasted baby potatoes, or apple slices.
The smoky, cheesy sauce pairs well with a variety of vegetables and starches. This dish is best enjoyed warm, with friends gathered around, pulling long ribbons of cheese.

Broccoli Cheddar Skillet Beer Cheese Fondue

Ingredients
- 4 cups broccoli florets (about 2 heads)
- 3 cloves garlic, minced
- 2 tbsp butter
- 12 oz sharp aged orange cheddar, grated (about 3 cups)
- 1 cup lager or pale ale
- 1 tsp smoked paprika
- golden pretzel bites, for serving
Instructions
- Cut the broccoli crowns into bite-sized florets. Mince the garlic cloves. Grate the block of sharp aged orange cheddar on the large holes of a box grater into a thick pile.
- Heat a large cast iron skillet over medium-high heat. Add the butter and let it melt, then add the broccoli florets and minced garlic. Cook, stirring occasionally, until the broccoli is charred in spots and crisp-tender, about 5 to 7 minutes.
- Pour the beer into the skillet with the broccoli and garlic. Stir in the smoked paprika. Bring to a simmer, then reduce the heat to low. Gradually add the grated cheddar cheese, a handful at a time, stirring constantly until each addition is melted and smooth.
- Once the fondue is smooth, sprinkle the remaining shredded cheddar over the top in an even layer. Let it bubble gently for 2 to 3 minutes, until the cheese is melted and golden in spots.
- Remove the skillet from the heat. Serve immediately, directly from the skillet, with golden pretzel bites and extra broccoli florets for dipping. The cheese should pull into long ribbons as you dip.
